APPLE-TOPPED OATCAKES
During the week we have quick breakfasts...but on Saturday I like to make something special. This is one of our favorite recipes because the oatcakes and apple topping are a tasty, wholesome combination. - In a large bowl, combine milk and oats; let stand for 5 minutes. Stir in the egg, oil and molasses. Combine dry ingredients; stir into oat mixture just until moistened. Beat egg whites until soft peaks form; fold gently into batter. Set aside. , Heat butter in a skillet until foamy. Add the apples, lemon juice and zest; cook, uncovered, for 8-10 minutes, stirring occasionally. , Meanwhile, cook oatcakes. Pour batter by 1/4 cupfuls onto a hot greased griddle. Cook until bubbles form; turn and cook until browned on other side. , For apples, combine sugar, cornstarch and nutmeg; add to apple mixture and cook 2 minutes longer or until tender. Serve warm over oatcakes.

Originally a Scottish recipe. Very little sugar and no white flour. Easy to make and a wonderful addition to breakfast.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line a heavy baking sheet with parchment paper.
- Mix oats, whole wheat flour, sugar, salt, and baking soda together in a bowl. Rub in butter with your fingers until mixture is chunky. Pour in enough water to form a thick dough.
- Spread a thin layer of oats and whole wheat flour on a flat work surface. Turn out dough and pat to an even thickness. Cut into circles using the rim of a drinking glass. Transfer to the prepared baking sheet.
- Bake in the preheated oven until golden brown, 20 to 30 minutes.

BLACKBERRY & APPLE OAT BAKE
Try a twist on your regular porridge in the morning with this healthy blackberry and apple oat bake. Serve with milk or yogurt and maple syrup

- Heat the oven to 200C/180C fan/gas 6. Put the milk, spices and apple in a small saucepan. Cover, gently bring to the boil and simmer for 10-12 mins. Set aside to infuse for at least 15 mins.
- Remove and discard the spices, then pour the apples and milk into a large bowl and roughly crush the apples with the back of a fork. Mix in the oats, egg, vanilla, baking powder, pecans and blackberries.
- Tip into a 2-litre ovenproof dish and bake for about 30-35 mins until piping hot in the middle. Serve with milk or yogurt and maple syrup, if you like.

- In a bowl, combine boiling water and oats; set aside. In a large bowl, combine the flour, baking soda, cinnamon and salt. In a bowl, combine the sugars and applesauce; beat well. Add the egg, vanilla and oat mixture; mix well. Stir into dry ingredients just until combined. Fold in apple., Pour into an 8-in. square baking dish coated with cooking spray. For the topping, combine the oats, flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over batter. - Lightly spray cake tin (round or square medium size) with spray vegetable oil. Preheat oven to 180 degrees celsius (moderate heat).
- Cake: Combine in a bowl all dry ingredients (flour, oats, brown sugar, baking powder and baking soda, nutmeg, cinnamon, salt).
- Combine in a small separate bowl yogurt and olive oil, then add to dry ingredients.
- Add apple juice and eggs and beat until combined, then fold in the apples.
- Spoon mixture into prepared cake tin.
- Topping: Mix yogurt and olive oil in a bowl.
- Combine oats, flour, sugar and grated apple.
- Mix until it is a crumbly texture (If too moist you may add pinches of flour, however the crumble effect will still happen after cooked). Crumble mixture over top of cake batter and bake for 30-35 minutes or until cake is firm and bounces back when lightly touched.

This recipe comes from the Salishan Lodge on the Oregon coast. The chef graciously shared the recipe with me when I asked. It is always a big hit when I serve it, usually when we have company.

- Mix together oatmeal, hot water, butter and chopped apples.
- Cook for 20 minutes.
- Beat together the brown sugar and eggs.
- Combine remaining dry ingredients and vanilla and mix well.
- Add apple-oatmeal mixture to dry ingredients then add eggs and sugar and blend thoroughly.
- Cook as you would pancakes on a preheated griddle.
- Serve with chopped walnuts, maple syrup and creme fraich.
