APPLE-MEMBRILLO TART
For a tart that's both sweet and, well, tart, use Granny Smith apples. They're the perfect partner for the membrillo (Spanish quince paste) in the filling. Serve with creamy blue cheese, jewel-like green grapes, and crunchy Marcona almonds for the ultimate dessert platter.

- Preheat oven to 400 degrees. Roll out dough into a 1/4-inch-thick rectangle; fit into a tart pan. Trim edges flush with pan. Prick dough lightly with a fork and freeze until firm, 15 minutes.
- Reserve 1 tablespoon membrillo; mash remainder with 1 teaspoon water until spreadable. Using an offset spatula, spread evenly over dough in pan. Shingle apples over top. Brush with 1 tablespoon butter; sprinkle with sugar. Bake until pastry is golden and apples are browned and tender, about 1 hour. Meanwhile, in a small saucepan over medium, heat reserved membrillo with 1 tablespoon water and remaining 1 tablespoon butter, stirring often, until smooth.
- Remove tart from oven; brush apples with glaze. Return to oven; bake until apples just darken in spots and caramelize, about 10 minutes more. Let cool completely before slicing. (Tart can be stored, loosely covered, at room temperature up to 1 day.) Serve with almonds, grapes, and cheese.
FRESH APPLE TARTS
These tarts are easy to make and bake. White sugar may be used in place of brown sugar.

- In a large bowl, mix together flour, 1 1/4 cups sugar, and salt. Cut in butter until mixture is crumbly. Mix in eggs and vanilla extract until dough forms a ball. Wrap in plastic and refrigerate for at least 1 hour but not more than 1 day.
- While the dough is chilling, prepare the apple filling.
- In a medium bowl, toss diced apples with sugar and cinnamon. Mix in walnuts.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 16 3-inch tart pans. Remove tart dough from the refrigerator and let it stand at room temperature for 30 minutes before rolling out.
- Knead dough briefly on a lightly floured surface. Cut into 16 equal portions. Roll each portion into a 6-inch circle, and carefully fit one circle into each tart pan.
- Spoon an equal amount of apple mixture into each tart pan. Fold pastry over filling. Place filled tarts on a baking sheet.
- Bake in preheated oven until golden brown, about 30 minutes. Melt apricot jam and brush over finished tarts, if desired.

CRAB APPLE JELLY
This delicious crab apple jelly recipe is perfect for the beginner preserver. Traditionally served with pork, this traditional treat is equally good on toast.

- Wash the crab apples and cut in half, cutting off any bruises. Place in a large pan and add water to cover ¾ of the fruit. Bring to the boil. Then put the lid on the pan and gently simmer for about 40 minutes until the fruit has turned to a pulp.
- Hang a jelly bag or cloth securely from a stand, with a large bowl underneath the bag. Using a jug, pour the fruit pulp and liquid into the bag and leave to strain for 12 hours. Do not poke, prod or push the pulp to speed the straining, as this will make the finished jelly cloudy.
- Put your jam jars and lids in the oven heated to 140°C/275°F/Gas Mark 1 to warm and sterilize them. If using the wrinkle test for setting, place a plate in the freezer.
- Weigh the strained juice and add an equal weight of sugar.
- Gently simmer in a large pan to dissolve the sugar. As the juice simmers, foam and scum will rise to the surface. Skim this off with a slotted spoon to remove impurities and keep the jelly clear. Keep a large bowl of cold water next to the hob to rinse the spoon off.
- Turn up the the heat When the liquid has reached a rolling boil, start testing for the set by one of these three methods.
- The wrinkle method. Chill a plate in the freezer. Spoon a teaspoon of the boiling jelly onto the plate and let it cool; this will only take a few seconds. Push your finger through the jelly and look for it to wrinkle ahead of your finger.
- Temperature. Use a jam thermometer to test for when the jam reaches 105°C.
- The flake test. Test the jelly by taking a spoonful of jelly - a long-handled metal spoon is best. Tip up the spoon to pour the jelly back into the pan, and watch the behaviour of the last few drops. When the last drops hang off the spoon in a flake, the jelly has reached its setting point.
- Once setting point is reached, remove the jelly from the heat and take the warm jars and lids from the oven. Give the jelly one last skim to remove the foam and scum.
- Let the jelly stand for a few minutes. Then pour the jelly into the jars, quickly skim each jar using a tea spoon and seal down with the dry lids while still hot.
- As the jars cool, each lid will pop to show that they're sealed properly - I always find this most satisfying to hear as I enjoy my tea and first taste!

- For the pastry, put the flour in a large mixing bowl with a pinch of salt, add the butter and rub into the flour using your fingertips until the mixture resembles breadcrumbs. Stir through the sugar with a round-bladed knife, then stir in just enough of the water until the dough starts to come together in chunks (it shouldn’t be sticky). To make this in a food processor, whizz the butter and flour together, then pulse through the sugar and water until the dough starts to come together.
- Bring the dough together with your Hands, then tip onto a floured surface and give it a quick knead until smooth. Roll it out to a rough square, fold it in thirds like a letter, give a quarter turn, then repeat twice. Wrap the pastry in cling film and chill for 30-60 minutes (or see make ahead).
- Heat the oven to 190°C/fan170°C/gas 5. Remove the pastry from the fridge, cut off two thirds (chill the remaining third), then roll out on a floured surface to the thickness of a £1 coin. Use the pastry to line a 23cm x 5cm deep tart case with a removable base. Press it into the edges, trim the excess, then chill (5 minutes in the freezer or 20 minutes in the fridge). Line with foil or baking paper, fill with baking beans or uncooked rice, then blind bake for 20 minutes. Remove the foil/paper and beans/rice, then cook for 5 minutes or until the base is sandy coloured with no grey patches.
- In a large bowl, toss the apples with the sugar, spices and cornflour, then use to fill the pastry case. Dot the top of the apples with quince jelly. Roll out the remaining pastry until a little bigger than the pie. Cut off a long, thin strip (enough to fit round the pastry case), wet the edge of the baked pastry case and press the strip of pastry on top, gently, all the way around. Brush this with a little water, then loosely roll the pastry for the lid around a rolling pin and unroll on top of the pie, pressing it gently onto the strip to seal. Trim any overhanging pastry, then crimp the edges with your fingers. Shape the trimmings into decorations, if you like. Cut a steam hole in the centre of the pie, brush the top with the beaten egg to glaze, add the pastry decorations, then glaze again and sprinkle with caster sugar.
