Simple, no-bake chewy apple peanut butter granola bars! Perfect as a snack or even for breakfast! Vegan and gluten free options!

Provided by Elena Tomasi

Categories     Breakfast/Snack

Time 20m

Number Of Ingredients 8

1 cup (100 g) pecans (roughly chopped)
1½ cup (150 g) rolled oats (or gluten free rolled oats)
1 cup (140 g) medjool dates (pitted)
¼ cup (75 g) honey (or agave nectar for vegan)

1 cup (100 g) dried apples
1 teaspoon vanilla extract
1 teaspoon cinnamon powder

Steps:

  • Line a 8x8 inches (20x20 cm) baking pan with aluminum foil or parchment paper, leaving the foil to extend up the sides. This will make it easier to remove the granola bars from the pan. Brush lightly with oil to prevent sticking.

  • Transfer to a large bowl.
  • Process the dates in a food processor until they become a ball.
  • Add the cinnamon powder, crushed dates and chopped dried apples to the oats mixture.
  • In a small saucepan over low heat, warm the vanilla, honey, and peanut butter until runny.
  • Pour over the dry mixture and mix well until everything is evenly coated and the dates are disperse throughout.
  • Transfer the mixture to the baking pan and press down with a spatula or with your wet hands.
  • Cover the baking pan with aluminum foil and put it in the fridge for at least 2 hours (better overnight).
  • Remove the bars from the baking pan and cut into 12 even bars.
  • Store the chewy apple peanut butter granola bars in an airtight container in the refrigerator for up to 2 weeks.

APPLE PEANUT BUTTER SNACK BARS

APPLE PEANUT BUTTER SNACK BARS image

Number Of Ingredients 9

2 cups rolled oats
1/4 cup whole wheat pastry flour
1/4 teaspoon baking powder
1/4 teaspoon sea salt
2 medium apples, peeled and chopped (or also sub 1/2-3/4 cup applesauce)
1 tablespoon cinnamon
3/4 cup peanut butter, melted
1 teaspoon vanilla extract
1/3 cup honey

Steps:

  • Preheat oven to 350. In a large bowl, combine oats, flour, 1/2 tablespoon cinnamon, salt and baking powder and mix. To soften apples, mix them with 1/2 tablespoon of cinnamon and microwave for 2-3 minutes, or pan roast on medium heat for 10 minutes. Once apples are soft, mash them with a fork making sure to leave some large chunks. Add apples into oat mix. Melt peanut butter and stir vanilla into peanut butter. Add peanut butter to apples and oats. Mix with wooden spoon until all ingredients are moistened. You can even work the dough with your hands to get it all together. Add honey one tablespoon at a time, mixing until everything is combined. Mix with you hands before adding additional honey, but add it one tablespoon at a time if needed. You want the dough to be sticky, but not too wet. Spray a springform pan or pie plate with non-stick spray and pour in oat dough. Spread it evenly in the pan and give the top a quick spray with non-stick spray - it will help hold it together. Bake at 350 for 18-20 minutes. Let cool for 15 minutes before cutting. Slice into wedges and top with more melted peanut butter.

OATMEAL, APPLE AND PEANUT BUTTER BARS

Oatmeal, Apple and Peanut Butter Bars image

I have had this recipe for years and recently started making it after not finding any other oatmeal bars that were a nice combination of good nutrition and good flavor. Not overly sweet and fattening like a cookie, but not so ultra healthy they aren't appealing to kids. You can adapt the recipe, adding any dried fruit you like, use part whole wheat, add some ground flax, my 3 year old likes adding some mini chocolate chips on top. Can't argue with that! Great for breakfast or a afternoon snack.

APPLE PEANUT BUTTER BARS

Apple Peanut Butter Bars image

Tart apples dipped in peanut butter have always been one of my favorite snacks. These peanut butter apple bars are an ode to my childhood favorite granola bars and my never-ending craving for apples and PB!

Provided by Dan Langan

Categories     dessert

Time 2h5m

Yield 12 bars

Number Of Ingredients 16

Nonstick cooking spray
5 tablespoons unsalted butter
1 medium tart apple, such as Granny Smith or Gala, cored and cut into 1/4-inch cubes (no need to peel)
1/3 cup plus 1 tablespoon granulated sugar
1 1/2 cups rolled oats
1/4 cup all-purpose flour
3/4 teaspoon fine salt
3/4 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/3 cup lightly packed light brown sugar
1 tablespoon pure vanilla extract
1/2 cup your favorite peanut butter
1 large egg, at room temperature
1 cup dried baked apple chips, broken into small pieces
1/4 cup white chocolate chips or semisweet chocolate chips
1/3 cup dried baked apple chips, broken into small pieces

Steps:

  • Make the bars: Preheat your oven to 350 degrees F with a rack in the center. Spray an 8-inch square baking pan with nonstick spray, line the bottom with parchment paper, then spray the parchment.
  • Melt the butter in a medium skillet and then pour into a medium heatproof bowl, reserving about 1 tablespoon of the butter in the skillet. Add the apples and 1 tablespoon of the granulated sugar to the skillet, toss and cook over medium heat until the apples are softened and slightly shrunken and most of the juice has evaporated, 3 to 5 minutes.
  • While the apples cook, whisk together the oats, flour, salt, cinnamon, and baking soda in a medium bowl and set aside.
  • In the medium heatproof bowl, stir the brown sugar, remaining 1/3 cup granulated sugar, peanut butter and vanilla into the melted butter. Add the egg and mix well to combine. Stir in the dry ingredients, mixing well, and then stir in the cooked apples and apple chips. The dough will be stiff.
  • Spread the dough into the prepared baking pan and smooth the top. Bake for 40 to 45 minutes, until evenly deep golden brown and the center feels firm to the touch. Place the pan on a wire rack and cool completely.
  • Finish the bars: Remove the cooled bar from the pan. Melt the white chocolate chips in the microwave in a small microwaveable bowl in 8 second increments, stirring well after each until melted, about 30 seconds. Transfer to a sandwich bag, snip off a small opening at the tip and drizzle the white chocolate over the surface of the baked bar. Sprinkle with the apple chip pieces. Cut in half and then cut each half into 6 bars. Store covered at room temperature for up to 4 days.

Category Recipe Roundup
  • Peanut Butter Balls. Let’s get things started with a touch of decadence, which is precisely what these peanut butter balls are. All you’ll need to make them is peanut butter, regular butter, powdered sugar, crushed graham crackers, chocolate chips, and shortening.
  • Ants on a Log. Although you can use carrots, cucumbers, bananas, and other fruits and veggies instead of celery, for traditional ants on a log, all you’ll need is celery (log), peanut butter (filling), and raisins (ants).
  • Lunch Lady Peanut Butter Bars. If you were lucky, you went to a school with a lunchroom that served these thick, soft squares of peanut butter and chocolate goodness.
  • Peanut Butter Snack Cake. There’s just something about peanut butter that makes it the ideal complement for chocolate, so I’m warning you now: This is not the last peanut butter and chocolate recipe on this list.
  • Peanut Butter Cups. These are less healthy, but if you love Resee’s Peanut Butter Cups, you’ll want to hang onto this recipe, anyway. With it, you can make as many of your own peanut butter cups as you like!
  • Peanut Butter Toast. All you’ll need for peanut butter toast is bread, some peanut butter, and a toaster (or equivalent). That doesn’t mean your breakfasts will be boring, though.
  • Peanut Butter Granola Bars. Nothing walks that fine line between healthy and sweet quite like granola bars, and with cinnamon, peanut butter, honey, and more, these homemade bars are better than most.
  • Dark Chocolate Peanut Butter Bark. Of all the snacks on this list, this one is easily the most beautiful. The whirls and swirls of chocolate and peanut butter almost make it look like a work of art.
  • Peanut Butter Cookies. These homemade cookies are soft, crumbly, and full of peanut butter yumminess. If your mom or grandma was a fan of peanut butter cookies, you’ll probably recognize these as being similar or identical to those from your childhood, complete with fork cross lines in them.
  • Apple and Peanut Butter Granola Snack. If you’re looking for a quick, healthy snack that your kids – and everyone else in the house – will love, look no further than these apple and peanut butter granola snacks.
