2 pounds pork tenderloin
10 slices applewood smoked thick-cut bacon, divided
Kosher salt and freshly cracked black pepper
1/4 cup shallots, finely chopped
2 cups demi-glace
3/4 cup pinot noir wine

Steps:

  • Preheat the oven to 425 degrees F.
  • Slice each tenderloin crosswise into 4 equal pieces. Wrap 1 piece of bacon around the pork and secure with toothpick or wooden skewer. Repeat with the remaining pork and bacon. Sprinkle with pepper. Heat a large cast-iron skillet over moderately-high heat, add the pork and cook until golden brown, turning once, about 6 minutes total. Transfer the skillet to the oven and cook until no longer pink in the middle and the bacon is golden and crispy, 8 to 10 minutes.
  • In a large skillet over moderate heat, cook the remaining bacon until crispy, 12 to 15 minutes. Remove the bacon and drain on paper towels. Keeping the fat in the pan over moderate heat, add the shallots to the pan and cook until softened, about 5 minutes. Add the demi-glace and wine and bring to a boil, reduce the heat and simmer until slightly thickened, about 15 minutes. Season with salt and pepper.
  • Serve the pork with generous drizzle of the pinot noir sauce.

1/2 teaspoon dried thyme
3 teaspoons butter, divided
1/4 cup finely chopped red onion
1 large apple, peeled and thinly sliced
2 tablespoons apple juice or apple brandy, divided
1/4 cup white wine or reduced-sodium chicken broth
1/2 cup reduced-sodium chicken broth
1 teaspoon cornstarch
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup half-and-half cream
1 tablespoon Dijon mustard

Steps:

  • Rub pork with thyme. In a large skillet, brown pork in 1-1/2 teaspoons butter; remove and set aside. In the same skillet, saute onion in remaining butter until tender. Stir in apple; cook and stir for 2 minutes. Add 1-1/2 teaspoons apple juice or brandy; cook and stir 30 seconds longer. Transfer to a bowl. , Add wine or broth and remaining apple juice or brandy to the skillet. Bring to a boil over medium heat; cook for 5 minutes or until liquid is reduced by half. Stir in broth, pork and apple mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until a thermometer reads 160°, turning pork occasionally. Remove pork and keep warm. , In a small bowl, combine the cornstarch, salt and pepper; gradually stir in cream and mustard. Stir into apple mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with pork.

This dish is fabulous. Pork tenderloin is a wonderful meat, very lean but ful of flavor. I started with a classic combination of pork and apples, then wanted cheese and a starch for flavor. Couscous cooks in just a minute or two so the prep work was a snap. Use an oven safe skillet to sear, roast and make the pan sauce.

1 lb pork tenderloin
4 ounces goat cheese (you can use the herbed variety)
1/2 cup fuji apples or 1/2 cup gala apples, sliced very thinly
1/2 cup cooked couscous
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1/2 teaspoon all purpose Greek seasoning, blend
kitchen twine
1 tablespoon canola oil
1 tablespoon flour
1 cup pinot noir wine

Steps:

  • Preheat the oven to 400 degrees.
  • Butterfly the tenderloin by slicing through 3/4 of the meat lengthwise down the center and fold it open like a book.Cover the meat in plastic wrap and pound it with a mallet or rolling pin to flatten it out to 1/2 an inch thickness.
  • Spread 2/3 of the surface of the meat with the goat cheese, leaving a strip at the end bare to keep the filling from oozing out. Place the apple slices in two rows lengthwise and add the couscous to the center. Roll the pork up tightly into a roast and secure with four ties of the butcher's twine.
  • Heat the oil in a skillet on medium high heat. When hot, almost to smoking point, add the meat and sear on all sides, getting as much carmelization as possible.
  • Place the skillet in a 400 degree oven and roast for 25 minutes, or until internal temperature is 165 degrees. Remove from oven and let the meat rest on a cuttong board for ten minutes.
  • Meanwhile, put the skillet back on the stove and add the flour to the pan drippings. Wisk together until flour is incorporated and let cook cook for a minute before adding the wine.
  • Let the sauce reduce to a desired thickness turn off the heat. Slice the meat and serve with sauce.

2 sprigs fresh rosemary, leaves roughly chopped
2 sprigs fresh sage, leaves roughly chopped
2 cloves garlic, smashed
Pinch crushed red pepper
Kosher salt
Extra-virgin olive oil
1 (6-chop) pork rib roast
2 large onions, sliced
1 bundle fresh thyme, tied with string
3 bay leaves
2 quarts apple cider, divided
Chunky Applesauce, recipe follows
3 tablespoons butter
4 Granny Smith apples, peeled, cored, and cut into 1/2-inch chunks (toss the apples in lemon juice if not using right away)
1 1/2 cups reserved cider from Roasted Pork Loin with Cider
1/4 cup apple cider
1 pinch ground cinnamon
1/4 cup heavy cream
1/2 cup walnuts, toasted and coarsely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • In a food processor, combine the chopped herbs with the garlic, crushed red pepper, a generous pinch of salt, and enough olive oil to make a paste. Brush the paste on the outside of the pork rib roast.
  • Toss the onions with olive oil and salt and place in the bottom of a roasting pan. Add the thyme, bay leaves, and two-thirds of the cider. Place the pork on top of the onions and place in the oven. Roast the pork until it has developed a lovely brown crust, 20 to 25 minutes. Check on the pork and stir the onions and cider if they are starting to burn. Add more cider when the level starts to go down.
  • Lower the oven to 375 degrees F and roast until an instant-read thermometer reads 150 degrees F, 30 to 35 minutes. If the crust on the pork starts to get too dark, cover it with foil. Remove 1 1/2 cups of the cider from the bottom of the roasting pan and reserve for the applesauce.
  • Let the pork rest for at least 15 minutes before carving. When ready to carve, remove the pork from the bone and cut the loin into thin slices. Serve with the onions braised in cider and Chunky Applesauce.
  • Melt the butter in a saucepan large enough to accommodate the apples. Add the apples and saute over medium-low heat until the apples start to soften. Add the reserved cider, apple cider, and cinnamon and cook over medium-low heat until most of the cider has evaporated and the apples are cooked and very soft.
  • Add the heavy cream and walnuts and cook until the cream has reduced by half. The end result should be a very chunky, sweet/savory applesauce.

1 large pork tenderloin
1/2 cup butter, room temp
1 tablespoon white truffle oil
1/4 lb mortadella, sliced thin
1/4 lb Fontina cheese
1/2 cup flour
1/4 cup extra virgin olive oil (EVOO)
1 shallot, minced
2 tablespoons flour
1 cup dry red wine
1/3 lb assorted mushroom, sliced
1/2 ounce dried porcini mushrooms (soaked in 1/2 cup warm water)

Steps:

  • Preheat oven to 325°F.
  • Butterfly pork tenderloin and flatten with mallet until 1/4 inch thick.
  • Tenderloin should end up approximately 12 inches by 8 inches.
  • Blend soft butter with truffle oil divide in half and place 1/2 in refrigerator.
  • Lay out tenderloin and spread 1/2 truffle butter and layer mortadella slices and cheese to 1 inch of the edges.
  • With long side facing you roll tenderloin tightly and tie with butchers twine.
  • Dredge with flour.
  • Heat olive oil in large saute pan on medium high heat.
  • Sear tenderloin on all sides.
  • Remove loin from saute and place in oven while making sauce.
  • Sauce:.
  • In saute pan add shallots and cook till soft.
  • Add 2 tablespoons flour and cook until smooth paste forms.
  • Add wine to deglaze pan.
  • Add assorted mushrooms saute until moisture is reduced about 5 minutes.
  • Add porcini mushrooms with soaking liquid and simmer till slightly thickened.
  • Check tenderloin and remove when it registers 155°F on a thermometer.
  • Let rest 10 minutes covered with tin foil.
  • Remove string and slice tenderloin on the diagonal.
  • Serve plattered drizzled with sauce.

4 pork steaks, approx 140g/5oz each, trimmed of excess fat
1 tbsp oil
2 eating apples , cored and cut into eight
1 onion , halved and sliced
small handful sage leaves, torn, or 2 tsp dried
100ml/3½ fl oz chicken or ham stock (from a cube is fine)
2 tsp Dijon mustard or wholegrain mustard

Steps:

  • Rub the pork steaks with a little oil and season with pepper and salt to taste. Heat a large frying pan and fry the steaks for 2 mins on both sides until golden. Transfer to a plate. Adding a little more oil to the pan, fry the apples, onions and sage for 5 mins or until the apples have softened.
  • Pour in the stock and spoon in the mustard, then return the pork to the pan and simmer for 10 mins until the sauce has reduced by about a third and the pork is cooked through. Serve with veg and mashed potatoes.

5 pounds veal marrow bones
2 medium onions, coarsely chopped
2 small celery stalks, chopped
1 large carrot, peeled and chopped into 1-inch lengths
1 head garlic, broken into cloves but not peeled
2 tablespoons tomato paste
1 tablespoon dried thyme
1 Turkish bay leaf
Handful parsley stems
1 teaspoon olive oil
1 small carrot, peeled and grated
1 stick celery, grated
1 tablespoon fresh thyme leaves
1 1/4 cups pinot noir
4 cups veal stock (see note)
Salt and freshly ground black pepper
2 tablespoons cold butter, cut into pieces

Steps:

  • To make stock, heat oven to 450 degrees. Place bones in a medium roasting pan, and roast, turning once or twice, until deeply browned, about 2 hours. Add onions, celery, carrots, garlic and tomato paste, and roast, stirring occasionally, until vegetables are deep golden brown, about 1 1/4 hours.
  • Transfer bones and vegetables to a 2-gallon stockpot. Place roasting pan on stove, add 2 cups water and deglaze over high heat, stirring with a wooden spoon to scrape up brown bits. Transfer deglazing liquid into stockpot with bones. Add thyme, bay leaf, parsley stems and 2 1/2 quarts water. Bring to a simmer over high heat, reduce heat to low and simmer until stock is rich and flavorful, about 5 hours. Remove from heat, and strain into a deep saucepan; there should be 8 cups stock. Place saucepan in sink of ice water to cool stock; then refrigerate until ready to use. (While stock is cold, scoop hardened fat from surface, and discard it.) Freeze half the stock to use later.
  • To make sauce, heat olive oil in a medium saucepan over medium heat, and sauté carrot and celery, stirring constantly, until lightly caramelized, about 3 minutes. Add thyme and pinot noir, bring to a simmer and simmer until reduced by half, 7 to 10 minutes. Strain into a clean saucepan.
  • Add 4 cups veal stock, bring to a simmer over medium heat, and simmer until sauce is reduced to about 1 1/2 cups. Season to taste with salt and pepper. Increase heat to high, and add butter piece by piece, whisking to emulsify. Sauce will become glossy and coat back of a wooden spoon. As soon as butter is incorporated, remove sauce from heat, and spoon onto meat.
