Provided by Jen

Time 45m

Number Of Ingredients 13

2 1/2 cups flour (plus more for dusting)
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
10 tablespoons unsalted butter (chilled and cubed)
4 tablespoons shortening (chilled and cubed)
3/4 cup half and half (chilled)
1/2 cup sugar
1 1/2 teaspoons ground cinnamon
1/4 cup smooth peanut butter
4 Granny Smith apples (peeled and halved through equator)
2 egg whites (lightly beaten)
1 Recipe Easy Creamy Caramel Sauce

Steps:

  • Dough: Add flour, sugar, baking powder and salt to food processor and pulse until combined. Scatter chilled butter and shortening over flour and pulse until it resembles coarse crumbs. Transfer to a bowl and stir in half and half until dough forms. Turn out onto lightly floured counter and knead briefly until dough comes together. Press dough into a rough 10x5 rectangle and cut in half. Wrap each half in plastic wrap, and refrigerate until firm, about 1 hour or until you are ready to use.
  • Peanut Butter Filling: Preheat oven to 425F degrees. Line baking sheet with parchment paper and set aside.
  • Combine sugar and cinnamon in a small bowl. In a second bowl, combine peanut butter and 1/3 cup sugar mixture, and stir until completely combined. Using a melon baller, scoop out core/seeds of apples without piercing the bottom. Divide peanut butter mixture evenly among apple halves.
  • Lightly flour counter and remove only one dough rectangle from the fridge. Sprinkle dough with flour and working quickly, roll dough into a 12 inch square and cut int half and half again to form 4 6-inch squares. Place apple, cut side up, in center of each square. Lift dough corners, to meet on top of apple half and crimp edges to seal. Repeat with other refrigerated dough ball and remaining apples.
  • Line dumplings on prepared baking sheet and cut a vent hole in the top of each dumpling. Brush dumplings all over with egg whites and sprinkle with remaining sugar mixture. Bake until golden, 20-25 minutes. Let dumplings cool on sheet for 10 minutes.
  • Meanwhile, prepare Caramel Sauce. When ready to serve, drizzle desired amount of caramel over dumplings and serve with vanilla ice cream if desired.

OLD-FASHIONED APPLE DUMPLINGS

Old-Fashioned Apple Dumplings image

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

Time 1h30m

Yield 6

Number Of Ingredients 9

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

APPLE DUMPLINGS WITH RICH CINNAMON SAUCE

Apple Dumplings with Rich Cinnamon Sauce image

This dessert stands on its own, but a scoop of vanilla ice cream certainly wouldn't hurt.

Provided by Ben S.

Categories     Desserts     Fruit Dessert Recipes     Apple Dessert Recipes

Yield 8

Number Of Ingredients 9

5 tablespoons softened butter
1 cup packed dark brown sugar
2 teaspoons ground cinnamon
¼ cup chopped toasted pecans or walnuts
4 apples (any variety but Red Delicious) peeled, halved, and cored, a thin sliver cut off bottoms so apples sit flat
1 (15 ounce) container 9-inch pie crusts
1 egg white
2 tablespoons sugar
2 teaspoons cornstarch

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 425 degrees.
  • Mix 3 Tbs. of butter, 1/2 cup of brown sugar, 1 tsp. cinnamon and all the nuts in a small bowl. Spoon a portion of the mixture into each hollowed-out apple core.
  • For boxed pie crusts, unroll one of the dough sheets onto a floured work surface. Pulling on sides of dough to straighten rounded edges, roll it into an approximate 12-inch square, then cut the dough into four 6-inch squares; brush the perimeter of each square with egg white. Set an apple half on each square. Bring up the 4 corners of dough around the apple and pinch edges to seal. Place on a large (at least 18- by 12-inch) parchment-covered baking dish. Brush dumpling tops and sides with egg white; sprinkle with sugar. Repeat process with remaining apples and dough.
  • Bake dumplings until pastry sets and starts to turn golden brown, about 10 minutes. Reduce heat to 375 and bake until golden brown, about 20 minutes longer.
  • While apples bake, bring 1 cup water, the remaining 2 Tbs. butter, 1/2 cup brown sugar and 1 tsp. cinnamon to boil in asmall saucepan over medium heat. Dissolve cornstarch in 2 tsps. water; whisk into hot syrup for a smooth sauce. Cover, keep warm.
  • For each serving, spoon a portion of sauce on a dessert plate. Set apple dumpling over warm sauce; serve immediately.

APPLE DUMPLINGS WITH SPICED BOURBON CARAMEL SAUCE

Apple Dumplings with Spiced Bourbon Caramel Sauce image

This old fashioned dessert is certainly kicked up a notch with the spiced bourbon caramel sauce. My family LOVED this dessert.

Provided by Ann JONES

Categories     Fruit Desserts

Time 1h30m

Number Of Ingredients 23

SPICED BOURBON CARAMEL SOUCE
2 c water
1 c sugar
2 Tbsp bourbon
3/4 c packed brown sugar
4 tsp unsalted butter
1 tsp ground cinnamon
1/2 tsp freshly grated nutmeg
1/4 tsp ground cloves
3/4 tsp salt
DUMPLING DOUGH
2 c all-purpose flour
1/2 tsp salt
2/3 c shortening
2 to 3 Tbsp ice cold water
APPLES
6 tart apples (like granny smith) peeled and cored
1/4 c packed brown sugar
1/4 c sugar
1 tsp ground cinnamon
pinch salt
2 Tbsp unsalted butter, cut into 6 pieces
GARNISH WITH ICE CREAM

Steps:

  • 1. Pre-heat oven to 500 degrees F. To make the sauce, combine "sauce" ingredients in a small saucepan over medium heat; bring to boil, reduce to low simmer 5 minutes, cook and stir until sugar dissolves. Remove from heat.
  • 2. To make the dough, combine ingredients except the water and use a pastry blender to cut in shortening. Add 2 tablespoons of water and stir to combine. Add more water, 1 teaspoon at a time, until dough is sticking together but not sticky. Dump on a floured surface and knead, work into a ball. Divide and form into 6 balls. Wrap tightly in plastic wrap and refrigerate until ready to roll out. Roll each dough ball into a large square - large enough to wrap around the apple.
  • 3. Set an apple in the center of each square. Mix together sugar and cinnamon; sprinkle over apples. Bring sides of dough together to cover apples; press to seal. Place seam-side down in a greased 13"x9" baking pan. Pour caramel sauce over dumplings.
  • 4. Bake at 500 degrees for 5 to 7 minutes. Reduce heat to 350 degrees; bake for an additional 35 to 40 minutes, until golden and apples are tender. Serve with a scoop of ice cream and drizzled with sauce.

CARAMEL APPLE DUMPLINGS

Caramel Apple Dumplings image

Yes, yet another apple dumpling recipe! Taste it, is really good and you will like it. My mother used to make these for dinner parties when I was young. Found this on Diana's Desserts, 2003 Diana Baker Woodall posted in February of that year. The sauce can be made up to 3 weeks ahead, chill in airtight container and the dumplings can be made up to 1 day ahead - chill sauce, dumpling and egg mixture separately in airtight container. Just bake chilled dumplings as directed.
