APPLE AND SAUSAGE OVEN PANCAKE

Steps:
- Heat oven to 350°F. Spread apple slices evenly over bottom of ungreased 13x9-inch pan. In 1-quart saucepan, heat 1/2 cup brown sugar, the butter and syrup over low heat, stirring occasionally, until melted. Pour syrup mixture over apples.
- In 10-inch skillet, cook sausage over medium heat, stirring occasionally, until no longer pink; drain. Sprinkle sausage evenly over apple-syrup mixture.
- In small bowl, stir remaining ingredients except additional syrup until blended. Carefully pour over sausage.
- Bake 30 to 35 minutes or until top springs back when touched in center. Cut into 3-inch squares; turn each square upside down onto plate. Serve immediately with additional syrup.

APPLE SAUSAGE PANCAKES FOR TWO WITH APPLE CIDER SYRUP

- Heat a dry large skillet. Once hot, add the sausage and cook until no longer pink, about 3-4 minutes. Transfer to a plate or bowl lined with a paper towel and remove as much grease as possible. Crumble the sausage into tiny pieces.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In a large measuring cup, whisk together the egg, milk, and oil/butter.
- Gradually pour the wet mixture into the dry ingredients while whisking until everything is moistened (do not overmix - lumps are ok but there should be no pockets of flour). Stir in the sausage and apple. Let the batter rest for 5 minutes.
- Optional: If you're not serving the pancakes immediately after cooking, preheat the oven to 200F. They will get cold quickly if you make them all before eating.
- Heat a dry small non-stick skillet large enough to flip one pancake. If your skillet is not non-stick and/or you want extra butter flavor, melt 1/4 tablespoon butter. You can use the rest of the butter for serving.
- If you're using a dry skillet, add a few drop of water to make sure your pan is hot enough (they should sizzle then evaporate quickly). If you're using butter, butter should be melted and hot. Once hot, pour in 1/4 cup of batter, making sure it's no more than 1/4 inch thick.
- Cook until bubbles form on top and edges are set, about 1-2 minutes. Flip and cook the other side until brown, about 1 more minute.
- Remove and place on a cooling rack. Repeat with the remaining batter. You may need to adjust your heat if your pancakes are getting too dark.
- For the syrup: In a small saucepan, whisk together the cider, sugar, cornstarch, lemon juice, cinnamon, nutmeg, and clove. Bring to a boil then cook until thickened, stirring often, about 2-5 minutes. Remove from the heat and stir in butter until melted. Serve warm with pancakes.
- If pancakes are cold, warm in the oven for 5 minutes. Serve with syrup and butter. Freeze any leftovers in a freezer-safe plastic bag.

- CIDER SYRUP: In medium saucepan, combine sugar, cornstarch and pumpkin pie spice; stir in apple cider and lemon juice.
- Cook, stirring constantly, until mixture thickens and boils for 1 minute.
- Stir in butter. Reduce heat just to keep syrup warm while making pancakes.
- Heat griddle.
- PANCAKES: In small bowl, beat egg on high speed until thick and lemon colored, about 5 minutes.
- Stir in pancake mix, milk, oil and cinnamon.
- Fold in apples and sausage.
- Grease griddle lightly before making each batch.
- Pour batter from 1/4 cup measuring cup onto hot griddle. Bake until bubbles appear, about 2 minutes. Flip and cook another 2 minutes.
- Serve with hot Cider Syrup.

- Preheat oven to 400 degrees.
- In an oven safe skillet cook pork sausages until done.
- Remove, slice thin and pour off all the fat except 1 or 2 T.
- Mix together the eggs, milk and oil Add flour, 1/2 t.
- apple pie spice, salt and sausages.
- (some folks put the sausages in the apple syrup) Pour into hot skillet and bake in the oven for 15 minutes.
- Poke with a fork and bake for another 5 minutes.
- You want your pancake golden brown.
- Sauce------------------.
- Combine brown sugar, cornstarch and the remaining apple pie spice in a medium saucepan.
- Heat over medium high and add cider or juice, lemon juice.
- Stir well and cook until thick and bubbly.
- Add the apples (and sausage if reserving for sauce) and cook for 5 minutes more.
- Cut pancakes, plate up and serve with sauce.

APPLE PANCAKE

- Preheat the oven to 450 degrees F.
- In an 8-inch nonstick skillet over low heat, combine the brown sugar, maple syrup, butter, 3/4 teaspoon cinnamon and a pinch kosher salt. Melt together and whisk to combine. Turn the heat up to medium and bring the mixture to a boil. Allow to boil vigorously for 2 to 3 minutes. Carefully add the apples and toss around until the apples are fully coated in the caramel. Reduce the heat to low and allow to bubble for 3 to 4 minutes, or until the apples begin to soften and appear translucent. Place the skillet onto a parchment-lined baking sheet (to catch any bubbled-over caramel) and bake for 5 minutes while you prepare the batter.
- In a large 8-cup liquid measure or large mixing bowl, beat the eggs and granulated sugar until frothy. Add the buttermilk, flour, vanilla, 1/2 teaspoon cinnamon, 1/4 teaspoon kosher salt and the nutmeg if using. Whisk to combine until no longer lumpy.
- Open the oven and carefully remove the pan. Pour the batter into the skillet over the apples, swirling around the perimeter and ending in the center. (Beginning on the sides and working inward gives the pancake better structure instead of just pouring all of the batter in the middle. This will also ensure that the pancake "souffles" evenly). Place back into the oven to bake for 18 to 20 minutes, or until the sides have risen and the edges are dark. Remove from the oven and allow to settle for a minute or two. Carefully invert on a plate. Sprinkle with flaky salt and serve immediately.
