A quick & yummy way to get a healthy breakfast in. Made this on a whim one morning when I was craving apples.

- Smear peanut butter inside pita pockets.
- Sprinkle with apple pie spice and sugar.
- Add diced apples. Feel free to add more or less of the ingredients, to accomodate your taste.

- Place apple slices on microwaveable plate. Coat lightly with butter-flavored cooking spray. Sprinkle with pecans, sugar, cinnamon, and nutmeg. Microwave on High about 3 to 4 minutes, tossing occasionally, or until soft.
- Toast pita. Spoon apple mixture onto pita and top with a dollop of whipped topping.

- 1. Combine all the dip ingredients in a small pan except the cornstarch-water mixture. 2. Heat for a few minutes until it's boiling and has extracted juice from the apple. 3. Add cornstarch-water mixture to the "sauce" 4. Put back on the stove until boiling and the sauce has thickened. 5. You can serve this warm or chilled, with Cinnamon sugar pita chips

APPLE PIE BARS (CROATIAN PITA) - KITCHEN NOSTALGIA

- DOUGH: Combine flour, baking powder, egg, sugar and butter to make a dough. If the dough is too dry, add up to 1 Tbsp milk. Do not overwork the dough. Wrap it and cool in refrigerator for about 30 minutes.
- FILLING: Peel and grate apples. Mix with sugar and cinnamon. Adjust the sweetness to your taste.
- ASSEMBLE: Divide the dough in half. Roll out the dough with a rolling pin on a floured surface. Press one half of the dough into the bottom of the 9x13" baking pan and up the sides. Sprinkle with dry bread crumbs and spoon in apple filling. Cover with the top crust.
- Bake at 170 C (340 F) for about 45 minutes or until the crust is pale golden. Sprinkle with powdered sugar, cut into squares and serve.
