JERKY LOVER'S JERKY - SWEET, HOT AND SPICY!



Jerky Lover's Jerky - Sweet, Hot and Spicy! image

If you love hot and sweet we're confident this will be your favorite. An ultimate treat for family outings, sporting events, camping or hiking trips. Pineapple juice is the key that ties the flavors together. Go easy on the black and red pepper as the flavor goes a long ways!

1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons cracked black pepper, or to taste
1 pound lean beef sirloin tip, sliced into 1/8 inch strips
½ cup brown sugar
⅔ cup soy sauce
¼ cup teriyaki sauce
¼ cup Worcestershire sauce
⅓ cup balsamic vinegar
5 tablespoons liquid smoke flavoring
½ cup pineapple juice
1 teaspoon red pepper flakes, or to taste

Steps:

  • In a small bowl or cup, mix together the onion powder, garlic powder, and some cracked black pepper. Season the meat lightly, using only part of the mixture. Reserve the remaining spices. Place into an airtight plastic container or bowl, and refrigerate.
  • In a saucepan over medium heat, mix together the brown sugar, soy sauce, teriyaki sauce, Worcestershire sauce, balsamic vinegar, liquid smoke flavoring and pineapple juice. Heat until the brown sugar has completely dissolved. Refrigerate marinade until cool.
  • Pour cooled marinade over the seasoned meat, and mix by hand to coat. Seal the bowl, and refrigerate for at least 3 hours.
  • Arrange the beef strips on the rack of a dehydrator, and sprinkle with a little bit more of the spice mixture and red pepper flakes if using. Dry for 5 hours, or to your desired dryness.

I made this as a way to use up apples that I got from apple picking. I wanted a low fat , healthy snack. This is what I came up with! Its very tasty and you can't eat just one piece.

1 1/2 cup(s) apples, peeled, cored and shredded
3 cup(s) rice krispies cereal
1/4 cup(s) brown sugar
1 teaspoon(s) cinnamon powder
1 teaspoon(s) fresh squeezed lemon juice

Steps:

  • Pre heat oven to 350 degrees.
  • Put shredded apples and cereal in a food processor in batches and process for about a minute. Its okay to have small chunks of apples.
  • Then mix together with remaining ingredients in a large bowl.
  • Line a large round pizza pan (16" diameter) with parchment paper.
  • Spread a very thin layer of this mixture on the pan. Press down with fingers and palm to get a very compressed, thin layer covering most of the pan( about 1/4" thick)
  • Bake on center rack for about 60 - 90 minutes or til very dry, but do not burn. Remove from oven and let cool. When cool enough to handle, rip into smaller pieces. If some pieces are still too moist, place back in oven til it becomes dryer.
  • Place on a serving dish, but do not cover for at least 3 hours or it will become moist again.

Spicy Smoked Pork Jerky image

Smoked Pork Jerky in a chipotle and citrus-flavored marinade.

2½ lbs pork tenderloin
3½ ounces chipotle peppers in adobo sauce ((½ can))
⅓ cup orange juice ((or pineapple juice or 50/50 of each))
⅓ cup soy sauce
1 tbsp brown sugar
1 tbsp pomegranate molasses ((or replace with 1 tbsp blackstrap molasses and a teaspoon of vinegar))
1 tbsp Worcestershire
1 tsp garlic powder
1 tsp smoked paprika
1 tsp salt
½ tsp crushed red pepper

Steps:

  • Slice the pork against the grain into 2" x 6" strips that are ⅛" to ¼" thick.
  • Mix the remaining ingredients and blend until you have a smooth marinade.
  • Layer the marinade and the pork strips inside a large ziplock bag. Massage the marinade into the pork for a few minutes to make sure all the strips are coated in the marinade. Refrigerate for a minimum of 8 hours or preferably overnight.
  • Heat the Traeger to 180 degrees F. Place the pork strips on a rack or directly on the grate and smoke for 5 to 6 hours or until the meat is dry but still pliable.

SIMPLE DIY BEEF JERKY



Simple DIY Beef Jerky image

This homemade beef jerky is savory, slightly spicy, and is easy to make with simple ingredients.

2 pounds beef ((lean cuts are best & will keep longer))
1/4 cup soy sauce
2 tablespoons worcestershire sauce
2 tablespoons brown sugar
2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon black pepper
1 teaspoon meat tenderizer (*optional)

Steps:

  • Thinly slice the meat* and cut off all visible fat.
  • Pound slices with a meat tenderizer mallet until pieces are uniform thickness (aprox nickel width).
  • Place the beef strips in a zip-top bag. Mix remaining ingredients and pour over beef.
  • Cover & marinate for 12-36 hours. Shake the bag a few times as it's marinating to make sure the beef is evenly coated.
  • Spread the meat in a single layer, shaking off any excess marinade, on the dehydrator trays.
  • Dry at 165F/74C for 4-6 hours, occasionally blotting off any fat droplets that appear on the surface. Test using a cooled piece. Properly dried jerky, when bent, should crack but not break.
  • Package jerky in and air-tight container or vacuum seal (*see storage notes below). Store in a cool, dark & dry place.

  • Combine all marinade ingredients (except the pheasant) in a saucepan and bring to a low simmer. Stir this mixture often until the salt, sugar, and cure have dissolved. Put the saucepan in the fridge to cool.
