Sweet and savory come together to form a decidedly fall-flavored meatball.

18 ounces ground beef
1 large egg
5 tablespoons oats
¼ cup diced onion
¼ cup grated apple
2 tablespoons heavy cream
1 tablespoon pure maple syrup
1 teaspoon minced fresh thyme
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon granulated garlic
4 tablespoons maple syrup
1 tablespoon German stone ground mustard

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine ground beef, oats, egg, onion, apple, cream, maple syrup, thyme, salt, pepper, and garlic in a bowl; mix until well combined. Roll beef mixture into 1-inch meatballs.
  • Stir together 4 tablespoons maple syrup and mustard in a small bowl and brush meatballs with the glaze.
  • Bake in the preheated oven for 20 minutes. Turn meatballs over and baste with glaze. Bake until cooked through, about 10 minutes more. Serve immediately.

1/3 cup apple jelly
3 tablespoons unsweetened apple juice
3 tablespoons spicy brown mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce

Steps:

  • Place meatballs in a single layer in a greased 15x10x1-in. baking pan. Bake according to package directions., Meanwhile, combine the remaining ingredients in a large saucepan. Bring to a boil over medium heat., Transfer meatballs to sauce; stir gently to coat. Return to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until sauce is thickened, stirring occasionally.

1 tablespoon prepared horseradish
1-1/4 cups soft bread crumbs
1-1/2 pounds ground beef
1 cup water
1/2 cup chili sauce
1/2 cup ketchup
1/4 cup maple syrup
1/4 cup reduced-sodium soy sauce
1-1/2 teaspoons ground allspice
1/2 teaspoon ground mustard

Steps:

  • In a large bowl, combine eggs, milk, horseradish and bread crumbs. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls., Place meatballs on a greased rack in a shallow baking pan. Bake at 375° for 15-20 minutes or until cooked through; drain., In a large saucepan, combine the remaining ingredients. Bring to a boil; add the meatballs. Reduce heat; cover and simmer for 15 minutes or until heated through, stirring occasionally.

2 ts Fresh Lemon Juice
1 c Onion finely chopped
1/4 ts Pepper
1 1/2 lb Freshly ground raw chicken
1/2 c Fine dry breadcrumbs
1 ts Low-sodium soy sauce
2 tb Low-sodium soy sauce
2 Garlic minced
2 ts Dijon mustard
1/2 ts Lemon Rind grated
1 tb Dijon mustard
1 c Finely chopped green bell
1/2 ts Salt
1/4 c Honey
Vegetable cooking spray
2 ts Vegetable oil
1 tb Fresh Lemon Juice
1/2 c Coarsely shredded zucchini

Steps:

  • Combine first 5 ingredients; stir well with a wire whisk, and set aside. Coat a large nonstick skillet with cooking spray; add oil, and place over medium heat until hot. Add onion, bell pepper, and garlic, and saute 5 minutes or until tender. Let onion mixture cool. Combine onion mixture, chicken, and next 8 ingredients in a bowl; stir well. Shape mixture into 48 (1-1/4-inch) balls. Recoat skillet with cooking spray, and place over medium heat until hot. Add half of meatballs; cook 15 minutes or until browned, turning frequently. Remove from skillet, and keep warm; repeat with remaining meatballs. Return cooked meatballs to skillet. Pour honey mixture over meatballs; cook 3 minutes or until thickened, stirring constantly. Yield: 4 dozen (serving size: 1 meatball).
