BOURBON FLAMED APPLES
Flambe! It's always fun to set food on fire intentionally (setting food on fire accidentally is entirely another matter, as I know first-hand). I like these over ice cream.

Steps:
- Combine the apple slices and lemon juice in bowl.
- Melt butter in medium skillet over medium heat.
- Add the apples and cook, turning frequently, until crisp-tender (about 10 minutes).
- Stir in the brown sugar.
- Add the bourbon and ignite, shaking the skillet gently until the flame subsides.
- Serve warm with ice cream (my favorite) or creme fraiche.

NO RECIPE RECIPE: APPLES FOSTER
Steps:
- Melt butter in a large nonstick frying pan over medium heat. When the foaming subsides, add the vanilla, cinnamon, and salt. Sprinkle sugar evenly into pan and cook until bubbly.
- Remove the pan from the heat and arrange the apples on top in a single layer. Return the pan to stove and cook over medium heat until the apples are glossy and knife tender, about 5 to 7 minutes. Remove the pan from the heat and add the rum. Carefully light the rum, with a long kitchen match. Return the pan to the heat and cook, shaking gently, until the flames subside. Transfer the apple mixture to serving dishes and serve immediately over ice cream.
APPLE CREPE CAKE: GATEAUX MONT SAINT MICHEL

- Mix all dry ingredients in a bowl. Add the water and milk. Beat with a whip until smooth. Add the egg, egg yolk, Calvados, and butter. Let rest 1 hour.
- Meanwhile, for the apple filling, for the Apple Filling: preheat oven to 450 degrees F.
- Toss the ingredients together in a bowl, and place in a baking dish. Bake for 30 minutes. Toss several times during cooking so the bottom does not burn. Let cool 1 hour.
- For the Burnt Almond Cream: preheat oven to 375 degrees F.
- Place the almonds on a sheet pan and cook until browned. Remove from pan immediately and place on paper towels. Let cool. Mix all ingredients in a small bowl and set aside.
- Heat a 6-inch non-stick pan. Spray with pan release and a small amount of crepe batter. Roll the pan until the bottom has a thin coat. Cook until bottom side is golden brown and flip. Cook for another few seconds and remove from pan onto paper towels.
- To assemble the gateaux, brush the bottom of a glass pie plate with a thin film of butter. Lay in one crepe best side up. Add a thin layer of almond cream. Lay the apples out on the cream. Top with another crepe. Press down to make level and repeat this until the gateaux is to the top or you have used all the ingredients. Make sure not to make the layers too thick, as the gateaux will slide when cut and served. Finish with a layer of apples and almond cream.
- Preheat oven to 375 degrees F.
- Bake for 30 minutes until bubbling and nicely browned on top. Cut into wedges and serve.
BIRD'S APPLE BREAD PUDDING (FLAMBE')
This is one of my most requested desserts over the holidays, but I make it often throughout the year.

Steps:
- Preheat oven to 400°F Wisk all custard ingredients. Set aside.
- In frying pan, melt butter. Add raisins, sugar, and apples. Cook on med heat for about 5 minutes.
- Add applejack brandy and CAREFULLY Flambe' till alcohol is cooked off. Then set pan aside to cool.
- Place bread slices in bottom of 9 x 13 pan. Place apple mixture over bread. Pour custard over the apple mixture. Place in water bath and bake for 45 minutes.
- Cool 20 minutes to serve warm, 3 hours in fridge to serve later or to serve chilled. Dust lightly with powdered sugar before serving.

APPLE FLAMBE
Steps:
- 1. Bake cake as directed for 8-inch rounds. Cool and split each layer in two. Spread pie filling, cinnamon, lemon rind between each layer.
- 2. Ring outer edge with whipped topping. Saute apple slices in butter and place on top of cake. Just before serving, heat brandy and pour over apples. Flame and serve immediately!
