EASY APPLE SQUARES (CAKE BARS)

Easy Apple Squares (Cake Bars) image

Super moist and easy-to-make apple squares. Made with cinnamon, brown sugar, these delicious cake bars are very moist, thanks to the vegetable oil and the plain Greek yogurt. And they get even moister after the first day! The apple squares are pretty much an apple cake sliced into imperfect squares.

Number Of Ingredients 11

3 apples (peeled, cored, and chopped into small square chunks)
1 teaspoon cinnamon
4 tablespoons brown sugar

1 teaspoon baking powder
1/8 teaspoon salt
1 cup white sugar

2 eggs

Steps:

  • Preheat oven to 350 degrees F. Grease a 9×9 square pan.

  • In a mixing bowl, combine together 1 and 1/4 cups flour, 1 teaspoon baking powder, and 1/8 teaspoon salt.

SALTED CARAMEL APPLE PIE BARS

Salted Caramel Apple Pie Bars image

Baking apple pie as bars is so much easier!

Provided by Sally

Categories     Bars

Time 3h20m

Number Of Ingredients 16

1/2 cup (115g) unsalted butter, melted
1/4 cup (50g) granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup (125g) all-purpose flour (spoon & leveled)
2 large apples, peeled and thinly sliced (1/4 inch thick)*
2 Tablespoons all-purpose flour
2 Tablespoons granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 cup (40g) old-fashioned oats
1/3 cup (70g) packed light or dark brown sugar
1/4 teaspoon ground cinnamon
1/4 cup (31g) all-purpose flour (spoon & leveled)
1/4 cup (60g) unsalted butter, cold and cubed
homemade salted caramel or store-bought caramel sauce

Steps:

  • Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper leaving enough overhang on all sides. Set aside.
  • Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes and then remove from the oven. (As the crust bakes, you can prepare the filling and streusel.)
  • Combine the sliced apples, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the apples are evenly coated. Set aside.
  • Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Set aside.
  • Turn the oven up to 350°F (177°C). Evenly layer the apples on top of the warm crust. It will look like there are too many apple slices, so layer them tightly and press them down to fit. Sprinkle the apple layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.
  • Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Once cut, drizzle some salted caramel sauce on top of each. These apple pie bars can be enjoyed warm, at room temperature, or even cold.

Categories     dessert

Time 2h

Yield 12 bars

Number Of Ingredients 15

1 pound (4 sticks) unsalted butter, at room temperature
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 1/2 pounds Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
1 1/2 pounds Golden Delicious apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 375 degrees.
  • For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
  • Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
  • Reduce the oven to 350 degrees.
  • For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
  • Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

  • Add the butter once the sugar is completely melted
  • Continue to stir or several minutes
  • Next, slowly add the cream to the butter and sugar mixture
  • Adding the cream will cause the sugar mixture to vigorously boil and rise in the pan -Don't be alarmed
  • Allow the mixture to boil for another minute
  • Now, turn off the heat and add the salt, quickly whisk for about 15 seconds
  • Then, add the vanilla and give another quick whisk until combined
  • Allow to sit
  • The sauce will thicken as it cools
  • Drizzle over warm Apple Pie Bars and serve
  • This sauce is also wildly delicious with some vanilla ice cream

TOPFEN APPLE SQUARES

Topfen Apple Squares image

Provided by Krista

Time 1h15m

Number Of Ingredients 7

1 ¾ cup (250 g) flour
¼ teaspoon salt
8 ¾ ounces (250 g) butter
8 ¾ ounces (250 g) topfen (quark or farmer's cheese)
5-6 apples (about 2 pounds or a little less than 1 kg)
3-5 tablespoons cinnamon-sugar
1 egg (for egg wash)

Steps:

  • Stir flour and salt together. Cut or rub in cold butter until mixture resembles coarse crumbs. Add the topfen and quickly knead everything together to form a ball of dough. Wrap dough in plastic wrap and place in refrigerator to rest for 30-60 minutes.
  • Peel and core apples and slice thinly. (This works best with the slicing side of a box grater.)
  • Divide dough into two halves. On a well-floured surface, roll out one half of the dough into a rectangular shape and lay it on a baking sheet lined with parchment paper. Layer the apples over the dough and sprinkle with cinnamon-sugar. Roll out the second half of the dough and lay it on top of the apples. Seal the edges and brush the top with beaten egg. Pierce the top all over with a fork. Bake at 350°F (180°C) for 35 minutes, until golden brown. Use paper towels to absorb any juices from the apples that may have run out.
  • Cut into squares and enjoy within a day or two.

APPLE PIE BARS RECIPE

Apple Pie Bars Recipe image

Number Of Ingredients 21

For the Crust:
2 cups flour
½ teaspoon salt
12 tablespoons butter (diced into cubes)
¼ cup 2% milk
1 egg yolk
For the Apple Filling:
5 cups Granny Smith apples (peeled and diced) FYI this came to approx 5 medium size apples for me
1 teaspoon vanilla extract
½ cup flour
¼ cup SPLENDA® Sugar Blend
1/3 cup packed brown sugar
1½ teaspoon apple pie spice
For the Topping:
1 egg white
3/4 tablespoons SPLENDA® Sugar Blend
¼ teaspoon apple pie spice
Optional (and delicious) Glaze:
1 cup powdered sugar
2 tablespoons 2% milk
½ teaspoon vanilla

Steps:

  • Preheat your oven to 350ºF.
  • First, you're going to start by making the crust for the apple pie bars. Mix together the flour and salt in a food processor.
  • Now, add in the cold, cubed butter and pulse until mixture resembles coarse crumbs. Add in the milk and egg yolk and pulse until mixture comes together and can be formed into a ball. Set the dough aside in the refrigerator while you're preparing the apple filling.
  • (If you don't have a food processor, you can do this by hand. You'll simply mix all ingredients together and use your hands to form the dough into a ball.)
  • Now, for the filling you'll place the diced apples in a large mixing bowl. Add in the vanilla and toss to coat the apples well.
  • In a separate bowl, mix together flour, SPLENDA® Sugar Blend, brown sugar, and apple pie spice. Pour flour/SPLENDA® mixture over the apples and toss until all apples are evenly coated.
  • In a 13x9" baking dish, you'll now assemble the apple pie that will later be cut into bars. Remove the dough from the fridge, and divide it into 2 equal portions.
  • Roll first portion of the dough into the bottom of the ungreased 13x9" baking dish.
  • Next, pour the apples over the bottom layer of dough (reserving a small space around the edges of the dish)
  • Roll out the 2nd dough portion i the same manner about ½" larger on each side. Place the dough over the apples in the baking dish, and tuck sides of dough down into the baking dish, sealing the apples inside the crust.
  • Now, in a small bowl, whisk the egg white until foamy and brush it over the top of the pie.
  • Combine the SPLENDA® Sugar Blend and apple pie spice in another small bowl and sprinkle evenly over pie.
  • Pop the baking dish into the oven, and bake in preheated oven for 50 minutes (or until crust is golden brown).
  • Remove from oven and allow to cool for at least 1 hour on a baking rack before cutting into bars.
  • Serve bars drizzled with glaze
  • To make the glaze, you'll combine all of the glaze ingredients in a small bowl and mix together until smooth. Then drizzle over the apple pie bars and enjoy the heavenliness!

Categories     Dessert

Time 2h10m

Number Of Ingredients 16

For the Crust and Topping:
4 cups all-purpose flour
1/2 teaspoon salt
1 cup granulated sugar
1/3 cup light brown sugar
1 1/4 cups unsalted butter (cold)
1 egg yolk
1 tablespoon vanilla extract
Confectioners' sugar (for dusting)
For the Apple Pie Filling:
1/3 cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 pounds Granny Smith apples (about 5 apples)
2 tablespoons lemon juice (freshly squeezed)

Steps:

  • Gather the ingredients and grease a 13 x 9 x 2-inch pan with cooking spray or softened butter. Line the pan with parchment.
  • Combine the flour, salt, and sugars in a large bowl and whisk until incorporated.
  • Cube the cold butter and, using your fingers, rub the butter into the flour mixture until the butter is crumbly and pea-sized. Alternatively, you can use a pastry blender or two butter knives.
  • Add the yolk and the vanilla and use a fork to stir them into the crumbly mixture. Switch to your fingers and continue mixing the dough until the yolk and vanilla are fully incorporated and the dough holds together if you squeeze a bit between your fingers.
  • Remove 2 2/3 cups of dough and place in a medium bowl in the refrigerator. Press the remaining dough firmly and uniformly into the prepared pan. Using a fork, dock the crust and transfer to the freezer for 30 minutes.
  • Preheat the oven to 325 F. Combine the sugar, flour, cinnamon, and salt in a large mixing bowl.
  • Peel, core, and thinly slice the apples. Place them in the bowl and toss to coat with your hands. Add the lemon juice and toss a final time.
  • To assemble the bars, remove the crust from the freezer and bake it for about 25 minutes, rotating midway, until the base is lightly browned.
  • Remove the pan from the oven, increase the heat to 350 F, and cover the base with the apple filling, leaving behind any collected juices to avoid a soggy crust.
  • Remove the remaining dough from the fridge and use your fingers to pinch off and create 1/2-inch crumbs to cover the bars.
  • Place the bars in the oven and bake for about 55 to 65 minutes, rotating at the midway point, until the crumb topping browns and the apples are soft when you spear them with a paring knife.
  • Let the bars come to room temperature before slicing and serving. Dust with confectioners' sugar.

  • Preheat the oven to 375 degrees. For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 × 13-inch baking pan and press it lightly with floured hands on the bottom and ½ inch up the sides.
Set aside.
Spread the apples evenly over the crust, leaving a ½-inch border.
