This easy recipe for apple nut cake uses fresh apples and cashews to make a very simple and delicious cake for dessert.

1.5 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup sugar
2 eggs
1/2 cup melted butter
4 tablespoons oil
1 teaspoon Vanilla essence
2 fresh apples (peeled and grated)
1/2 cup finely chopped cashew nuts (or nuts of your choice)

Steps:

  • Preheat oven to 350 degree Fahrenheit.
  • Mix the dry ingredients ( flour, baking powder and baking soda) in a bowl.
  • In another bowl, beat eggs and sugar very well. Then add the melted butter and vanilla essence to the mix and combine well. Fold in the grated apples.
  • Combine the dry ingredients to the egg sugar mixture slowly and stir properly.
  • Finally add the finely chopped cashew nuts to the cake batter and mix well.
  • Grease a cake pan with butter and pour the cake batter. Bake for about 45 to 50 minutes or until a toothpick inserted comes out clean.
  • Once it is done, allow the cake to cool down in the rack. Let it cool completely before cutting.
  • My cake was done in 50 minutes and here is how it was looking before frosting.

  • In a large bowl, combine butter, egg, milk and apple. In a separate bowl, sift together flour, baking powder, cinnamon and sugar. Stir flour mixture into apple mixture, just until combined.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

1 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

1/2 teaspoon ground nutmeg
3 cups diced peeled apples
1/4 cup chopped nuts
Whipped cream or ice cream

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda, salt, cinnamon and nutmeg; add to creamed mixture (batter will be very thick). Stir in the apples, nuts. , Spread into a greased 8-in. square baking pan.   • Preheat oven to 400 degrees F (200 degrees C).

1 cup whole wheat flour ((wholemeal, or use spelt))
1/2 cup quick cooking oats
2 tablespoons quinoa flour
3 teaspoon baking powder
1 teaspoon ground cinnamon
2 large eggs
1 cup milk
2 tablespoons maple syrup
1 medium apple ((you will need 100g grated apple))
1/2 cup raisins ((very loosely packed))

Steps:

  • In a large bowl, mix together the dry ingredients.
  • In a medium bowl, beat the eggs, milk, and maple syrup together using a hand beater.
  • Make a well in the dry ingredients and pour in the wet ingredients. Beat together until a batter forms. Using a fork, stir in the apples and raisins.
  • Heat a griddle or non-stick frying pan on medium to medium-high heat. Add in a bit of oil. Spoon on about 1/4 cup of the batter for each pancake. Using the back of the spoon, gently help the batter lightly spread into a circle.
  • Cook until the sides of the pancake are starting to look dried, and there are bubbles on the surface, about 2 minutes. The bottom of the pancake should also be golden-brown at the same time. If the bottom is browning too fast, turn down the heat. Gently flip the pancake and cook on the other side until the bottom is golden-brown.
  • Serve with maple syrup, this easy blueberry jam with chia seeds, or yogurt.

GRANDMA'S APPLE NUT CAKE

This is my husband's favorite. His mom gave it to us many years ago. I have refined the recipe just a little since then. Please don't tell her...hehe. It doesn't need a frosting because it is so yummy just by itself, but it would dress it up to drizzle with a thin creamy icing. I had misplaced this recipe for the longest time and had thought I had lost it, so I hadn't made it for ages. My husband found it this weekend and I have made it twice since then. Both times it was gone before it was even all the way cooled, thanks to our 5 daughters. My husband and I barely managed to claim a few bites before it disappeared. I'm posting it here to share with everyone and to keep it from ever getting lost again. It's definately a keeper.

1/2 cup any kind brown sugar (dark is best)
1 cup sugar
1/4 cup oil
1/4 cup butter, very soft
2 eggs
2 teaspoons vanilla
2 cups flour
2 teaspoons cinnamon
1/2 teaspoon salt
2 teaspoons baking soda
4 cups raw apples, peeled cored,and diced (2 large or 3 medium or 4 small)
1 cup coarsely chopped walnuts

Steps:

  • Grease and flour a 9x13 baking pan.
  • Preheat oven to 325 F.
  • Sift dry ingredients into a bowl and set aside.
  • In another mixing bowl, stir together the first six ingredients, then fold in the dry ingredients, followed by the apples and nuts.
  • Spread in the prepared pan.
  • The batter will be thick.
  • Bake until it tests done by poking it with a toothpick in the center.
  • If it comes out dry it is done.
  • Baking time will be approximately 40 mins, plus or minus.

Beat egg whites until stiff peaks form; fold into batter with apple and nuts. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top. For syrup: combine sugar, cornstarch and allspice in a medium saucepan; stir in apple juice. Cook and stir over medium heat until thickened, about 6-8 minutes. Serve over hotcakes.

Once apples are soft and caramelized, remove them from heat. Set them aside, covered, while making the hotcakes.
  • To make the hotcakes, beat the eggs in a medium bowl. Add sugar, vanilla extract, baking powder, salt, and ground cinnamon. Whisk to combine. Add milk and whisk again.
  • Add flour and stir well to combine. Mix to break any lumps the batter could have.
  • Cook hotcakes in a heated non-stick skillet with some melted butter on it. Cook them on both sides until they lift and turn slightly golden on top.
  • Serve hotcakes with the caramelized apples on top. Enjoy when still warm!
