MAPLE MUSTARD-GLAZED MEATBALLS

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine ground beef, oats, egg, onion, apple, cream, maple syrup, thyme, salt, pepper, and garlic in a bowl; mix until well combined. Roll beef mixture into 1-inch meatballs.
- Stir together 4 tablespoons maple syrup and mustard in a small bowl and brush meatballs with the glaze.
- Bake in the preheated oven for 20 minutes. Turn meatballs over and baste with glaze. Bake until cooked through, about 10 minutes more. Serve immediately.

- Combine first 5 ingredients; stir well with a wire whisk, and set aside. Coat a large nonstick skillet with cooking spray; add oil, and place over medium heat until hot. Add onion, bell pepper, and garlic, and saute 5 minutes or until tender. Let onion mixture cool. Combine onion mixture, chicken, and next 8 ingredients in a bowl; stir well. Shape mixture into 48 (1-1/4-inch) balls. Recoat skillet with cooking spray, and place over medium heat until hot. Add half of meatballs; cook 15 minutes or until browned, turning frequently. Remove from skillet, and keep warm; repeat with remaining meatballs. Return cooked meatballs to skillet. Pour honey mixture over meatballs; cook 3 minutes or until thickened, stirring constantly. Yield: 4 dozen (serving size: 1 meatball). - Make the meatballs by combining all the meatball ingredients except the oil. Mix well, but don’t overwork the meat, or you’ll have tough meatballs. Scoop out about 1 tablespoon at a time, and roll them into balls. Set aside on a baking sheet. You can set these in the fridge for a few hours if you need to.
- Pour enough oil into a pan to come about halfway up the side of the meatballs. Heat the oil to somewhere between 325°F and 350°F. Brown the meatballs well. You’ll probably need to do this in two batches.
- When the meatballs are all nicely browned, drain the oil; you can reuse it later. Leave about 1 tablespoon in the pan. Mix all the glaze ingredients in a bowl to combine, then put the mixture into the pan and turn the heat to high. When it boils, add back all the meatballs. Roll the meatballs around to coat, and cook, shaking the pan constantly, until the sauce cooks down into a glaze. Remove from the heat and serve.
