APPLE CINNAMON PORK TENDERLOIN

This meal is simple to make and delicious. A great substitution at Christmas if you don't want the labour of preparing a turkey dinner. Using dried cranberries instead of raisins adds great colour to the dish. I use the ingredient amounts and cooking times as estimates and vary them to suit the size of the pork tenderloin. I sometimes also add some fruity wine vinegar to the apple mixture for some added flavour.

1 -1 1/2 lb pork tenderloin
2 tablespoons cornstarch
1 teaspoon ground cinnamon
2 tablespoons brown sugar
2 apples, peeled,cored and sliced
2 tablespoons dried cranberries or 2 tablespoons raisins

Steps:

  • Preheat oven to 400 degrees.
  • Place the tenderloin in a roasting pan or casserole dish (I use cooking spray first to make clean up easier).
  • Combine the remaining ingredients together and stir.
  • Spoon the apple mixture around the tenderloin, cover and bake for 30 minutes.
  • Remove the lid and spoon the apple mix over top of the tenderloin.
  • Place back in the oven and bake 15 to 20 minutes or until tenderloin registers at least 155 to 160 degrees on a meat thermometer.

6 tablespoons reduced-sodium chicken broth, divided
2 tablespoons raisins
1/2 cup chopped apple
1 celery rib, chopped
2 tablespoons chopped onion
1 garlic clove, minced
1-1/2 cups fat-free Caesar croutons
2 tablespoons sliced almonds, toasted
1/8 teaspoon pepper
1 pork tenderloin (1 pound)

Steps:

  • In a small saucepan, bring 4 tablespoons broth to a boil. Remove from the heat; add raisins. Let stand for 5 minutes. , In a nonstick skillet coated with cooking spray; saute the apple, celery and onion for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Remove from the heat; stir in the broth mixture, croutons, nuts, pepper and the remaining broth., Make a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove plastic wrap; fill with stuffing mixture. Close roast; tie at 2-in. intervals with kitchen string and secure ends with toothpicks., Place on a rack in a shallow baking pan coated with cooking spray. Bake at 425° for 25-30 minutes or until a thermometer reads 160°. Let stand for 5 minutes before slicing.

3 Red Delicious apples
6 ounces dried California raisins
4 ounces brown sugar
8 center-cut pork chops
6 ounces unsalted butter
6 ounces demi-glace

Steps:

  • Apple preparation:
  • Combine 3 apples, 6 ounces of dried raisins, 6 ounces of brown sugar, and let marinate for a few hours.
  • Pork chops:
  • In a hot pan, slowly grill the pork chops until completely cooked. Melt the unsalted butter, mix in the raisin, apple and sugar mixture, add 6 ounces of demi-glace, and saute until apples are soft.
  • Take 3 slices of apple for each serving and dip in water, sprinkle with salt, then coat in corn flour. Deep-fry the apples and place on each plate for garnish.
  • Serve with either sauteed fresh spinach or tropical rice and black beans.

The trick to flavorful and moist pork tenderloin is to sear the pork before roasting. In our recipe, the pork is seared and then is baked on top a bed of apples and onions. Most often, you will find that pork tenderloins are sold in packages with two tenderloins. One tenderloin should generously serve 2 people and most likely serve 3. One note, "pork tenderloins" and "pork loin" are two different cuts of meat. Pork tenderloins are much thinner and take less time to cook.

2 pork tenderloins (about 1 1/2-pounds each)
2 tablespoons vegetable oil, plus more as needed
1 1/2 teaspoons salt, plus more as needed
1 tablespoon Dijon mustard
1 tablespoon chopped fresh thyme leaves
1/4 teaspoon ground black pepper
2 apples, cored and sliced (we like Granny Smith, Golden Delicious or Braeburn)
2 onions, sliced
1 cup chicken stock, see our homemade chicken stock recipe
1 tablespoon butter

Steps:

  • Heat oven to 425 degrees F. Trim each tenderloin of any silver skin (this can be tough when cooked). To do this, use a small sharp knife and slide the blade under and outward to remove it.
  • Pat pork dry with paper towels and then rub with one tablespoon of the oil and 1 1/2 teaspoons of salt. Heat a tablespoon of oil in a heavy-bottomed oven-safe skillet over medium heat. When the oil is hot and shimmers, add the pork tenderloins and cook, occasionally turning, until evenly browned all over; about 12 minutes. Transfer to a large plate or cutting board. (The pork will not be cooked through).
  • Keep the pan used to sear the pork on the stove over medium heat. Check the pan, if it looks dry, add two to three teaspoons of additional oil. (If there is fat left in the pan from cooking the pork, there is no need to add extra oil).
  • Add the apples and onions then cook, occasionally stirring, until lightly browned around edges, about 5 minutes. Stir in 1 teaspoon of thyme.
  • Use a pastry brush (or use your fingers) to rub the seared pork all over with the mustard, 2 teaspoons of thyme, and the black pepper. Place the seared pork tenderloins on top of the apples and onions, and then slide into the oven.
  • Roast 10 to 15 minutes or until an internal thermometer inserted into the thickest part registers between 145 and 150 degrees F. Transfer the pork to a large plate and cover with aluminum foil. Let rest about 10 minutes.
  • While the pork rests, place the pan with apples and onions back onto the stove and turn heat to medium. Add chicken stock and use a wooden spoon to scrape the pan, lifting any brown bits from the bottom. Bring to a simmer and cook until reduced by half. Add butter and stir until melted.
  • To serve, slice pork into 1-inch slices then serve on a bed of the apples and onions with pan sauce drizzled on top.

4 apples (recommended: a mix of Golden Delicious and McIntosh)
1/4 cup melted butter
3 pounds pork tenderloin
Salt and freshly ground black pepper
1/2 cup apple butter
3 tablespoons Dijon mustard
1/4 cup honey
1 tablespoon chopped fresh rosemary leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the apples into 1-inch dice and toss with melted butter in a large bowl. Scatter the apples in the bottom of a roasting pan fitted with a rack.
  • Season the tenderloin generously with salt and pepper and place on the rack in the roasting pan. Whisk together all remaining ingredients in a small bowl. Put the tenderloin in oven until internal temperature registers 160 to165 degrees on an instant-read thermometer, about 30 to 40 minutes. During the last 10 minutes of cooking brush with half of the glaze. Remove from oven, brush with remaining glaze and allow to rest for 10 minutes on a cutting board before slicing. 4 (6 ounce) pork chops, 1 1/2 to 2-inches thick
½ teaspoon salt
½ teaspoon sage
2 medium tart apples, cored and sliced
¼ cup brown sugar
2 tablespoons all-purpose flour
1 cup hot water
1 tablespoon white vinegar
½ cup raisins

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Heat the oil in a large skillet over medium-high heat. Fry pork chops on each side until browned, about 3 minutes per side. Transfer to a baking dish, reserving the drippings in the skillet. Cover pork chops with apple slices and sprinkle with sugar.
  • Stir the flour into the fat in the skillet until smooth. Whisk in the water and vinegar. Simmer over medium-high heat, stirring constantly, until thick. Add raisins and pour over the pork chops. Cover the baking dish with a lid or aluminum foil.

1/4 cup apple cider vinegar
1/4 cup water
1/8 cup sugar
1 1/2 lbs pork tenderloin
2 slices bacon (I use maple bacon)
1 medium granny smith apple, cored and sliced
1/4 cup raisins
1/4 cup pine nuts
2 teaspoons brown sugar

Steps:

  • Preheat oven to 350°F.
  • Most tenderloins of this size will come in two pieces. Wrap each piece with a slice of bacon and place in a loaf pan or other similarly-sized dish.
  • Mix vinegar, water, and sugar until blended and pour over tenderloin.
  • Arrange apple slices along the end of the pan and between the two pieces of tenderloin.
  • Sprinkle raisins, pine nuts, and brown sugar on top of the pork.
  • Cover with foil and bake for 45 minutes. Uncover and bake for another 15 minutes.
  • Let cool slightly and serve!

1 pork crown roast (16 ribs and about 10 pounds)
2 garlic cloves, slivered
2 tablespoons olive oil
Salt and pepper to taste
2 cups apple juice or cider
APPLE RAISIN STUFFING:
1 cup raisins
1 cup boiling water
1 cup chopped onion
1 cup chopped celery
1 garlic clove, minced
3/4 cup butter
5 cups soft bread crumbs
3 cups chopped peeled tart apples
1/4 cup minced fresh parsley
1 teaspoon salt
1/4 teaspoon paprika

Steps:

  • Cut slits in the bottom of each rib; insert garlic slivers. Rub oil over entire roast; sprinkle with salt and pepper. Place in a shallow roasting pan. Cover rib ends with foil. Pour apple juice into pan. Bake, uncovered, at 350° for 1 hour, basting occasionally. , Meanwhile, for stuffing, place the raisins in a small bowl; pour boiling water over raisins. Let stand for 2 minutes; drain and set aside. In a large skillet, saute the onion, celery and garlic in butter until tender. Add the bread crumbs, apples, parsley, salt, paprika and raisins; mix well. , Carefully spoon stuffing into center of roast. Bake 1 to 1-1/2 hours longer or until a thermometer reads 160°. Let stand for 10 minutes. Remove foil and stuffing. Cut pork between the ribs.

  • Meat Prep. Due to the size of the roast that I am using, I prepped this roast the same way I did for the Quinoa Stuffed Pork Loin and cut it into 3 connected sections rather than just splitting it in half.
  • Cook. Preheat the oven to 400. I add some water to the bottom of the pan, enough to cover the bottom of the pan but below the top of the rack so the water is not touching the meat.
