10 cups all-purpose apples, peeled, cored and sliced
1 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
½ cup water
1 cup quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
¼ teaspoon baking powder
¼ teaspoon baking soda
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degree C).
  • Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
  • Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
  • Bake at 350 degrees F (175 degrees C) for about 45 minutes.

2 cups rolled oats
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ½ cups packed brown sugar
1 ½ cups butter
2 quarts peeled, cored and sliced apples

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the flour, oatmeal, cinnamon, nutmeg and brown sugar. Cut butter into mixture until crumbly.
  • Take half of the mixture and pat it into the bottom of a 9x13 inch baking dish.
  • Cover crumb mixture with apple slices, then sprinkle apple slices with remaining crumb mixture.
  • Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes or until apples are tender.

1/2 cup sugar
1 teaspoon ground cinnamon, divided
1 cup all-purpose flour
1 cup packed brown sugar
1/2 cup quick-cooking oats
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/2 cup cold butter, cubed
Vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. Place apples in a large bowl. Combine sugar and 1/2 teaspoon cinnamon; sprinkle over apples and toss to coat. Transfer to a greased 13x9-in. baking dish. Combine flour, brown sugar, oats, baking powder, nutmeg and remaining cinnamon; cut in butter until mixture resembles coarse crumbs. Sprinkle over apples. Bake until apples are tender, 50-60 minutes. Serve warm with vanilla ice cream, if desired.

I just recently started eating Coach's 'steel-cut, cracked and toasted' Oats and it's got me hooked. It's nutty and full of flavor. This recipe is from their website ... slightly modified. Please mind that I'm not sure how this will work if you use regular oatmeal. Okay, I bought another brand of 'steel-cut' oatmeal to see if there was a difference. There was enough difference in the texture, flavor, cook-time and overall quality (to me) that I recommend you use the Coach's brand for this recipe.

Apple crisp meets browned butter dough in these delicious bar cookies that are perfect for fall.

0.75 cup unsalted butter
1.5 cups flour
1 cup rolled oats
0.667 cup packed brown sugar
0.75 teaspoon baking powder
0.25 teaspoon cinnamon
0.25 teaspoon salt
1 large egg yolk
1 teaspoon vanilla extract
2 tablespoons unsalted butter
6 cups chopped apples
tablespoon packed brown sugar, divided
1 teaspoon ground cinnamon
1 teaspoon freshly squeezed lemon juice
0.25 teaspoon ground nutmeg
1 pinch salt

Steps:

  • Cook 3/4 cup butter in a large skillet over medium-low heat until melted and light brown, 12 to 15 minutes. Keep an eye on it; it can burn. Pour into a bowl. Freeze until solid, about 30 minutes.
  • Meanwhile, for the filling melt 2 tablespoons butter in the same skillet. Add apples, 2 tablespoons brown sugar, 1 teaspoon cinnamon, lemon juice, nutmeg, and pinch of salt. Cook, stirring occasionally, until apples are golden brown and caramelized, about 15 minutes. Remove from heat. Add 3 tablespoons brown sugar; toss to coat.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a 9-inch square baking pan with enough parchment paper to create an overhang on all sides.
  • Stir together flour, oats, 2/3 cup brown sugar, baking powder, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt in a bowl. Coarsely shred frozen browned butter or chop into small pieces. Cut butter into flour mixture until mixture resembles coarse meal. Add egg yolk and vanilla; stir with a fork just until a crumbly dough comes together. Press about two-thirds of the dough (2 2/3 cups) in an even layer in the prepared baking pan.
  • Bake until lightly browned, about 10 minutes.
  • Spread apple mixture over the crust. Crumble remaining dough over top. Bake until golden brown, about 25 minutes. Let cool completely on a wire rack. Using parchment sides to lift bars, transfer to a cutting board and cut into squares.

3/4 cup light brown sugar, packed
1 teaspoon cinnamon
1 pinch salt
1/2 cup butter, cut into small pieces and slightly softened
1 cup chopped walnuts (lightly toasted and cooled)
3 lbs apples (peeled and sliced about 1/3-inch thick)
3 tablespoons fresh lemon juice
1/2 cup white sugar
1/4 cup brown sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 cup flour
vanilla ice cream or whipped cream

Steps:

  • Set oven to 375 degrees.
  • Butter a 10-inch deep-dish glass pie plate (or use an 11 x 7-inch baking dish).
  • For the topping; in a bowl stir together the flour, oats, brown sugar, cinnamon and pinch salt; add in butter and blend with fingers until mixture resembles coarse meal.
  • Add in the toasted walnuts; set aside while preparing the filling.
  • In a large bowl toss the apple slices with the lemon juice; add in all remaining ingredients except the vanilla ice cream, toss well to combine and transfer to the prepared pie plate or baking dish.
  • Sprinkle the prepared topping evenly over the apple mixture.
  • Bake for about 30-40 minutes or until the topping is browned and the apples are fork-tender.
  • Let the crisp stand for 15 minutes before serving.
  • Serve warm with vanilla ice cream.
