BOURBON APPLE PIE

- Make the crust: Pulse the flour, granulated sugar, baking powder and salt in a food processor to combine. Add the shortening and pulse until the mixture looks like coarse meal. Add the butter and pulse until it is in pea-size pieces. Add the bourbon and pulse until just incorporated. Pulse in the ice water, 1 tablespoon at a time, until the dough holds together when pinched. Turn out the dough onto a large piece of plastic wrap and gather together, using the plastic wrap to help you. Divide into 2 pieces and gently pat each into a disk; wrap tightly in plastic wrap and refrigerate until firm, at least 1 hour and up to 24 hours.
- Make the filling: Peel the apples and slice about ¼ inch thick. Toss with the lemon juice and ¼ cup bourbon. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add half of the apples and sprinkle with half of the granulated sugar. Cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Reduce the heat to medium and cook until the apples soften, about 7 minutes. Transfer to a bowl. Add 2 more tablespoons butter to the skillet and repeat with the remaining apples and sugar. Add to the bowl and toss with the cinnamon and ginger. Let cool completely.
- Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Roll out the remaining disk of dough into a 12-inch round on a lightly floured surface. Transfer to a baking sheet, cover with plastic wrap and refrigerate until ready to use.
- Spoon the apple filling into the prepared pie crust. Drizzle with the remaining 1 tablespoon bourbon and dot with the remaining 1 tablespoon butter. Lay the dough round over the filling. Pinch the overhanging dough together and fold under itself; crimp the edge with your fingers. Cut a few slits in the top crust to allow steam to escape. Brush the crust with the beaten egg and sprinkle with coarse sugar. Refrigerate 1 hour.
- Put a baking sheet on the lowest oven rack; preheat to 400 degrees F. Bake the pie on the hot baking sheet until the crust is golden, 60 to 70 minutes. Transfer to a rack and let cool at least 2 hours.
BOURBON APPLE JAM
Steps:
- Prepare jars and lids as per proper canning procedures.
- Combine the water and lemon juice together in a large bowl. Peel and dice the apples, tossing the pieces into the water-lemon bath as you work to keep them from browning.
- Add the granulated sugar to the apple mixture, and stir in the cinnamon, cloves, and ginger. Cover and let the fruit macerate for at least 30 minutes on the counter or in the fridge overnight.
- Transfer the apple-sugar mixture to a large, non reactive pan, making sure to scrape all that luscious syrup out of the bowl. Bring the mixture to a bowl over medium heat, and reduce for 15-30 minutes. The mixture should be very thick with little liquid remaining. Carefully taste test - If too tart, add raw sugar to taste, starting with a half cup and increasing to 1 cup if needed.
- Stir in the salt and the bourbon, and boil on high for 3-5 minutes. Test for gel set and remove from heat.
- Transfer the apple jam to the prepared jars, leaving 1/4th inch headspace. Apply the lids and rings and process in a water bath for 10 minutes. Remove the jars to a folded kitchen towel and let them cool undisturbed overnight. Check for seals and store in a cool dark place. If any have not sealed, store in the fridge and eat first.
APPLE PIE JAM WITH BOURBON
Apple Pie Jam with Bourbon is a low-sugar cooked jam made with Pomona's Universal Pectin and adapted from Pomona's Apple Pie Jam recipe by Kim Pedley of Township Valley Farm in Browns Valley, California. Pomona's Universal Pectin contains no sugar or preservatives and jells reliably with low amounts of any sweetener. Kim says: "I made this Apple Pie Jam with Bourbon for gifts. I used a combination of apples (Honey Crisp, Opal, Green Dragon, and Pink Lady) for a great layered flavor."

- Before you begin, prepare calcium water.To do this, combine ½ teaspoon calcium powder (in the small packet in your box of Pomona's pectin) with ½ cup water in a small, clear jar with a lid. Shake well.Extra calcium water should be stored in the refrigerator for future use.
- Wash jars, lids, and bands. Place jars in canner, fill canner 2/3 full with water, bring to a boil. Turn off heat, cover, and keep jars in hot canner water until ready to use. Place lids in water in a small sauce pan; cover and heat to a low boil. Turn off heat and keep lids in hot water until ready to use.
- Peel, core, and chop all the apples except one. Put the chopped apples into a sauce pan with the water. Bring to a simmer and simmer covered, stirring and mashing occasionally, until you have fairly smooth apple sauce.
- Meanwhile, chop the final apple into small pieces and put into a separate small sauce pan with a little water and simmer for about 3 to 5 minutes until fork tender. Stir the apple chunks into the apple sauce. Remove from heat and measure out 4 cups of apple sauce and apple chunks.
- Put measured amount of cooked apple sauce with chunks into sauce pan.
- Add calcium water, lemon juice, lemon zest, cinnamon, nutmeg, and allspice, and mix well.
- Measure full amount of sugar into a bowl. Thoroughly mix pectin powder into sugar. Set aside.
- Bring fruit mixture to a full boil. Add pectin-sugar mixture, stirring vigorously for 1 to 2 minutes to dissolve the pectin.
- Add the Bourbon Whiskey and the vanilla extract now and stir well. Once the jam returns to a full boil, remove it from the heat.
- Fill hot jars to ¼" of top. Wipe rims clean. Screw on 2-piece lids. Put filled jars in boiling water to cover. Boil 10 minutes (add 1 minute more for every 1,000 ft. above sea level). Remove from water. Let jars cool. Check seals; lids should be sucked down. Eat within 1 year. Lasts 3 weeks once opened.
BOURBON APPLE PIE
Classic lattice-topped apple pie. Serve with vanilla ice cream and La Lechera for a twist on the ala mode version.

- Preheat oven to 400 degrees. Peel and core the apples. In a large bowl mix sugar, flour, cinnamon, nutmeg, ginger and apples. Toss to coat evenly.
- In a wok or large skillet over medium heat, melt butter and add apple mixture. Cook until apples start to soften and brown slightly, about 7-10 minutes. Reduce heat to low and add bourbon (you can use brandy instead). Simmer down to a light syrup, about 10 minutes. Remove from heat and add the orange zest.
- Put one pie crust into a 9" deep pie dish. Add filling. Slice the second pie crust into 1/2" strips. Lattice the top using the strips and using a basting brush coat lattice with egg wash (beaten egg plus 1 tablespoon of water). Sprinkle evenly with tablespoon of sugar.
- Bake at 400 degrees F for 10 minutes. Reduce heat to 350 degrees and bake for 50 more minutes. Keep a cookie sheet on the oven rack below to catch any spillage from the pie. Serve warm with ice cream and La Lechera Dulce de Leche.

BEST APPLE PIE JAM
A friend gave me this wonderful recipe, and oh my, it is so good. Just like a extra good apple pie filling, but in jam form. If you love apple pie, you are going to have to make this wonderful recipe. My husband who only likes strawberry jam, said, "this recipe was EXCELLENT!" It is excellent on English muffins, pancakes or toast. Even over Ice cream too!!

Steps:
- Measure apples in a measuring cup, now add in the same measuring cup water to fill up to the 4 cup line (with the apples in it).
- Add pectin and the butter and spices, lemon juice.
- Bring to a boil.
- Add sugars and bring back to a full rolling boil, boil 1 minute.
- Stir constantly.
- Remove from the heat.
- Skim off any foam.
- Ladle into hot jars leaving 1/4-inch headspace.
- Put on lids.
- Process in water bath 10 minutes.
