2 ½ cups flour
1 teaspoon salt
1 ½ sticks butter, 1 1/2 sticks, cold, cubed
8 tablespoons ice water, or as needed
2 ½ lb granny smith apple, cored, sliced, peeled
¾ cup sugar
2 tablespoons flour
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ lemon
1 egg, beaten
1 tablespoon sugar
1 scoop vanilla ice cream

Steps:

  • In a medium-sized bowl, add the flour and salt. Mix with fork until combined.
  • Add in cubed butter and break up into flour with a fork. Mixture will still have lumps about the size of small peas.
  • Gradually add the ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky.
  • Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate.
  • Peel the apples, then core and slice.
  • In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and juice from the lemon.
  • Mix until combined and all apples are coated. Refrigerate.
  • Preheat the oven to 375°F (200°C).
  • On a floured surface, cut the pie dough in half and roll out both halves until round and about ⅛-inch (3 mm) thick.
  • Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.
  • Pour in apple filling mixture and pat down.
  • Roll the other half of the dough on top.
  • Trim the extra dough from the edges and pinch the edges to create a crimp. Make sure edges are sealed together.
  • Brush the pie with the beaten egg and sprinkle with the sugar.
  • Cut four slits in the top of the pie to create a vent.
  • Bake pie for 50-60 minutes or until the crust is golden brown and no greyish or undercooked pastry remains.
  • Allow to cool completely before slicing.
  • Top with ice cream and serve.

1 recipe pastry for a 9 inch double crust pie
½ cup unsalted butter
3 tablespoons all-purpose flour
¼ cup water
½ cup white sugar
½ cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
  • Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
  • Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

This is the apple pie I've been making for years and if using Pillsbury pie crusts (ready-made pie dough in the dairy section) is the perfect pie-making project for kids. Recipe adapted from an old church cookbook.

6 -7 large apples
1 cup sugar, divided
1 pinch nutmeg
1 pinch cinnamon
2 tablespoons flour
1/4 cup butter or 1/4 cup margarine
lemon juice
1 pastry for double-crust pie (or use Pillsbury pie dough, in dairy section of grocery store(package has ready-made crust for pie)

Steps:

  • Preheat oven to 350°F.
  • Line pie pan with bottom crust.
  • Peel and slice apples.
  • Put 1/2 of the apple slices in prepared pie pan.
  • Sprinkle apple slices with 1/2 cup sugar, a little nutmeg and cinnamon.
  • Add rest of apples and top with rest of sugar (1/2 cup), a little nutmeg cinnamon, flour and butter or margarine cut into small pieces.
  • Sprinkle with lemon juice.
  • Cover with top crust.
  • Crimp edges together with fork.
  • Sprinkle top with sugar and cut steam vents in top crust.
  • Put pie on baking sheet in case of spill-overs.
  • Bake for 1 hour at 350°F.

1/4 cup all-purpose flour (spooned and leveled), plus more for rolling dough
1 recipe (2 disks) Basic Pie Dough for Apple Pie
2 tablespoons freshly squeezed lemon juice (from 1 lemon)
4 pounds (8 to 10) apples, such as Empire, Granny Smith, Gala, Cortland, Winesap, or a mix
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 tablespoons unsalted butter, cut into small pieces

Steps:

  • Lightly flour a large piece of waxed paper; place a disk of dough in center. Rolling from center outward, form into a 12-inch circle. (Use paper to rotate dough, and flour rolling pin and paper as necessary to prevent sticking.) Transfer dough (still on paper) to a baking sheet; cover and refrigerate. Repeat with second disk of dough.
  • Preheat oven to 450 degrees with a rack set in lowest position. Remove first circle of dough from refrigerator; wrap around rolling pin (discarding paper), and carefully unroll over a 9-inch pie plate. Gently lift edges and lower dough into the pie plate so it hugs bottom and sides. Avoid stretching the dough, which will make it shrink during baking. Refrigerate.
  • Place lemon juice in a large bowl. Peel, core, and cut apples into 1/4-inch-thick slices; halve crosswise, and add to lemon juice (to keep them from turning brown) as you work. Add sugar, flour, cinnamon, and salt; toss to combine.
  • Remove dough-lined pie plate from refrigerator. Fill with apple mixture, gently packing apples and mounding slightly in center; dot with butter. Lightly brush rim of pie shell with water. Remove remaining circle of dough from refrigerator. Lay over apples; press along moistened rim to seal. Using kitchen shears, trim overhang to 1 inch.
  • With floured fingers, fold overhang under itself to form a thick rim; pinch between thumb and forefinger to form a uniform edge around the rim of the pie plate.
  • To crimp edges: With thumb and index finger of one hand, gently press dough against knuckle of other hand; continue around pie. (Deep indentations anchor dough on rim and prevent it from sliding down sides of pie plate during baking.)
  • With a floured paring knife, cut 5 to 6 slits in top of pie, radiating from center; place pie plate on a rimmed baking sheet. Bake 20 minutes; reduce heat to 375 degrees and bake until crust is golden and juices are bubbling, 50 to 60 minutes more. If edges brown too quickly, cover with aluminum foil. Cool completely, at least 6 hours, before serving.

1-1/2 to 1-3/4 lb. Cortland apples (about 4 medium)
1 lb.Granny Smith apples (about 2-1/2 medium)
2 tsp. fresh lemon juice
2/3 cup packed light brown sugar
1/4 cup plus 1 Tbs. granulated sugar
3 Tbs. cornstarch
1/2 tsp. ground cinnamon; more to taste
1/4 tsp. kosher salt
1/8 tsp. ground nutmeg
1 large egg white
2 tsp. unsalted butter, softened, plus 1 Tbs. cold unsalted butter cut into small (1/4-inch) cubes
4 to 6 Tbs. all-purpose flour
1 recipe Flaky Pie Pastry

Steps:

  • Position two oven racks in the lower third of the oven and heat the oven to 400°F.
  • Peel the apples, cut each in half from top to bottom, remove the cores with a melon baller, and trim the ends with a paring knife. Lay the apples, cut side down, on a cutting board. Cut the Cortland apples (below left) crosswise into 3/4-inch pieces, and then halve each piece diagonally. Cut the Granny Smith apples (below right) crosswise into 1/4-inch slices, leaving them whole. Put the apples in a large bowl and toss with the lemon juice.
  • Combine the brown sugar, 1/4 cup of the granulated sugar, cornstarch, cinnamon, kosher salt, and nutmeg in a small bowl. (Don't add this to the fruit yet.)
  • In a small dish, lightly beat the egg white with 1 teaspoon water. Set aside.
  • Butter a 9-inch ovenproof glass (Pyrex) pie plate, including the rim, with the 2 tsp. of softened butter.
  • Rub 2 to 3 Tbs. of flour into the surface of a pastry cloth, forming a circle about 15 inches across, and also into a rolling pin stocking. If you don't have a pastry cloth, rub the flour into a large, smooth-weave, cotton kitchen towel and use a floured rolling pin. Roll one of the disks of dough into a circle that's 1/8 inch thick and about 15 inches across.
  • Lay the rolling pin across the upper third of the dough circle; lift the pastry cloth to gently drape the dough over the pin and then roll the pin toward you, wrapping the remaining dough loosely around it. Hold the rolling pin over the near edge of the pie plate. Allowing for about a 1-inch overhang, unroll the dough away from you, easing it into the contours of the pan. If the dough isn't centered in the pan, gently adjust it and then lightly press it into the pan. Take care not to stretch the dough. If it tears, simply press it back together-the dough is quite forgiving.
  • Brush the bottom and sides of the dough with a light coating of the egg-white wash (you won't need all of it). Leaving a 1/4-inch overhang, cut around the edge of the dough with kitchen shears.
  • Combine the sugar mixture with the apples and toss to coat well. Mound the apples in the pie plate, rearranging the fruit as needed to make the pile compact. Dot the apples with the 1 Tbs. cold butter cubes.
  • Rub another 2 to 3 Tbs. flour into the surface of the pastry cloth and stocking. Roll the remaining dough into a circle that's 1/8 inch thick and about 15 inches across. Use the rolling pin to move the dough. As you unroll the dough, center it on top of the apples. Place your hands on either side of the top crust of the pie and ease the dough toward the center, giving the dough plenty of slack. Leaving a 3/4-inch overhang, trim the top layer of dough around the rim of the pie plate. Fold the top layer of dough under the bottom layer, tucking the two layers of dough together. Press a lightly floured fork around the edge of the dough to seal it, or flute the edge of the dough with lightly floured fingers.
  • Lightly brush the top with cold water and sprinkle the surface with the remaining 1 Tbs. sugar. Make steam vents in the dough by poking the tip of a paring knife through it in a few places; it's important to vent well so that the steam from the cooking apples won't build up and crack the top of the crust.
  • Cover the rim of the pie with aluminum foil bands. This will prevent the edge of the crust from overbrowning.
  • Place a rimmed baking sheet or an aluminum foil drip pan on the oven rack below the pie to catch any juices that overflow during baking. Set the pie on the rack above.
  • Bake until the top and bottom crusts are golden brown and the juices are bubbling, 60 to 75 minutes; to thicken, the juices must boil, so look for the bubbles through the steam vents or through cracks near the edges of the pie and listen for the sound of bubbling juices. During the last 5 minutes of baking, remove the foil bands from the edges of the pie. Cool the pie at least 3 hours and up to overnight before serving.

About 5 cups thinly sliced apples (peeled and cored), 8-10 medium apples
3 tablespoons sugar
3 tablespoons all-purpose flour
1-2 teaspoons cinnamon
1/4 teaspoon salt
2 tablespoons butter, cut into small pieces
Double pie crust
1 egg white + 1 tablespoon water
granulated or chubby sparkling sugar, optional

Steps:

  • In a medium bowl add the sliced apples. Sprinkle with the sugar, flour, cinnamon, and salt and toss gently to combine well.
  • Roll out and place an uncooked pie crust in the bottom of a deep 9-inch pie plate.
  • Place the apple mixture in the uncooked pie shell. Place the small pieces of butter on top of apple mixture.
  • Top with second pie crust, crimp the edges, and then cut a few slits in the top crust to allow steam to vent.
  • Mix the egg white and 1 tablespoon of water together in a small bowl and then brush the top with water and sprinkle with sugar before baking.
  • Bake at 450 degrees F. for the first 15 minutes, then reduce the heat to 350 degrees F. and continue cooking for an additional 40 to 45 minutes, or until the top is golden brown.
  • If the edge of the crust starts to brown more quickly than the center, carefully cover the edge with foil for the last 15-20 minutes of baking to prevent over-browning.
  • Let the pie cool for 10 minutes before serving. Can be made ahead of time and served at room temperature.

1 1/2 Tablespoons minced fresh rosemary (optional)
1 1/2 Tablespoons white sugar

1 cup (2 sticks) unsalted butter, cold and cubed
5 to 6 Tablespoons ice water
4 medium apples, peeled and diced small (about 3 cups)
1/4 cup white sugar
1/4 cup packed light brown sugar
1 teaspoon ground cinnamon
2 Tablespoons all-purpose flour
1 large egg, whisked with 1 Tablespoon water
Sanding sugar (optional)

Steps:

  • In the bowl of a food processor, combine the flour, rosemary (optional), sugar and salt. Pulse just until combined then add the cubed butter and pulse until the mixture resembles wet sand.
  • With the food processor running, slowly stream in the ice water a few tablespoons at a time until the dough comes together into a cohesive ball.
  • Arrange a piece of plastic wrap on your work surface then transfer the dough into the center and wrap it up securely. Refrigerate the dough for 30 minutes.
  • Lightly flour your work surface.
  • Roll out the dough until it is 1/4-inch thick. Using a 4-inch cookie cutter (or a glass), cut out as many circles as you can. Re-roll the dough and cut out additional circles until you have a total of 12. Arrange each circle in a muffin tin cup, pressing it down and up the edges. Keep any dough scraps for the top lattice or decorations.
  • Preheat the oven to 425°F.
  • In a large bowl, stir together the diced apples, white sugar, brown sugar, cinnamon and flour.
  • Divide the mixture among the muffin tins. Top or each pie with a woven lattice or cut-out shapes.
  • Brush the tops of the pies with the egg wash then sprinkle them with sanding sugar (optional).

Knead and roll out the remaining dough, cutting 4 more circles. Then roll out 10 of the dough circles increasing their size by 1/3. Place these circles of dough in the ramekins, lightly pressing the dough up the sides of the ramekins. Set the remaining dough circles aside, you will use these for the tops of the pies.
  • Peel the apples and chop them into thin slices. Place the apple slices in a medium bowl. Add the brown sugar, vanilla, lemon juice, flour, salt, 2 tablespoons of melted butter, and the cinnamon. Stir to mix.
  • Divide the apple filling between the 10 pie crusts. Then place the remaining circles of dough on top of the pies, and use a fork to seal the pie crust in place.
  • Bake the pies for 25 minutes. Then remove from the oven and brush with 1 tablespoon of melted butter. Return the pies to the oven for 10 minutes letting them become golden brown. You can serve the pies warm or a room temperature. Add ice cream on top if you like.
