APPLE-QUARK-CASSEROLE
This is a fluffly winter dessert, which makes yummy apples the star of the show. Of course, you could make this anytime of the year, if you like a nice warm dessert. It goes great with vanilla ice-cream, custard or whipped cream I hope youll enjoy it! :)

Steps:
- Using your mixer beat egg whites and salt until nearly stiff. Add 2 tbs of the sugar and beat until stiff peaks have formed.
- In another bowl beat egg yolks, 3 tbs of the sugar and the vanilla sugar until creamy. Mix in quark and semolina. Then fold in egg whites and raisins carefully.
- Pour into 4 well greased ramekins of 10 cm (4 inches) in diameter. Stick the apple slices into the dough until nearly covered. Sprinkle with remaining sugar.
- Bake in the pre-heated oven at 180°C/350°F 30-35 minutes until toothpick inserted in centre comes out clean.
- Enjoy with topping of your choice. :).

APPLE & QUARK PIE BARS
One of my favourite apple pie recipes that makes enough for a small crowd! The exact number of apples needed depends on the size of the apples used - you need enough apple slices to cover the whole 30 cm x 40 cm pie. Instead of sliced apples you can also use applesauce and mix it into the quark mixture.

Steps:
- Preheat oven to 200°C.
- Line a 30 cm x 40 cm pan with parchment paper.
- Mix flour, sugar, baking powder, baking soda and vanilla sugar in a large bowl.
- Add melted butter and mix to combine.
- (If you are using vanilla extract instead of vanilla sugar, add it with the melted butter.).
- Transfer half of the dough into another bowl.
- Add eggs and buttermilk to one half of the dough and mix to combine.
- Pour this dough onto the prepared pan and spread evenly.
- To make filling: Lightly whip the eggs to break their structure.
- Add sugar, vanilla sugar, quark and lemon juice (and zest, if using), mix well.
- Pour the quark mixture on top of the dough in the pan.
- Peel, core and slice apples.
- Arrange apple slices on top of the quark layer, covering the whole pie.
- Sprinkle the reserved half of the dough on top of apple slices.
- Bake in the preheated oven for 30 minutes.

- Set oven to 350 degrees.
- Butter a 2-qt casserole.
- Place sliced apples in prepared casserole dish.
- In a bowl, mix lemon juice and water; pour over the apples.
- In another small bowl, mix sugar, flour, cinnamon and salt; pour over the apples and the lemon/water mixture.
- Dot with chopped butter on the top.
- Bake for 30-35 minutes; stirring occasionally.
