APPLE FRITTERS
These apple fritters with caramel sauce are a delicious deep-fried taste of fall. Serve with some ice cream of a cup of coffee for a sweet treat any time of year.

- Heat some frying oil in a large pot over medium high heat until the oil reaches 340 degrees F.
- In a large bowl, mix the eggs, milk, melted butter, vanilla extract, and sugar until well combined.
- Add the all purpose flour, cinnamon, baking powder, and mix until well combined.
- Fold in the chopped apples.
- Using a mini scoop or two spoons, scoop the batter and drop into the oil.
- Cook for 4-5 minutes or until golden brown.
- Drizzle with homemade caramel and enjoy!
- To make the caramel sauce, combine the water and sugar and cook over medium heat in a saucepan until the sugar dissolves.
- Once the sugar dissolves, keep a close eye on it, sugar burns quickly.
- Once it turns into a copper color remove it from the stove.
- Add the butter and heavy cream and mix until well incorporated.
- Once the caramel thickens nicely and is lump free transfer to a heat proof container.

Steps:
- Stir together warm water, yeast, and 1/2 teaspoon sugar; let stand until foamy, about 5 minutes.
- Stir together flour, 1/4 cup sugar, and 1/4 teaspoon salt in a medium bowl. Add yeast mixture, milk, oil, and egg; stir until a soft dough comes together. Turn dough out onto a lightly floured surface and knead until smooth, 1 to 2 minutes (dough will be sticky). Pat dough into an 8-inch square.
- Toss together apple and cinnamon in a small bowl, and sprinkle over 1/2 of the dough. Fold the side with no apples over the apples and knead until apples are dispersed, about 30 seconds. Transfer dough to a lightly greased bowl, cover, and let rise in a warm place until doubled in volume, about 1 hour.
- Lightly flour a piece of parchment paper; set aside. Turn dough out onto a lightly floured surface. Cut into 8 pieces. Pat each portion of dough with floured hands into a 3- to 4-inch oval; fritters do not have to be uniformly shaped. Transfer fritters to the prepared parchment paper, cover loosely with plastic wrap, and let stand until doubled in volume, about 30 minutes.
- Preheat the air fryer to 360 degrees F (180 degrees C). Preheat the oven to 200 degrees F (95 degrees C). Place a wire rack over a rimmed baking sheet.
- Place 2 to 3 fritters in a single layer in the preheated air fryer basket and cook until golden brown, about 5 minutes. Remove cooked fritters to the prepared baking sheet and keep warm in the preheated oven. Repeat with remaining fritters.
- Whisk together caramel sauce and 1 tablespoon hot water, adding more water if necessary, to make a smooth drizzling consistency. Drizzle hot fritters with caramel sauce and sprinkle with sea salt, allowing baking sheet to catch caramel drips and excess salt.

- Prep: Slowly heat the 2 cups vegetable oil in a deep cast iron skillet or prepare the deep fat fryer. Set a plate next to your fryer with a thick layer of paper towels. Mix the sugar and cinnamon for the cinnamon sugar coating in a medium bowl and set it next to the paper towel lined plate. Add a large plate for the finished fritters.
- Make apple fritter batter: In a large bowl whisk together the flour, sugar, cinnamon, baking powder and salt. Add the milk, maple syrup, egg and 1 tablespoon oil and whisk until a thick and smooth batter forms.
- Check the oil: Check if your oil is hot enough by dropping a small amount of batter into it. If the batter browns and quickly floats to the surface you're ready to go!
- Fry the apples: Using metal tongues coat an apple ring with batter and gently drop it into the hot oil. Fry for 1-2 minutes on each side until golden and puffy. Remove from the oil and quickly drain on the paper towels. Toss it in the cinnamon sugar mixture while still warm and set aside on the plate. Proceed in the same way with the remaining apple slices until the entire batter has been used. Depending on the size of your skillet or fryer you can do multiple rings at the same time.

- Fritters - pour oil into a medium saucepan until one-third full.
- Heat over medium high heat until hot.
- Combine the flours and sugar with enough ice cold water to make a batter the consistency of thickened (doubled) cream.
- Coat the sliced apples in the batter and deep fry in batches for 3 to 4 minutes or until golden, remove to a wire rack to drain.
- Cinnamon Sugar - combine the sugar and cinnamon in a small bowl.
- Caramel Sauce - combine the butter and sugar in a small saucepan, place over medium heat and cook 3 - 4 minutes or until sugar is dissolved, stir in the cream and simmer for 2 - 3 minutes until sauce thickens.
- Place the fitters on serving plates, sprinkle with the cinnamon sugar, pour over caramel sauce and enjoy.

Spread apples on Dough leaving a 1⁄2-inch border. Fold Dough in thirds, as you would a letter. Repeat folding once. Roll into a 12- x 7-inch rectangle once more. Cut into 16 squares. Gently place squares on baking sheet.
