Apple Bran Muffins image

This is a nice change from a plain bran muffin. It's somewhat healthier, because it's made with yogurt. I always double the cinnamon sugar on top (personal preference). Sometimes I add some chopped pecans (or walnuts). Don't let the long list of ingredients scare you - these come together fast.

Number Of Ingredients 15

1 cup whole wheat flour
1 cup all-purpose flour
1/2 cup wheat bran
2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup brown sugar
1/4 cup oil
1 cup plain yogurt (I use vanilla, it's what I have in the fridge)
1/3 cup apple juice
1 apple, unpeeled & chopped
2 teaspoons sugar
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 400*. Mix flours, bran, cinnamon, baking powder, baking soda & salt together in a large bowl.
  • In another bowl, whisk together the egg, brown sugar and oil. Stir in the yogurt, apple juice & apple.
  • Stir the wet ingredients into the dry until just moistened.
  • Spoon into greased (I use cooking spray) muffin tins, filling each to the top.
  • TOPPING: Mix together & sprinkle over muffins before baking.
  • Bake @ 400* for 18-20 minutes until firm to touch.

½ cup oat bran
1 cup wheat bran
½ cup sour cream
½ cup milk
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
⅔ cup brown sugar
½ teaspoon salt
1 cup fresh blueberries
⅓ cup vegetable oil
1 orange, juiced and zested
1 egg
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  • Combine the oat bran and wheat bran in a large bowl. Stir in sour cream and milk. Allow mixture to stand for 10 minutes. Combine flour, baking powder, baking soda, brown sugar, and salt in a separate bowl. Gently stir blueberries into the flour mixture, carefully coating all the blueberries with flour. Stir vegetable oil, orange juice and zest, egg, and vanilla extract into the bran mixture. Combine flour mixture with the wet ingredients until just blended. Drop batter into lined muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 tablespoon grated orange rind
2 tablespoons orange juice
1 peeled and diced apple

Steps:

  • Combine buttermilk, egg, orange rind and juice in a separate bowl.
  • Stir wet ingredients into dry ingredients, mixing just until moistened.

This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

½ cup dark brown sugar
1 ½ cups oat bran
1 ½ cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
2 eggs
1 cup chilled applesauce
4 tablespoons vegetable oil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  • Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
  • Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
  • VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.

1/2 cup oat bran
3 tablespoons brown sugar
1-1/4 teaspoons baking powder
1/8 teaspoon baking soda
Dash salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 egg white
1/2 cup buttermilk
1 tablespoon canola oil
2/3 cup grated apple

Steps:

  • In a small bowl, combine the first eight ingredients. In another bowl, whisk the egg white, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple. , Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 375° for 16-18 minutes or until a toothpick comes out clean.
