Another easy to make recipe (my favorite kind). I love good recipe, but I like them to be easy. Prep time includes standing time for apples and juice. All else can be mixed while waiting on the apples to stand in the juice.

3 cups dried apples
2 1/2 cups apple juice or 2 1/2 cups apple cider
your favorite recipe for pastry for a double-crust 9-inch pie
3/4 cup sugar
1 teaspoon cinnamon
2 tablespoons flour
1/4 teaspoon nutmeg
1/4 teaspoon salt

Steps:

  • Heat juice or cider to a boil and pour over dried apples; let stand for 1 hour.
  • Cook apples in juice for 10 to 15 minutes or till tender.
  • Stir remaining ingredients together.
  • Add to apples and mix well.
  • Put prepared pie crust in a 9-inch pie pan.
  • Pour prepared apple mixture into crust.
  • Top with 2nd crust.
  • Brush with milk and sprinkle with sugar.
  • Bake at 400° for 50 minutes or till done.

1/4 teaspoon ground allspice
2 tablespoons unsalted butter, cut into small pieces
1 large egg, beaten
1 14-ounce box refrigerated pie dough
All-purpose flour, for dusting
2 pounds crisp apples (such as Granny Smith or Gala)
1/2 cup golden raisins
1 cup pitted dried plums
1 cup dried figs
1/2 cup dried cherries
1/3 cup sugar
1 tablespoon instant tapioca
2 teaspoons orange-flavored liqueur or apple brandy
1 teaspoon finely grated lemon zest
1/2 teaspoon ground cinnamon
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F. Roll out 1 piece of dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate; chill until ready to use.
  • Make the filling: Peel and chop the apples. Pulse the apples, raisins, and dried plums, figs and cherries in a food processor until chunky. Transfer to a large bowl and toss with the sugar, tapioca, orange liqueur, lemon zest, cinnamon, salt and allspice. Spoon into the crust and dot with the butter.
  • Roll out the second piece of dough into a 12-inch round on a lightly floured surface. Cut into 1/2-inch-wide strips with a knife. Arrange half of the strips in parallel rows over the filling, about 1/2 inch apart. Working with 1 strip at a time, arrange the remaining strips perpendicular to the first ones, weaving the strips over and under, to form a lattice. Fold the overhanging dough under itself and crimp the edge with your fingers. Brush the lattice crust with the beaten egg.
  • Put the pie on a rimmed baking sheet and transfer to the oven; bake until the crust is golden and the filling is bubbly, about 1 hour. (Cover the edge with foil if it is browning too quickly.) Transfer to a rack and let cool until set, about 3 hours.

5 medium-sized golden delicious apples
1 teaspoon apple pie spice
3 tablespoons lemon juice
1 cup dried pineapple chunks
1 9-inch crust (recipe follows)
1/4 cup each banana chips, raisins and chopped papaya

Steps:

  • Remove the skin and core from four apples. Cut these apples into chunks, and place in food processor with the S-blade.
  • Add apple pie spice, lemon juice and pineapple chunks. Process until smooth.
  • Take the remaining apple and cut into small pieces to be placed on the bottom of the pie.
  • Once mixture is smooth, pour over chopped apples into pie shell, and top, if desired, with crushed banana chips, raisins and papaya.

  • Preheat oven to 350° with a rack in lowest position. Working in 2 batches, pulse apples in a food processor into pea-size pieces. Transfer to a large mixing bowl. Put cherries, cranberries, and raisins in food processor and whirl just until fruit starts to break up. Combine with apples.
  • Stir in currants, spices, salt, zests, sugars, cornstarch, and rum. Pour mixture into prepared pie pan and spread level.
  • Lay 1 dough strip horizontally on top edge of pie. Then lay 1 strip vertically on left edge of pie, with the strips meeting at the corner. Lay strip 3 of dough 1/2 in. below and parallel to first strip. Then lay strip 4 of dough 1/2 in. to the right and parallel to strip Continue, working from top to bottom and left to right, until lattice is complete. Trim excess dough flush with pan edge, then use floured hands to press edge of pie and seal strips to bottom edge.
  • Bake pie until golden brown and bubbling, 1 1/2 hours (you may need to put a drip pan under pie for last 30 minutes). Let cool to room temperature to serve.

  • For this fried apple pie recipe, start with 3 or 4 bags of dried apples and put them in a pot with enough water to just cover the apples. **Cook’s Tip: If you can’t find dried apples in your grocery store—and don’t buy the commercial ones in the aisle with all the dried fruit because they take forever to cook down and they are expensive—try these that I found online.
  • Add about 2 cups sugar. Turn heat on high and bring to a boil, then turn it down to a simmer and cook down until the apples are tender and juicy.
  • Remove the apples from the heat and let them cool while you’re getting the fried pie dough ready. **Cook’s Tip: Place some of the apples in another dish to help them cool faster.
  • For the dough, start with about 4 heaping cups of self-rising flour and add shortening and butter. **Cook’s Tip: I recommend White Lily flour because it’s lower in protein and gives you a more tender crust.
  • Stir ice water into the dough with a fork, scraping underneath the dough to mix in all the dry flour.
  • Dip both hands in flour then sprinkle a little flour on top of the fried pie dough, lift it up, and sprinkle a little more flour along the sides.
