APPLE CRISP PANCAKES
Apple crisp and pancakes rolled into one. Diced apples add chunky goodness to the Bisquick® batter and then before flipping, the pancakes get topped with a brown sugar-oatmeal streusel.

- In medium bowl, mix brown sugar, flour, oats, cinnamon and nutmeg. Cut in butter using pastry blender or fork until mixture is crumbly. Set aside.
- In large bowl, stir all pancake ingredients until well blended. Heat nonstick griddle to 350°F. or 12-inch skillet over medium-high heat. (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush lightly with vegetable oil or spray with cooking spray before heating to help prevent streusel from sticking to griddle.
- For each pancake, pour 1/4 cupful batter onto hot griddle. Sprinkle each pancake evenly with scant 2 tablespoons and Streusel mixture. Cook 2 to 3 minutes or until bubbly on top and dry around edges. Turn; cook other side until light golden brown around edges about 1 minute to 1 minute 30 seconds. Scrape off griddle between batches of pancakes if necessary.
- To serve, serve pancakes Streusel side up and top as desired using any of the toppings listed.

APPLE BARS WITH CRUMB TOPPING
A perfect fall dessert, these Apple Bars have sweet caramelized apples layered on top of a cookie crust and then sprinkled with a buttery crumb topping.

Steps:
- Peel and core the apples and cut into a 1/2-inch dice.
- Melt the butter in a large sauté pan over medium heat. Add the apples and cook until they are soft, about 8 minutes.
- Add the sugar, lemon juice, flour and cinnamon to the apples and stir to combine.
- Cook until the mixture starts to bubble, then turn the heat to low and cook, stirring constantly, for 3 minutes.
- Remove to a bowl to cool while you prepare the crust.
- Line a 13×9-inch baking dish with foil or parchment paper and lightly spray with nonstick cooking spray.
- In a bowl, whisk together the flour, baking powder and salt.
- In a stand mixer, beat the butter and sugar together unit light and fluffy. Mix in the egg, then add in the flour mixture and mix just until combined.
- Press the mixture evenly into the bottom of the prepared pan and up the sides 1/4-inch. Set the pan aside.
- Preheat the oven to 350ºF.
- In a stand mixer, mix together the sugar, flour and salt. Add the butter and continue to mix until the mixture is crumbly and pieces of butter are very small. You can also do this by hand with a pastry cutter.
- Add the walnuts and stir to combine.
- Spread the apple mixture evenly over the crust, leaving a 3/4-inch border around the sides.
- Sprinkle the crumb topping evenly over the filling.
- Bake in the preheated oven until the top is golden brown, about 35 minutes.
- Cool completely, then remove from the pan and cut into bars.

APPLE CRUMBLE PANCAKES
This is a recipe I worked on after having the Washington Apple Crisp pancakes from IHOP. I use a 1/2 cup ladle to pour out the batter and get five pancakes. You can freeze the leftover streusel topping.

Steps:
- For the apples:.
- Melt butter in sauté pan over medium heat for 6-8 minutes or until light golden brown in color.
- Meanwhile, in a medium bowl, add together the apples, lemon, vanilla, sugar, and cinnamon. Mix well.
- When butter is ready, add apple mixture to the pan and cook, covered, for 5-10 minutes or until caramelized in color and softened.
- Keep warm on a burner on low setting.
- For the Streusel:.
- While the apples are cooking, prepare the streusel.
- Add all ingredients into a bowl.
- Blend with fork until crumbly.
- Place 2-4 tablespoons of mixture over top of the apple compote. Simmer, uncovered on stove while cooking pancakes.
- For the Pancakes:.
- In a medium bowl, whip egg.
- Add butter and milk and whip together.
- Add the dry ingredients.
- Mix well.
- Over medium heat, in a nonstick pan that has been buttered, place 1/4 cup batter.
- Cook until edges and top look dry and slightly bubbly, turn and cook for another few minutes until golden brown.
- Place pancakes on plate, top with apple compote and streusel topping.

APPLE SYRUP
Steps:
- In a large pot, bring the cider to a boil over medium-high heat. Boil the cider until it has reduced to a thin syrup (you should have about 1/2 cup), approximately 25 minutes. Cool and store at room temperature.
APPLE PANCAKE BARS WITH BROWN BUTTER CRUMBLE TOPPING AND APPLE SYRUP
Steps:
- For the brown butter crumble topping: Put the butter in a small saucepan and cook over medium heat until amber brown, 3 to 4 minutes.
- Whisk together the flour, granulated sugar, brown sugar, cinnamon, nutmeg and salt in a medium bowl. Stir in the butter. Refrigerate the mixture for 15 minutes, then squeeze it to make crumbles.
- For the apple pancake bars: Preheat the oven to 375 degrees F. Line a 9-by-13-inch baking dish with a parchment paper overhang on the long ends and spray with nonstick baking spray.
- Whisk together the flour, granulated sugar, baking powder, baking soda and salt in a large bowl. Whisk together the buttermilk, butter, vanilla and eggs in a medium bowl until smooth. Add the wet mixture to the dry along with the granola, lemon zest and juice and apples and mix until just combined. Lumps are ok. Transfer the batter to the prepared baking dish and let it rest for 15 minutes.
- Sprinkle the crumble evenly over the batter and bake until lightly golden brown and the top springs back when touched, 15 to 20 minutes (see Cook's Note). Let cool for 10 minutes, then remove to a baking rack.
- For the apple syrup: Meanwhile, combine the apple juice, granulated sugar and apples in a shallow skillet, bring to a boil and cook until the mixture is thickened and reduced by half. Add a splash of lemon juice, strain the syrup through a fine strainer and keep warm.
- Dust the top of the apple pancake with the confectioners' sugar, cut into bars and transfer to a platter. Drizzle the warm apple syrup over the bars or pass it for dipping.

- Heat butter in a small skillet and add apples and sugar. Sauté apples until golden and tender. Set aside.
- Mix all dry ingredients in a small bowl. Add butter and using a pastry cutter, cut butter into dry mixture until it's pretty well combined. Add walnuts.
- Mix dry ingredients into a medium bowl. In a separate small bowl, beat egg. Add melted butter and buttermilk and whisk until combined. Add to dry ingredients and mix until combined.
- Heat oil in large skillet or griddle over medium heat until the oil sizzles when you put a drop of batter in it. Pour a little more than 1/2 cup of batter into pan and let it spread out into a large round. When small bubble start to form in batter, add 8-10 slices of apple in a round pattern. Sprinkle streusel over the top to coat and using a large spatula, flip when pancake is is golden brown on the bottom. Cook until golden on both sides and serve apple side up with a dollop of butter and syrup.
