Steps:
- To Make Crust: In a large bowl, stir together 1 1/4 cup flour and salt. Cut in shortening until coarse crumbs form. Sprinkle 1 tablespoon of water at a time to dough until it is moist enough to form into a ball. On a lightly floured surface, use hands to slightly flatten dough. Roll dough into a circle about 12 inches in diameter.
- Preheat oven to 375 degrees F (190 degrees C). Line a 9 inch deep dish pie pan with a piece of aluminum foil; it should cover bottom and sides of pan. Lightly flour the foil. Press the dough into the pan.
- To Make Filling: In a large bowl, stir together 2 tablespoons flour, sugar, cinnamon and nutmeg. Gently toss apples, raisins and walnuts with cinnamon mixture until coated. Fill the crust with the apple mixture.
- Bake in preheated oven for 1 hour. Remove from oven and let cool.
- To Make Icing: In a small bowl, mix together confectioners' sugar, vanilla and milk. Drizzle over top of cooled pie.

APPLE PIE BAKED IN A BAG
This is a pie made in Southern, Wis., by a company called the Elegant Farmer. It's owned by Dan and Karen, and she found the recipe in Texas. They've been making them for about 20 years, selling them at their general store and bakery near their farm where they have pick-your-own-apples and pumpkins. They also sell all over the country, including Texas, so the pie has gone full circle. The apples they use in their pies come from Michigan and the crust is not your typical pie dough - it's sort of cookie-like but has lard in it (except the version they make for Whole Foods, which uses vegetable shortening). The brown paper bag helps cook the apples long enough without over baking and over browning the crust, plus they stay juicy. Once the apples are cooked, a circle is cut out of the bag on top to let the crust brown for a few minutes and get crisp. It's then sold right in the grease stained brown paper bag!

Steps:
- Make the Crust: In a food processor combine the flour, sugar, and salt. Add the butter and pulse until pea-sized pieces appear. Add the water and pulse briefly¿it will still look crumbly. Transfer the crumbs to 2 pieces of parchment paper or foil and form into 2 disks. Wrap the discs with plastic wrap and refrigerate overnight.
- On a work surface lightly dusted with flour, roll out 1 disk to a circle about 1/8-inch thick. Keep rolling until the circle is at least 2 inches larger than your pan. Line the pie pan with the dough, letting the edge hang over a bit. Roll the second disk, place it on a sheet pan and chill it until you're ready to build your pie.
- Arrange a rack in the center of the oven and preheat to 375 degrees F.
- Make the Filling: In a medium bowl, toss the apple slices, sugar, cornstarch, lemon juice, vanilla, cinnamon, salt, and nutmeg together. Transfer to the pie shell and dot with the butter. Brush the overhanging edges of the dough with water. Carefully cover with the rolled-out top crust and pinch the edges together, turning them under all around to make a thick edge. To decorate the rim, press it all around with the back of a fork, or just pinch it to seal. With a scissors, cut a few V-vents in the center.
- Slide the pie into the brown paper bag and fold the top down. Staple bag shut and place it on a sheet pan. Bake for 1 hour.
- Remove the pie from the oven and cut a large circle in top of the bag. Return to the oven and bake until the crust is golden brown, about 15 minutes more.
- Let the pie cool at least 30 minutes before serving. Serve warm or at room temperature.

Steps:
- Heat oven to 375%.
- Cut off the top of 4 apples off and discard. Remove the inside of each apple with a spoon very carefully, as to not puncture the peel.
- Remove skin from 2 additional apples and slice very thinly. These apple pieces will give you filling needed to fill the four apples you are baking.
- Mix sliced apples with sugars and cinnamon in a bowl. If you prefer more or less cinnamon and sugar, make adjustments as desired.
- Scoop sliced apples into hollow apples.
- Roll out pie crust and slice into 1/4 inch strips.
- (You can also add a strip of pastry inside the top of the apple almost like a liner to add a little more texture/sweetness to the pie. ).
- Cover the top of the apple in a lattice pattern with pie crust strips.
- Place apples in an 8×8 pan. Add just enough water to the cover the bottom of the pan. Cover with foil and bake for 20-25 minutes.
- Remove foil and bake for an additional 20 minutes or until crust is golden brown and sliced apples are soft.

Steps:
- Prepare the pie crust, including allowing it to chill for at least 2 hours. I usually prepare it the night before and leave it in the refrigerator until the next day when it's time to begin the apples. The colder the pie crust, the better.
- In a very small bowl, mix the cornstarch and warm water together until smooth, creamy, and the cornstarch has dissolved. Set aside. Peel and dice 1 apple. In a medium saucepan over medium heat, cook the apple pieces, cornstarch/water mixture, cinnamon, and sugar. Stir constantly for 5 minutes. Switch to low heat and allow to simmer for 5 minutes. Remove from heat, stir in the vanilla, and allow to cool off for 20 minutes.
- On a floured work surface, roll out the pie dough. Turn the dough about a quarter turn after every few rolls until you have a circle 10-11 inches in diameter. Cut into fourths, as if you were cutting a pizza. (Pizza cutter works best here!) Then, cut each quarter into 1/4-inch wide strips. I like to chill the strips as I cut out the apples. I suggest putting them on a large cutting board and placing in the fridge. Remember, you always want your pie dough to be COLD.
- Preheat oven to 375°F (191°C).
- Slice off the tops of the 4 remaining apples. Using a spoon (or melon baller), dig out the core. It doesn't have to look perfect. Spoon the prepared apple filling into the cored-out apples. You may have some filling leftover - it's great warmed up over vanilla ice cream. Lay 3-4 strips of the pie dough on top of the apple. Then, working with one new strip at a time, alternate weaving it over and under the dough strips already in place. Repeat until the top of the apple has been covered in this lattice style crust. Using a sharp paring knife, trim excess pie crust around the edges. Repeat with remaining apples and pie dough strips.
- Place apples into an 8-inch or 9-inch square baking pan or pie dish- really any size baking pan works. In a small dish, whisk the egg and milk together. Lightly brush the tops with egg wash. I sprinkled a little bit of cinnamon on top of the egg wash before going into the oven- this is optional. Bake for 25-30 minutes or until the crust is browned and the filling is bubbly.
- If desired, drizzle each with salted caramel. We ate ours with a knife and fork and vanilla ice cream on the side. These apples are best enjoyed immediately. Store any leftovers in the refrigerator for up to 2 days.

- To make the filling: Peel and chop 2 of the apples, then add to a saucepan along with the brown sugar, vegan butter, cinnamon, and nutmeg. Stir over medium heat until the apples are tender, 3 to 5 minutes.
- To make the pies: Cut a thin slice off the top of 6 apples. Then use a melon baller, or spoon to carefully scoop out all of the core and seeds. Make sure to leave a thick enough wall of apple, so that once baked, the apple is still strong and doesn’t collapse.
- Pack the prepared filling into the apples. You might have some leftover apple filling, and if you do it goes wonderfully on top of oatmeal!

- Make the Pastry Dough: In a large bowl, whisk together the flour and salt. Using a pastry blender or two knives, cut in the shortening until the mixture is crumbly. Gradually add the ice water, tossing the mixture with a fork, until the dough forms a cohesive mass. If the dough needs more water to come together, add it 1 teaspoon at a time. Divide the dough into eight equal portions, wrap each in plastic wrap and refrigerate for at least 30 minutes.
- Preheat oven to 350 degrees F. In a small bowl, stir together the granulated sugar and cinnamon; set aside.
- Assemble the Apples: Roll each portion of dough on a lightly floured work surface into a 7-inch square. Place an apple in the center of each square. Place 1 teaspoon of butter and 1 teaspoon of the cinnamon-sugar mixture in the center of each apple.
- Gently bring up the corners of the pastry to the center of each apple; pinch the edges to seal. Place the pastry-encased apples in a greased 9x13-inch baking dish. Sprinkle with the remaining cinnamon-sugar mixture.

- Let pie crust stand at room temperature according to package directions. Meanwhile, cut the top 1/3 off of the apples. Using a melon baller or small spoon scoop out the flesh of each apple, including top, leaving a 1/4-inch-thick shell. Discard tops, cores, and seeds. Chop the remaining apple flesh into small pieces.* In a small saucepan combine the chopped apple and the next four ingredients (through apple pie spice). Cook and stir over medium heat 3 to 5 minutes or until apples soften and liquid is thick and bubbly. Divide filling among apple shells.
- Preheat oven to 400°F. Line a 15x10-inch pan with foil; coat with nonstick cooking spray. On a lightly floured surface, unroll pie crust. Roll to a 10-inch circle. Using a 3 1/2-inch round cookie cutter, cut 4 circles from pie crust. Place pastry circles over the top of the filled apples. Cut slits in pastry to allow steam to escape. If desired, cut small shapes from crust trimmings. Whisk together egg and the water. Brush egg mixture over pastry; attach any cutouts as desired. Brush with remaining egg mixture. Sprinkle with coarse sugar. Place apples in prepared baking pan.
- Bake 20 to 25 minutes or until apple is soft, filling is bubbly, and crust is light golden brown. Cool slightly and drizzle with Powdered Sugar Icing.

- Cut the Grannysmith apple and 1 Honeycrisp apple into a small dice (about 2½ cups) and place in a medium-sized bowl. Add 3 tablespoons brown sugar, granulated sugar, salt, cinnamon, and nutmeg, stir to combine. Stir in the lemon juice.
- In a small bowl, combine the oats, pecans, remaining tablespoon brown sugar, and flour. Add the pieces of butter and incorporate them with your hands until a crumble forms. Gently fold the crumble into the apple mixture until just incorporated.
- Slice off the very tops of the remaining 7 Honeycrisp apples and, using a melon baller (or spoon and a paring knife), hollow out the insides of the apples, being sure to remove the core and seeds. Using the very tip of the paring knife, cut a horizontal slit around the circumference of the apple, just barely piercing the skin, being careful not to slice through the apple’s wall (this acts as a steam vent for the apples while baking). Divide the apple filling evenly amongst the apples.
- Preheat oven to 375° F. Remove the piecrust from the refrigerator and cut into small strips (just longer than the width of each apple). Weave the strips into a lattice pattern atop each apple. Place the apples in a baking dish.
