1 1/2 pounds cooking apples (recommended: McIntosh or Granny Smith)
4 slices whole wheat bread
1/2 cup butter
3/4 cup packed brown sugar
2 tablespoons water

Steps:

  • Preheat oven to 375 degrees.
  • Peel, core and slice apples. Place the bread slices in a food processor and blend to make fresh crumbs or finely chop it up. Rub a 1-quart baking dish thickly with butter then sprinkle liberally with brown sugar. Add alternating layers of sliced apples, sugar, and bread crumbs, then repeat, ending with bread crumbs. Thickly sprinkle with sugar and dot with extra butter. Sprinkle on the water. Bake for 45 minutes to 1 hour until well browned on the top. Serve warm with vanilla ice cream.

1/4 cup finely chopped walnuts mixed with 1/4 cup flour, 3/4 teaspoon ground cinnamon and a pinch of salt
4 tablespoons chilled butter
4 slices dried out egg, brioche or challah bread, crusts removed and cut into 3/4-inch cubes
1/3 cup melted unsalted butter
1 cup raisins soaked in rum, Port or Cognac
4 Granny Smith or Golden Delicious apples peeled, cored, quartered and sliced
Vanilla ice cream or whipped cream for garnish

Steps:

  • Preheat the oven to 375 degrees. Lightly butter a 9-inch square baking pan.
  • Cut the chilled butter into the walnut and cinnamon flour, with a pastry blender or fork until it is like coarse crumbs; set aside. Drizzle melted butter over cubed bread to coat, then toss with apples and raisins
  • Transfer apples and bread to a baking dish and top with walnut flour topping; bake for 45 minutes or until crisp. Serve hot or warm with ice cream.
  • Note that if you are starting out with fresh bread, then dry it out first in an oven

A favourite dessert of many. This makes good use of stale bread. Who knew that with such simple ingredients as bread, apples, butter, sugar.....you could make something so delicious and magnificent! It's magic! When rhubarb replaces the apples, it is known as Blushing Betty! Another example of North American Colonial thrift!

3 cups soft bread cubes (remove crusts)
7 tablespoons melted butter
3 cups sliced peeled tart apples (I used Granny Smith)
1 cup caster sugar
1 teaspoon ground cinnamon
1/2 teaspoon fresh ground nutmeg
1/2 cup water
1 grated lemon, rind of
3 tablespoons lemon juice
light cream or vanilla ice cream, for serving

Steps:

  • Pre-heat oven to 180*C/375*F. Butter a shallow 1 ½ litre baking dish.
  • Place half the bread cubes in the prepared baking dish. Mix the remaining cubes with 2 TBS of melted butter and set aside.
  • Spread the apple slices over the bread cubes in the baking dish. Stir together the sugar, cinnamon, nutmeg, water, lemon juice, lemon rind and the remaining 5 TBS of butter. Stir until sugar is dissolved. Pour evenly over the apples, then top with the reserved bread cubes.
  • Bake in the pre-heated oven for 30 to 40 minutes, or until the apples are tender and the bread is well browned. If it is browning too quickly, cover lightly with foil. Serve warm or cold with cream or ice cream.

My mother made this all through my childhood. It's lighter and crunchier than a cobbler. She made her own bread crumbs by drying the bread in a low oven until crispy and running it through the food processor. They could also be broken into small pieces and cut up smaller with a knife. More simply, store-bought unseasoned bread crumbs are a fine substitution.

6 apples, Granny Smith or Braeburn, peeled and cored
3 lemons, zested and juiced
1 1/2 cups unseasoned bread crumbs
1/2 teaspoon kosher salt
1 1/4 cups dark brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmet
1/8 teaspoon ground allspice
1/4 teaspoon ground cloves

Steps:

  • Preheat the oven to 350 degrees F with a rack in the center of the oven.
  • Place the apples on a flat surface, cut them in half, and then into thin slices. Put them in a medium bowl and coat them with a light layer of zest from 1 of the lemons and all of the lemon juice.
  • In a separate bowl, mix together the butter and bread crumbs. Season with salt. Set aside.
  • In a third bowl, combine the brown sugar, cinnamon, nutmeg, allspice and cloves. Mix to blend and add the apple slices.
  • Grease each baking dish with the remaining butter. Layer the bottom with the apples and cover with the bread crumb mixture.
  • Cover the dishes tightly with aluminum foil and place in the center of the oven. Bake until the apples are tender when pierced with the tip of a knife, 30 to 45 minutes. Remove the foil, raise the oven temperature to 425 degrees F and bake until the top browns. Serve immediately.

2 teaspoons cinnamon
1 1/4 cups flour
3/4 cup brown sugar
1/4 lb butter
2/3 cup brown sugar
1/4 cup hot water
1/2 lemon, juice of

Steps:

  • Pre-heat oven to 350 degrees.
  • Arrange slices in the bottom of a lightly greased 12x9 pan.
  • Sprinkle with cinnamon.
  • Mix flour and brown sugar.
  • Cut in butter until crumbly and set aside.
  • Syrup: Combine ingredients and stir well.
  • Drizzle half of mixture over apples.
  • Cover with flour mix.
  • Pour remaining syrup over top.
  • Bake at 350 for one hour.
