- In a large bowl, cream shortening and sugar until light and fluffy. Beat in the egg, milk and vanilla. Combine flour, cream of tartar, baking soda and salt; gradually add to creamed mixture. Divide in dough in half. Refrigerate for 2-3 hours or until easy to handle (dough will be soft). , Meanwhile, in a small saucepan, combine the filling ingredients. Cook over medium heat until apples are softened and mixture is thickened; cool. , On a lightly floured surface roll out each portion of dough to 1/8-in. thickness. Cut with a floured 2-1/2-in. apple cookie cutter. Place 2 in. apart on ungreased baking sheets. Spread with 2 teaspoons of filling to within 1/4 in. of edge. Top with another cutout seal edges. , Bake at 375° for 10-12 minutes or until lightly browned. Remove to wire racks to cool completely. Meanwhile, in a small bowl, combine 3 tablespoons water and 18 drops red food coloring. In another small bowl, combine remaining water and 6 drops green food coloring. Using a pastry brush, "paint" apples red with green leaves.

- Combine ingredients in small pot and heat over medium-low heat while whisking. Cook 7-8 minutes. You will notice when the caramel begins to thicken.
- Remove from heat and set aside.
- Once your apples are roughly chopped, put them in a bowl and add the sugar, spices and lemon juice. Toss them around to make sure they are evenly coated. Now in a large skillet, melt the butter over medium-high heat. Add the apples and cook stirring until the sugar dissolves and it begins to simmer, about 2 minutes. Cover it up, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.
- Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to get as much liquid as possible. Return the juices to the skillet, and simmer over medium heat until thickened and lightly caramelized, about 8-10 minutes.
- In a medium bowl, toss the apples with the reduced juice and spices. Set aside to cool completely. Chop into small piece once cool and return to bowl.
- In a large bowl, combine flour, sugar, salt, and spices. Whisk together. Grate in chilled butter and drizzle in ice cold water. Mix using a fork. You can also whiz together in a food processor.
- Shape into two disks, wrap in plastic and chill for 20 minutes.
- Crack an egg into a small bowl and add a tablespoon of cream them mix well and chill until ready to use for egg wash.
- Roll your pastry dough out to about 1/4" thick. One half of the dough is for the bases and the other half is for the lattice tops. You will probably want to chill the dough for the lattice tops until just before cutting the strips and arranging on top.
- Cut into circles.
- Brush with caramel.
- Add about 1 tablespoon of the apple pie filling to the center of each circle. Brush edge with egg wash.
- Arrange the lattice top and brush with egg wash again.
- Cut and remove excess with the same round cutter you used for the base.
- Sprinkle with sugar (and cinnamon if desired) and bake at 350F for about 20-25 minutes until golden brown.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a saucepan over medium heat. Add apples; toss until coated with butter. Stir in brown sugar, white sugar, lemon juice, 1 1/2 teaspoons cinnamon, 1/2 teaspoon vanilla extract, salt, nutmeg, allspice, and cloves; cook and stir until apples have softened and sugars have melted, about 5 minutes. - Mix the cream cheese and butter in the bowl of a stand mixer with a paddle attachment or use a large bowl and a hand mixer.
- Separate the egg and add the egg yolk along with the water to the batter. (Reserve the egg white to brush on top of the cookies before baking.)
- Add the flour and mix until all the flour is incorporated.
- Place the cookie dough on some parchment paper or aluminum foil and form it into the shape of a disc. Wrap it up in the parchment paper or foil and refrigerate until firm, at least 2 hours. You can keep it in the refrigerator for a few days or in the freezer for up to 3 months.
- Meanwhile, make the apple filling. Peel and chop the apples. Add the apples and the sugar to a skillet. Bring to a boil on medium high heat.
- Reduce to a simmer, and cook, covered, for about 10 minutes, until the apples are soft.
- Take off the heat and add the lemon juice and vanilla. You can also add some cinnamon. Cool.
- Store the apple filling in the refrigerator. If you want to make a large batch to have on hand, sterilize the glass jar and lid, add the filling to the jar, seal with the lids and place the jar with the apple filling in a pot with boiling water, covering the jars by at least 1 inch. Cook for 10 minutes. Lift the jars out of the pot and cool.
- Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
- When the cookie dough has chilled, roll out half of it on a well floured surface. Use a cookie or biscuit cutter or even an inverted cup/glass and press out as many circles as you can. My biscuit cutter was 3 inches, but you can make the circles even bigger, if you want.
- Take all the extra dough, scrunch it up and place in the refrigerator to chill while you are making the cookies. I usually place it in the freezer, so it chills faster. Just don't forget about it. You can use every last scrap of dough for cookies.
- Place about a heaping teaspoon or so of filling in the center of the circles. Fold the circle over the filling, pinch the seams closed with your fingers and then use a fork to make sure the cookies are sealed well. Make sure there are no air pockets in the cookies, or they might burst as they bake.
- Place the cookies on the prepared baking sheet.
- Use a fork to whisk up the egg white that you set aside earlier when making the dough. If you made the dough ahead of time and didn't save the egg white, just use a whole egg, whisk it up with a fork. Use a pastry brush to brush the egg white on top of the cookies. Sprinkle sugar on top of the cookies.
- Bake in the preheated oven for 22-30 minutes, depending on how thin you rolled out the dough and how big you made your cookies. The cookies should be lightly golden.
- Repeat with the remaining cookie dough and the cookie dough scraps.

- Preheat oven to 350 degrees. Spray the wells of a standard size muffin tin with nonstick spray. Roll out dough onto a lightly floured surface, and cut out circles about 2 inches in diameter. Gather and re-roll unused dough and cut additional circles. I used the rim of a small plastic cup. Place the circles in the bottom of each muffin well.
- Add the apples, sugar, cinnamon, lemon juice, and cornstarch to a medium saucepan. Cook on medium heat, stirring occasionally for about 5-10 minutes until the apples have softened slightly and the juices begin to thicken. Remove from heat.
- Add about one tablespoon of the apple filling on top of each circle of pie dough.
- In a medium bowl, mix flour, brown sugar, granulated sugar, oats, and salt. Add melted butter and mix until well incorporated.
- Add a heaping tablespoon of the streusel topping to each muffin well, and gently pat it down over the apples.
- Bake for 17-19 minutes. **Allow the apple pie cookies to cool in the muffin tin for at least 10-15 minutes before removing.** I like to use a dull knife to gently remove them from the tin. Cool on a wire rack.
