This quick and easy recipe for apple fritter rings stars juicy apple slices bathed in buttermilk batter and fried to golden brown perfection.

1 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/2 teaspoon cinnamon
2 Tablespoons sugar
1/4 teaspoon salt
1 large egg
1 1/4 cups buttermilk
4 large apples, such as Fuji or Gala
Vegetable oil, for frying
Homemade or store-bought caramel sauce, for serving
Circular cookie cutters in graduated sizes; Deep-fry thermometer

Steps:

  • In a medium bowl, whisk together the flour, baking powder, nutmeg, cinnamon, sugar and salt. In a separate large bowl, whisk together the egg and buttermilk and then whisk the egg mixture into the flour mixture just until combined.
  • Slice the apples into 1/4-inch-thick rounds. Using the cookie cutters, cut each apple slice into rings, discarding the center core.
  • Add 3 inches of oil to a large heavy-bottomed pot set over medium heat. Line a sheet tray with paper towels.
  • When the oil reaches 350°F on your deep-fry thermometer, begin by dipping each apple slice in the batter, shaking off any excess then carefully lowering it into the oil. Add several apple slices to the oil but do not overcrowd the pot. Flip the apple slices occasionally so that they brown on all sides then using tongs, transfer them onto the paper towel-lined baking sheet. Repeat the battering and frying process with the remaining apple rings.
  • Serve the apple rings immediately with caramel sauce for dipping.

Steps:

  • Prep: Slowly heat the 2 cups vegetable oil in a deep cast iron skillet or prepare the deep fat fryer. Set a plate next to your fryer with a thick layer of paper towels. Mix the sugar and cinnamon for the cinnamon sugar coating in a medium bowl and set it next to the paper towel lined plate. Add a large plate for the finished fritters.
  • Make apple fritter batter: In a large bowl whisk together the flour, sugar, cinnamon, baking powder and salt. Add the milk, maple syrup, egg and 1 tablespoon oil and whisk until a thick and smooth batter forms.
  • Check the oil: Check if your oil is hot enough by dropping a small amount of batter into it. If the batter browns and quickly floats to the surface you're ready to go!
  • Fry the apples: Using metal tongues coat an apple ring with batter and gently drop it into the hot oil. Fry for 1-2 minutes on each side until golden and puffy. Remove from the oil and quickly drain on the paper towels. Toss it in the cinnamon sugar mixture while still warm and set aside on the plate. Proceed in the same way with the remaining apple slices until the entire batter has been used. Depending on the size of your skillet or fryer you can do multiple rings at the same time.

There is nothing you wouldn't love about these apple fritters that simply melt in the mouth.

4 apples
1 cup flour (hipping cup appox 5 oz)
½ cup milk
2 eggs
2 tbsp sugar
1 tsp baking powder
1 tsp cinnamon or vanilla extract (optional)
Pinch of salt
1 Lemon (juice only)
Confectioners sugar

Steps:

  • Beat eggs with a pinch of salt. Add flour and baking powder and beat until smooth, lump free batter. Add cinnamon you if like it. Slowly pour in the milk and mix well.Let the batter rest while you're preparing apples.
  • Using a vegetable peeler peel the skin and remove core of each apple with quick release apple corer. Once peeled, rub apples with lemon half to prevent from decoloring.
  • Cut apples into ⅓ -¼ of an inch slices. Place in a bowl and drizzle with more lemon juice.
  • In a deep pan preheat vegetable oil for frying to 350F. Measure it with a kitchen thermometer if you can.
  • Dip apple rings into the batter letting go excess. Fry for a few minutes on each side until light golden brown. Transfer on a paper towel to absorb excess oil.
  • Cut apples in cubes or pulse very quickly in food processor, mix into the batter. If the mixture seems too liquid add more flour passing it through the sieve to prevent lump formation.
  • In a deep pan preheat vegetable oil for frying to 350F. You can measure it with a kitchen thermometer or do a test fritter. Drop a smaller ball of batter into the oil, if it starts to sizzle and rise to the top immediately, it's ready. The oil should not be smoking or burning. If it feels likes it is, lower the heat, wait a few minutes and do another test fritter.
  • Using a tablespoon or even better a scoop take apple batter and drop it into Fry for a few minutes on each side until light golden brown. Discard fried apple patties on a paper towel to absorb excess oil.
  • Place apple fritters on a serving plate and dust with powdered sugar.As an alternative roll each apple fritter in regular sugar.

  • Peel and cut them into one-inch thick rings. Remove the seeds while keeping the integrity of each apple's flesh. If you don't have a corer, there is actually a pretty easy alternative which I use. You slice each peeled apple horizontally, into 4-5 relatively thick slices. Then take each slice, firmly place it flat on the cutting board, and with the tip of the knife cut out a circle around the seed heart. Make sure that the end point of the knife goes all the way through the height of the slice. If you do this well, once you press gently that small circle in the middle, it will pop out immediately. If you don't do it so well, as you might not on the first 1-2 slices, you will have some nice peeled apple pieces to snack on. Cut, pop and repeat until all the rings are ready. The apple will start browning a bit probably, but this does nothing to the taste and in this case you don't need to worry about appearances, since the apple rings will be covered in batter.
  • Mix all the wet ingredients (first 3 on the list) Mix all the dry ingredients (the remaining 4). Stir the dry mix into the wet mix and beat (using a fork is enough; no need for an electric mixer) until the batter is smooth. It should be pretty thick.
