- Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cinnamon, baking soda and salt; gradually add to creamed mixture and mix well. Stir in oats and apples. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Let stand for 1 minute before removing to wire racks.

Steps:
- Mix flour, salt and baking soda. Add brown sugar and oatmeal, mix well. Cut in 1 cup butter.
- Spread half of the crumb mixture in a buttered 9 x 13 pan.
- Put apples on top of bottom layer. Cover with remaining crumb mixture and dot with 4 tablespoons butter.
- Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes. It is great served with ice cream!

- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 9x9-inch baking pan.
- In a bowl combine flour, baking powder, cinnamon, baking soda and salt.
- In another bowl, beat the butter, Crisco shortening and brown sugar until smooth and creamy (about 5 minutes).
- Add in egg and vanilla; beat well until combined.
- Stir in the flour mixture, oatmeal, chopped apples, coconut, nuts or chocolate chips (if using) mix well to combine.
- Spread into prepared baking pan.
- Bake for about 30-35 minutes, or until bars tests done.
- Cool and sift the confectioners sugar over top.

- Remove the core and thinly slice apples.
- Place apple slices in a large bowl and gently mix in sugar, cornstarch, and cinnamon. Set aside.
- Preheat oven to 350˚F (180˚C).
- In another bowl, combine flour, oats, brown sugar, baking soda, salt, and butter. Mix until crumbly.

- In a large mixing bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt until well combined. Stir in the old-fashioned rolled oats and set aside.

- Position a rack in the center of the oven and preheat the oven to 350 degrees F.
- Heat a small, heavy saucepan over medium-high heat. Add 2 teaspoons of the butter, and let melt. Add the apple, 1 teaspoon of the brown sugar, the cinnamon, and a scant pinch of salt, and stir well to combine. Cook, stirring occasionally, until the apples are slightly softened, about 3 minutes.
- In the bowl of a stand mixer, cream the remaining butter and brown sugar on medium-high speed until the mixture appears light and fluffy. Add the egg and vanilla and beat until incorporated.

Steps:
- Pre-heat oven to 350 degrees. Line 13 x 9 baking dish with foil and lightly coat with cooking spray
- Combine flour, oats, brown sugar, salt, baking soda, cinnamon, and nutmeg in a large bowl

- Store cookies in an airtight container for up to 4 days. They can also be frozen in an airtight container or ziploc bag for up to 2 months.
