6 tablespoons vanilla yogurt
6 tablespoons reduced-fat whipped topping
1/4 teaspoon plus 1/8 teaspoon ground cinnamon, divided
2 medium red apples, chopped
1 large Granny Smith apple, chopped
1/4 cup dried cranberries
2 tablespoons chopped walnuts

Steps:

  • In a large bowl, combine the yogurt, whipped topping and 1/4 teaspoon cinnamon. Add apples and cranberries; toss to coat. Refrigerate until serving. Sprinkle with walnuts and remaining cinnamon before serving.

1 large granny smith apple, cored and thinly sliced
juice of 1 lemon
1/3 c cider vinegar
1/3 c honey
1 tsp mccormick gourmet collection roasted saigon cinnamon
1/4 c olive oil
8 c salad greens: arugula, red leaf lettuce or romaine lettuce
1/2 c chopped dried apricots
1/2 c crumbled blue cheese (about 4 ounces)
1/2 c pistachio nuts

Steps:

  • 1. Cover apple slices with cold water. Add lemon juice. Let stand until ready to serve. Mix vinegar, honey and roasted cinnamon in small bowl with wire whisk. Gradually add oil, whisking until well blended.
  • 2. To serve, divide greens among 8 plates. Top each with drained apple slices, apricots, blue cheese and pistachio nuts. Serve with dressing.
