This is a fantastic Bundt cake that my grandmother used to make for Thanksgiving. It has been a family favorite for years!

2 cups white sugar
1 ½ cups vegetable oil
2 teaspoons vanilla extract
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
1 teaspoon salt
2 medium Granny Smith apples - peeled, cored and chopped
1 cup chopped walnuts
½ cup butter or margarine
2 teaspoons milk
½ cup brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9 inch Bundt pan.
  • In a large bowl, beat the sugar, oil, vanilla and eggs with an electric mixer until light and fluffy. Combine the flour, baking soda, cinnamon and salt; stir into the batter just until blended. Fold in the apples and walnuts using a spoon. Pour into the prepared pan.
  • Bake for 1 hour and 20 minutes in the preheated oven, until a toothpick inserted into the crown or the cake comes out clean. Allow to cool for about 20 minutes then invert on to a wire rack.
  • Make the glaze by heating the butter, milk and brown sugar in a small saucepan over medium heat. Bring to a boil, stirring to dissolve the sugar, then remove from the heat. Drizzle over the warm cake. I like to place a sheet of aluminum foil under the cooling rack to catch the drips for easy clean up.

1-1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup sugar, divided
1/2 cup butter
4 cups sliced peeled apples
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1 large egg, lightly beaten
1/3 cup evaporated milk
1 teaspoon vanilla extract
3/4 cup chopped nuts
1-1/3 cups sweetened shedded coconut

Steps:

  • In a bowl, combine flour, salt and 1/3 cup sugar. Cut in butter until the mixture resembles fine crumbs; press into a greased 13x9-in. baking pan. , Arrange the apple slices on top of crumbs; sprinkle with lemon juice. Combine 1/3 cup sugar with cinnamon; sprinkle over apples. Bake at 375° for 20 minutes. , Meanwhile, in a small bowl, combine remaining sugar with the rest of the ingredients. Spoon over baked apples; bake for 20 minutes or until golden brown. Cut into squares while still warm.

1/4 cup orange juice

6 tablespoons butter
4 1/2 pounds honeycrisp apples, sliced into 1/4 inch wedges
1/4 cup packed brown sugar
1 tablespoon all-purpose flour
2 tablespoons maple syrup
2 teaspoons vanilla extract
2 tablespoons lemon juice
1 teaspoon cinnamon
3/4 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon kosher salt
1/2 cup apple cider
1 sheet frozen puff pastry, thawed
1 egg, beaten
coarse sugar, for topping
1/3 cup heavy cream

Steps:

  • 1. Preheat the oven to 425 degrees F. 2. Melt the butter in a 10-inch skillet over medium heat and cook until lightly browned. Remove from the heat. 3. In a large bowl, combine the apples, brown sugar, flour, maple syrup, vanilla, lemon juice, cinnamon, ginger, nutmeg, salt, and apple cider. Pour the mixture into the skillet with the butter and toss to evenly coat. 4. Place the pastry over the apples and press down gently to secure, tucking the sides of the pastry under the apples as best you can. Brush with the beaten egg and sprinkle with coarse sugar. Place the skillet on a baking sheet and bake for 20 minutes. Remove from the oven. Using a sharp knife, cut the pastry into large squares to create the "pandowdy". 4. Reduce the oven temp to 350. Return the skillet to the oven and continue baking for another 20 minutes, or until the sauce is bubbling up through the cracks of the pastry. If needed cover the top with foil to prevent burning. Spoon the heavy cream over top and then return to the oven for another 10 minutes to "set" the cream. The pastry will turn a dark golden brown. 5. Using a spoon, press the pastry down into warm juices, but don't submerge. Serve warm with ice cream. ENJOY!

These are the best baked apples I've ever had. They are almost like individual apple crisps, and of course they must be served with a good vanilla ice cream!

4 large apples, cored (McIntosh or Brayburns are good)
1/4 cup quick oats
1 tablespoon lemon juice
3/4 cup brown sugar
1 teaspoon cinnamon
4 tablespoons butter
1/4 cup chopped pecans (optional) or 1/4 cup walnuts (optional)

Steps:

  • Cut all ingredients together in a bowl except apples. Place apples in a glass baking dish.
  • Stuff each of them as full as you can get them with the oatmeal mixture, sprinkling the remainder over the tops.
  • Bake in a 425°F oven for 20 min or till very soft.
  • Serve while still warm with vanilla or caramel ice cream.

3 large Granny Smith apples, peeled, cored, and sliced
1 orange, zested
1 cup fresh cranberries
1/3 cup raisins
1/4 cup walnuts, chopped
1/4 cup all-purpose flour
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pie crust dough, enough for top and bottom (from your own favorite recipe)
1/4 cup half-and-half
Sugar, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, combine the sliced apples, orange zest, cranberries, raisins, walnuts, flour, brown sugar, cinnamon, and nutmeg and mix well. Roll out the bottom dough and place it into a 9-inch pan, leaving 1-inch of pie dough hanging over. Pour the pie filling into the crust. Roll out the top dough and cut it with a scalloped pastry wheel into 15 strips. Gently twist the strips 2 or 3 times, beginning with the longest ones, and place them on top of the pie, working outward and in various angles. Gently fold the bottom crust up over the edge of the pie and flute the edges with your fingertips. With a pastry brush, gently brush the half-and-half over the entire top crust and edges and then sprinkle generously with sugar.
  • Bake until apples are cooked, about 45 to 50 minutes. (You can check the apples with a fork to make sure they are tender). Remove to a rack to cool. Serve warm or at room temperature.

Found this recipe the past weekend in the Sunday paper coupons. Made it last night for my family and my DIL raved about it. I even forgot to put in the rest of the brown sugar until I had the batter on top of the apples. I scooped it back off and added the sugar, but the recipe says to stir "just until moist". Oops. I will definitely be making this again and will follow directions exactly. Enjoy.

3/4 cup warm apple juice (I used apple cider)
2 tablespoons oil (recipe calls for Enova Oil)
2 large egg whites
2 teaspoons vanilla extract
1 tablespoon margarine
cooking spray
1 cup packed brown sugar, divided
1 large granny smith apple, peeled and thinly sliced (about 1 1/2 cups)
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°F.
  • Combine oats, apple juice and oil in a small bowl; let stand 10 minutes. Stir in egg whites and vanilla.
  • Pour margarine in the bottom of a 9-inch cake pan coated with cooking spray.
  • Sprinkle 1/4 cup brown sugar. Arrange apple slices spoke-like on top of brown sugar, working from the center of pan to edge.
  • Lightly spoon flour into dry measuring cups; level with a knife.
  • Combine 3/4 cup brown sugar, flour, baking soda, cinnamon, salt, and nutmeg in a large bowl, stir with a whisk. Add oat mixture; stir just until moist. Pour batter into prepared pan.
  • Bake at 350°F for 40 minutes, or until a wooden pick inserted in center comes out clean.

4 large sweet potatoes
1 teaspoon vegetable oil, or as needed
2 tablespoons vegan margarine (such as Earth Balance®), melted
⅓ cup maple syrup
2 large apples - peeled, cored, and thinly sliced
1 pinch cinnamon, or to taste
1 pinch ground cloves, or to taste
½ cup apple juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place sweet potatoes on a baking sheet.
  • Bake in the preheated oven until cooked through but still firm, about 20 minutes.
  • Remove sweet potatoes from oven; leave oven on. Allow sweet potatoes to cool until safe to handle; peel and cut into 1/2-inch slices.
  • Coat a deep 1 1/2-quart baking casserole with oil. Arrange 1/2 the sweet potato slices on the bottom. Drizzle with 1/2 of the melted vegan margarine followed by 1/2 of the maple syrup.
