CINNAMON APPLE FLIP
Totally versatile! I've made it with blueberries, apples, orange zest, plain. It's just good stuff. Normally I halve it and make it in a nine-inch cake pan. I actually found the recipe in an ancient southern cookbook called "Charleston Receipts" while I was down in SC. The only real change I make is to sub yogurt for milk as I find it gives it a moister, more coffeecake-like consistency.

Steps:
- Preheat oven to 350°F.
- Cream sugar and butter in medium bowl with spoon (no mixer required) and add yogurt, eggs, milk, and extracts, mixing well. In smaller bowl, mix flour, salt, and baking powder till totally combined, and fold into wet ingredients, until well mixed. [At this point you should sample the batter because it's AMAZING.] Toss the thinly sliced apples with the cinnamon, set aside.
- Spray a 9 by 13 baking pan (or two 9 inch round cakes pans) with cooking spray. Spoon about half of the batter into the pan, spreading evenly with a spatula. It may seem like a thin layer but it will rise. Top with the apple slices (make sure they're evenly placed) and then pour the remaining batter on top, spreading again with spatula. Sprinkle with brown sugar and cinnamon, drizzle with melted butter, and bake for about 30 minutes.

FARMHOUSE APPLE FLIP

Steps:
- Preheat oven to 350 degrees F. Peel apples. Cut into thin slices or core and cut into very thin rounds.
- Place a layer of apples in bottom of buttered 9x13' dish. Mix sugar and cinnamon. Sprinkle with graham cracker crumbs and sugar mixture.
- Cut butter into very thin pats and arrange over top of dish.
- Bake for 35 to 50 minutes until apples are browned. Serve warm with ice cream.

- In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. Serve warm with ice cream if desired.

- Pour butter into an ungreased 9-in. round baking pan; sprinkle with 1/2 cup brown sugar. Arrange apples in a single layer over brown sugar; layer with walnuts and remaining brown sugar., In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder, baking soda, salt and cinnamon; add to the creamed mixture alternately with buttermilk and sour cream, beating well after each addition. Beat in brandy if desired., Spoon batter over brown sugar layer. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. APPLE FLIP
When autumn arrives, I especially love the taste of apples! While preparing Sunday brunch, I came up with this simple recipe (if you can call it a recipe) that delivers big flavor with little effort. I'm calling it Apple Flip but I hope you'll call it just plain inspired!! I used Cooks Grand Reserve champagne - inexpensive, but great with this concoction! The measurements are required, but just eyeball the half-and-half combo in your flute!!
