1/4 cup firm butter or margarine
3 tablespoons packed brown sugar
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon ground cinnamon
1 cup Fiber One™ original bran cereal
1 cup milk
1 3/4 cups Gold Medal™ all-purpose flour
2/3 cup granulated sugar
1/4 cup vegetable oil
3 teaspoons baking powder
1/2 teaspoon salt
4 egg whites or 2 eggs
1 medium all-purpose apple (Gala, Haralson, McIntosh), peeled and chopped

Steps:

  • Heat oven to 375°F. Grease bottom and sides of 9-inch square pan with shortening and lightly flour, or spray with baking spray with flour. In small bowl, mix streusel ingredients; set aside.
  • Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor). In large bowl, stir together cereal and milk; let stand 5 minutes. Stir in remaining coffee cake ingredients except apple; beat 30 seconds with spoon. Gently stir in apple. Spread half the batter in pan; sprinkle streusel on top. Spoon remaining batter over streusel; spread to cover.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Serve warm.

¼ cup butter, softened
¾ cup brown sugar
1 large egg

  • Stir 1 cup flour, 3/4 teaspoon cinnamon, baking soda, and salt together in a bowl; add to the butter mixture and beat to combine into a batter. Fold apples into the batter. Pour batter into prepared baking dish.
  • Mix 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons butter, and 1/2 teaspoon cinnamon together in a bowl using a fork to achieve a crumbly consistency; sprinkle over the top of the batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

⅓ cup white sugar
⅓ cup packed light brown sugar
1 teaspoon cinnamon

3 tablespoons melted butter

1 teaspoon baking powder
¾ teaspoon baking soda
½ cup butter
1 cup white sugar

1 cup sour cream or creme fraiche

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter an 8-inch by 10-inch baking dish.
  • Mix pecans, 1/3 cup white sugar, brown sugar, cinnamon, salt, and melted butter thoroughly in a mixing bowl until all components are coated with butter, 3 to 4 minutes.
  • In a separate bowl, whisk together flour, salt, baking powder, and baking soda.
  • In another bowl, mix together butter and 1 cup sugar with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla and sour cream; whisk together. Add flour mixture to wet ingredients; whisk until flour disappears (do not over mix).
  • Spread one half of the batter evenly into the bottom of the prepared baking dish. Scatter one half of the crumb mixture evenly over the top of the batter. Top with the rest of the batter and spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Very gently press crumbs into batter. Bake in preheated oven until a bamboo skewer comes out clean, 30 to 35 minutes. Let cool slightly before serving.

3/4 cup dark brown sugar
3 Tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees. Grease a 13x9 inch pan.
  • Place the butter and sugar in a large bowl, beat until well incorporated. Add the eggs and vanilla, beat until light and fluffy.
  • Sift the flour,baking soda, baking powder and salt together. Add the dry ingredients alternately with the sour cream, (Example...add 1/3 of the dry ingredients, beat until just incorporated, add 1/2 the sour cream, beat until just incorporated. Add 1/3 more flour, beat until just incorporated, add the last half of the sour cream, beat until just incorporated, add the last 1/3 of the flour, beat until just incorporated.)

Steps:

  • In a bowl, cream butter, shortening and sugar. Add eggs, one at a time, beating well after each. Combine the dry ingredients; add to creamed mixture alternately with buttermilk and mix well. Spread half into a greased 13x9-in. baking dish. Top with apples. Carefully spread remaining batter over apples., For topping, combine flour, sugar and cinnamon. 2 teaspoons unsalted butter
2 cups all-purpose flour
½ teaspoon fine sea salt
1 teaspoon baking powder
¾ teaspoon baking soda
1 ½ cups finely chopped toasted walnuts
⅓ cup packed light brown sugar
⅓ cup white sugar
¼ teaspoon salt
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
½ cup unsalted butter, at room temperature
1 cup white sugar
2 large eggs
1 ½ teaspoons vanilla extract
1 cup plain yogurt
2 each Honeycrisp apples

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
  • Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
  • Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
  • Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
  • Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

  • Mix wet ingredients – In a large measuring cup or bowl, whisk together wet ingredients: oil, sugar, eggs, vanilla and almond milk until smooth. Pour wet ingredients into dry and stir until smooth. Stir in pecans. Pour batter into the pan.
  • Trim a thin slice off of the top and bottom of the apples. Core and peel apples. Cut into 24 slices. To do this easily, cut the apple into eights, then each piece into equal thirds. Arrange apple slices in a circular overlapping pattern starting at the outside edge of the pan. Slightly overlap apple ends and tip the bottom of the slices (the thinner end) a bit down into the batter. This will allow you to get more apples into the batter. Continue around the pan until you get to the center. For the small center, cut a slice of apple into smaller pieces and fit them in as best you can. You may not need all of the apple slices. If using, sprinkle the demerara sugar over the top to give the cake top a sparkle (optional).
  • Bake cake at 350º for approximately 40-45 minutes. Timing will depend on your ovens. When done a toothpick inserted into the center should come out clean but moist. Remove cake from the oven and allow to cool for 15 minutes. Run a thin bladed knife around the inside edge of the pan to free the cake, then pop the spring and remove the cake. Cool on a wire rack or serve warm. If serving later after cooling, wrap well and keep at room temperature.
