EASY APPLE SQUARES (CAKE BARS)
Super moist and easy-to-make apple squares. Made with cinnamon, brown sugar, these delicious cake bars are very moist, thanks to the vegetable oil and the plain Greek yogurt. And they get even moister after the first day! The apple squares are pretty much an apple cake sliced into imperfect squares.

Steps:
- Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper leaving enough overhang on all sides. Set aside.
- Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes and then remove from the oven. (As the crust bakes, you can prepare the filling and streusel.)
- Combine the sliced apples, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the apples are evenly coated. Set aside.
- Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Set aside.
- Turn the oven up to 350°F (177°C). Evenly layer the apples on top of the warm crust. It will look like there are too many apple slices, so layer them tightly and press them down to fit. Sprinkle the apple layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.
- Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Once cut, drizzle some salted caramel sauce on top of each. These apple pie bars can be enjoyed warm, at room temperature, or even cold.

APPLE PIE BARS
Steps:
- Preheat the oven to 375 degrees.
- For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
- Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
- Reduce the oven to 350 degrees.
- For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
- Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

APPLE & QUARK PIE BARS
One of my favourite apple pie recipes that makes enough for a small crowd! The exact number of apples needed depends on the size of the apples used - you need enough apple slices to cover the whole 30 cm x 40 cm pie. Instead of sliced apples you can also use applesauce and mix it into the quark mixture.

Steps:
- Gather the ingredients and grease a 13 x 9 x 2-inch pan with cooking spray or softened butter. Line the pan with parchment.
- Combine the flour, salt, and sugars in a large bowl and whisk until incorporated.
- Cube the cold butter and, using your fingers, rub the butter into the flour mixture until the butter is crumbly and pea-sized. Alternatively, you can use a pastry blender or two butter knives.
- Add the yolk and the vanilla and use a fork to stir them into the crumbly mixture. Switch to your fingers and continue mixing the dough until the yolk and vanilla are fully incorporated and the dough holds together if you squeeze a bit between your fingers.
- Remove 2 2/3 cups of dough and place in a medium bowl in the refrigerator. Press the remaining dough firmly and uniformly into the prepared pan. Using a fork, dock the crust and transfer to the freezer for 30 minutes.
- Preheat the oven to 325 F. Combine the sugar, flour, cinnamon, and salt in a large mixing bowl.
- Peel, core, and thinly slice the apples. Place them in the bowl and toss to coat with your hands. Add the lemon juice and toss a final time.
- To assemble the bars, remove the crust from the freezer and bake it for about 25 minutes, rotating midway, until the base is lightly browned.
- Remove the pan from the oven, increase the heat to 350 F, and cover the base with the apple filling, leaving behind any collected juices to avoid a soggy crust.
- Remove the remaining dough from the fridge and use your fingers to pinch off and create 1/2-inch crumbs to cover the bars.
- Place the bars in the oven and bake for about 55 to 65 minutes, rotating at the midway point, until the crumb topping browns and the apples are soft when you spear them with a paring knife.
- Let the bars come to room temperature before slicing and serving. Dust with confectioners' sugar.

- Preheat the oven to 375 degrees. For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 × 13-inch baking pan and press it lightly with floured hands on the bottom and ½ inch up the sides.
Set aside.
Spread the apples evenly over the crust, leaving a ½-inch border.
