BAKED APPLE DONUTS



Baked Apple Donuts image

Homemade apple donuts, packed with fresh apple and apple sauce. Coated with a crunchy cinnamon sugar. Baked and perfectly delicious!

4 cups all-purpose flour
4 teaspoons baking powder
1 ½ teaspoon salt
½ teaspoon baking soda
1 ½ tablespoon ground cinnamon
¼ teaspoon ground nutmeg
¼ cup unsalted butter, melted and cooled
2 eggs
1 cup sugar
½ cup buttermilk
1 cup unsweetened applesauce, from jar
1 ½ cup fresh apple, peeled and grated
unsweetened applesauce OR melted butter
1 cup sugar
1 tablespoon ground cinnamon
dash of ground nutmeg, optional

Steps:

  • Preheat oven to 375.
  • In a large bowl, whisk together flour, baking powder, salt, baking soda, cinnamon and nutmeg.
  • In another large bowl, stir together melted butter, eggs, sugar, buttermilk and applesauce. Stir in fresh apple.
  • Add 1/3 of the flour mixture to the egg mixture. Stir with wooden spoon. Add another 1/3 of flour mixture and stir. Add remaining flour and stir just until combined.
  • Spoon batter into a large ziplock bag. Seal and snip the corner off one end. Squeeze batter into the cavities of a donut pan sprayed with non-stick baking spray. Fill each cavity 2/3 to 3/4 of the way full. To help donuts keep their pretty shape when baking, use a clean finger to gently even out the batter in each cavity and clean off the center knob of the pan. Bake at 375 for 12 to 14 minutes, until the tops of donuts spring back slightly when touched. Let cool 5 minutes before removing from pan.
  • For the outside coating, combine sugar, cinnamon and nutmeg in a bowl. Using a pastry brush, cover each donut with a light coating of applesauce, or alternatively, dip quickly into melted butter. Then dip into cinnamon sugar and toss to coat. Let cool completely before eating, if possible. A second dip into the cinnamon sugar creates an extra crunchy coating. Best enjoyed the same day!

1 ½ cups apple cider

Steps:

  • Mix 1 cup sugar and 1 tablespoon cinnamon together in a resealable freezer bag.
  • Bring apple cider to a boil in a saucepan; cook, stirring occasionally, until cider has reduced to 1/2 cup, about 20 minutes. Remove from heat and cool.
  • Whisk 1 cup flour, 1 cup sugar, baking powder, 2 teaspoons cinnamon, and salt together in a large bowl. Mix butter, eggs, egg yolk, and cooled cider together in a separate bowl until smooth; stir into flour mixture. Stir remaining 2 3/4 cup flour into mixture until dough is smooth. Refrigerate dough for 10 minutes.
  • Heat oil in a large pot or deep-fryer to 375 degrees F (190 degrees C).
  • Turn dough onto a well-floured work surface using floured hands; pat dough into 1/2-inch thickness. Cut dough into doughnuts using a doughnut cutter or 2 round cookie cutters (1 large and 1 small). Gather scraps and re-pat dough to cut out as many doughnuts as possible.
  • Carefully slide doughnuts, working in batches, into hot oil; fry until doughnuts rise to the surface and begin to brown, 2 to 3 minutes. Flip doughnuts and continue frying until opposite side is browned, about 1 1/2 minutes.
  • Remove doughnuts with a slotted spoon and place on a paper towel-lined plate to cool until easily handled, about 1 minute. Toss cooled doughnuts in the reserved bag of cinnamon-sugar. Bring oil back to 375 degrees F (190 degrees C) before frying next batch.

Steps:

  • For the batter, mix together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • Mix in the egg and buttermilk.
  • Gradually stir in the milk.
  • Next, core the apples and slice vertically into doughnut-size rings. Each apple should give you about 3 rings.
  • Heat the oil in a deep frying pan to 180˚C (350°F).
  • Evenly coat each apple slice in the batter mix.
  • Carefully lay the doughnuts into the oil and fry for a few minutes on each side, until golden brown.
  • Drain on paper towel before coating in sugar.

2 cups apple cider
3 cups all-purpose flour
1/2 cup whole wheat flour
2/3 cup packed brown sugar
2 teaspoons baking powder

2 large eggs, room temperature

  • In a small saucepan, bring cider to a rapid boil; cook over high heat until reduced by half, about 12 minutes. Cool completely., Whisk together flours, brown sugar, baking powder, salt, baking soda and spices. In a separate bowl, whisk eggs, melted butter and cooled cider; stir into dry ingredients just until moistened (dough will be sticky). Refrigerate, covered, until firm enough to shape, about 1 hour., Divide dough in half. 1/3 cup chocolate-hazelnut spread
1/3 cup peanut butter
1/3 cup strawberry Greek yogurt
Suggested toppings: small slices of strawberries, sprinkles, granola and chocolate chips

Steps:

  • Slice the top and bottom from each apple and discard. Slice the apples into 1/2-inch circles. Use a biscuit cutter or small melon baller to cut a hole in the center of each to make a "donut."
  • Put the chocolate-hazelnut spread and peanut butter in separate pastry bags (or put in separate ziptop bags and snip off a corner).
  • Top the apple rings with either the chocolate-hazelnut spread, peanut butter or yogurt. (Pipe the chocolate-hazelnut spread or peanut butter, then spread carefully with a knife or offset spatula; spread the yogurt with a spoon.) Garnish each with a variety of the toppings.

CLASSIC APPLE FRITTERS DOUGHNUTS

These are best on the day they are made, but they freeze beautifully if you can't eat them all up right away. A deep fryer is recommended or alternately, at least, a thermometer so you can monitor oil temperature to ensure good results.

1 1/2 Tbsp active dry or instant yeast
1/2 cup warm water
2 tsp white sugar
2 cups bread flour (plus more, as needed (can use all purpose flour. See Note 1))
1/4 cup white sugar
1/4 tsp baking powder
1/4 tsp mace ((can substitute nutmeg))
1 tsp salt
2 Tbsp shortening or lard ((can use vegetable oil. See Note 2))
1 large egg
1/4 tsp vanilla
2 medium tart apples (peeled, cored and chopped into 1/2-inch pieces *see Note 3)
1/4 cup white sugar
2 tsp freshly squeezed lemon juice
4 tsp cinnamon
1 Tbsp bread flour
2 cups confectioners/icing sugar
1 1/2 tsp light corn (or golden syrup)
1/4 tsp salt
1/4 tsp vanilla
1 Tbsp white sugar
1/3 cup water
vegetable oil (for frying (or similar, neutral-tasting oil))

Steps:

  • For the dough: In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, add the yeast to the warm water. Add the sugar, stir and let stand 5 minutes.
  • Meanwhile, in a large bowl, whisk together the flour, sugar, baking powder, mace and salt. Set aside.
  • When yeast is ready, add the shortening, egg and vanilla and mix with the PADDLE attachment on low speed for 1 minute (to break up the shortening). Add about 1/3 of the flour mixture and mix until combined. Add a second third of the flour mixture and again, mix until combined. Switch to the dough hook and add the remaining flour mixture. Knead with the hook until all that flour is incorporated. If dough is sticky, start adding flour in 1 Tbsp. increments, until the dough comes together, clears the bottom of the bowl and is becoming smooth. Knead on medium for about 2 minutes more. The dough should be smooth and but still a bit moist (but not sticky).
  • Place the dough in an oiled bowl, cover with plastic wrap and set-aside to rise until doubled in size (about 1 hour).
  • Meanwhile, make the apple filling. Place the diced apples, sugar and lemon juice into a skillet over medium heat. Cook, stirring often, until all the liquid has evaporated and the apples are softened, about 5 minutes. Remove to a bowl to cool completely before using.
  • *See the video above this Recipe Card for a complete demonstration of the following shaping and cutting process.
  • When bread has finished it's first rise, remove to a lightly floured surface and roll into a 10-inch x 10-inch square. Sprinkle the apples over one half of the dough. Sprinkle all the cinnamon evenly over the apples and then sprinkle with the 1 Tbsp. flour. Fold the empty side of the dough over the side with the apples. Using a sharp knife or a bench scraper, cut the dough into 1/2-inch wide strips from top to bottom. Repeat cutting 1/2-inch strips from side to side, so you end up with small chunks of dough. Gather up the dough bits and cut some more, from different directions, until it is in small chunks and evenly mixed with cinnamon/apples/dough etc.
  • Using floured hands, roughly shape into a 12-inch long x 3-inch wide log. Cut the log into 1 inch slices. With each slice, roughly pat into a disc, about the size of your palm (use some additional flour, as needed, if your dough is sticky). Place the dough discs onto a parchment lined or floured baking sheet, leaving a couple of inches of room around each. Repeat with all 12 dough pieces. Cover with plastic wrap or a clean tea towel and set-aside to rise until doubled again, about 30-45 minutes (approximately. Will vary depending on room temperature. The fritters should double in size and look puffy).
  • When the fritters are almost risen, prepare the glaze. Add the icing sugar, corn syrup, salt and vanilla in a large bowl. Set aside.
  • In a small saucepan, bring the water and white granulated sugar to a boil over high heat then reduce heat to medium and simmer for 1 minute. Add this mixture to the bowl with the icing sugar and whisk until all the sugar and has been incorporated and the mixture is smooth. (You don't want any lumps :) Cover with plastic wrap and set aside until needed.
  • When dough is about ready to cook, heat oil in a deep fryer to 370° (alternately, use a heavy deep pot and a thermometer to monitor temperature). Fry each donut until deep golden on the underside (1 1/2 - 2 minutes), flip over and fry the other side. (*time and temperature may need to vary. Watch closely the first few to determine timing. If they seem to be browning too quickly, lower temperature slightly or likewise, if they seem to be taking too long to brown, raise the temperature slightly). Remove to a cooling rack placed over a baking sheet. If there are any loose apples in the frying oil, scoop out between batches so you don't have any apple pieces burning in the oil and causing bitter flavours.
  • While the fritters are still quite warm (as soon as they are cool enough to handle), dip into prepared glaze and return to cooling rack to cool completely. *Stir the glaze mixture regularly during the process, to keep it nice and smooth.

1 and 1/2 cups (360ml) apple cider
2 cups (250g) all-purpose flour (spoon & leveled)*
1 teaspoon baking soda
3/4 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon apple pie spice*
1/4 teaspoon salt
2 Tablespoons (30g) unsalted butter, melted
1 large egg, at room temperature
1/2 cup (100g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
1/2 cup (120ml) milk, at room temperature*
1 teaspoon pure vanilla extract
1 cup (200g) granulated sugar
3/4 teaspoon ground cinnamon
3/4 teaspoon apple pie spice*
6 Tablespoons (85g) unsalted butter, melted

Steps:

  • Stirring occasionally, simmer the apple cider in a small saucepan over low heat until you're left with about 1/2 cup. Start checking at 10 minutes, 15 minutes, 20 minutes, etc until you have 1/2 cup (120ml). Mine takes about 20 minutes. If there are any spices or solids on top of your reduced apple cider, leave them. Set aside to cool for 10 minutes.
  • Preheat oven to 350°F (177°C). Spray donut pan with non-stick spray. Set aside.
  • Whisk the flour, baking soda, baking powder, cinnamon, apple pie spice, and salt together in a large bowl. Set aside.
  • Whisk the melted butter, egg, brown sugar, granulated sugar, milk, and vanilla extract together. Pour into the dry ingredients, add the reduced apple cider, and whisk everything together until smooth and combined. Batter will be slightly thick.
  • Spoon the batter into the donut cavities-for ease, I highly recommend using a large zipped-top bag. Cut a corner off the bottom of the bag and pipe the batter into each donut cup, filling about halfway.
  • Bake for 10-11 minutes or until the edges and tops are lightly browned. To test, poke your finger into the top of the donut. If the donut bounces back, they're done. Cool donuts for 2 minutes then transfer to a wire rack. Re-grease the pan and bake the remaining donut batter.
  • Combine the granulated sugar, cinnamon, and apple pie spice together in a medium bowl. Once cool enough to handle, dunk both sides of each donut in the melted butter, then generously in the apple spice topping.
  • Donuts are best served immediately. Leftovers keep well covered tightly at room temperature for up to 2 days or in the refrigerator for up to 5 days.

150g soft cheese
2 tsp honey
3 apples (use a crunchy eating variety)
3-4 tbsp almond or peanut butter (optional)
coloured sprinkles , to decorate

Steps:

  • Mix the soft cheese with the honey and set aside. Peel the apples, then slice each through the core into five or six rings, about 1cm thick. Use an apple corer or small round biscuit cutter to stamp out a circle from the middle of each slice, removing the core and creating 'doughnut' shapes. Pat the slices dry using kitchen paper - they should be as dry as possible to help the toppings stick.
  • Spread some nut butter over the slices, if using, then top with the sweetened soft cheese. Decorate with the sprinkles and serve.

1 cup 2% milk (warmed (about 120º-125º Fahrenheit))
1/2 cup salted butter (melted)
2 large eggs
1/2 cup granulated sugar
1 teaspoon salt
4- 4 1/2 cups bread flour
2 1/4 teaspoons Red Star Platinum Superior Baking Yeast** ((instant yeast))
6 cups Granny Smith apples (peeled, cored, and chopped (about 6 medium apples))
3/4 cup granulated sugar
1/4 cup apple juice
2 tablespoons cornstarch
1 tablespoon ground Cinnamon
1 tablespoon salted butter
1 1/4 cups powdered sugar
1/4 cup heavy cream
1/4 cup apple juice
1 teaspoon vanilla bean paste
1/2 teaspoon salt
1 quart vegetable oil

Steps:

  • Pour the warm milk, eggs, melted butter, sugar and salt in the bowl of a stand mixer.**
  • Add in two cups of flour and yeast. Use the beater blade to mix just until combined. Then add in another 2 cups of flour (save the other 1/2 cup and add only if you need it later).
  • Mix again using the beater blade just until the ingredients are barely combined. Allow the mixture to rest for 5 minutes so the flour has time to soak up the liquids.
  • Scrape the dough off the beater blade and remove it.
  • Attach the dough hook. Beat the dough on medium speed, adding in up to 1/2 cup more flour if needed to form a dough. Knead for 5-7 minutes or until the dough is elastic and smooth. **The dough should be tacky and will still be sticking to the sides of the bowl. That's ok! Don't be tempted to add more flour at this point. We generally add about 4 1/2 cups, but start with 4 cups.
  • Spray a large bowl with cooking spray. Use a rubber spatula to remove the dough from the mixer bowl and place it in the greased large bowl.
  • Cover the bowl with a towel or wax paper.
  • Set the bowl in a warm place and allow the dough to rise until nearly double.
  • Place the sliced apples into a medium saucepan. Add the sugar.
  • Cook the apples over medium heat, stirring often, for about 10 minutes until they start to soften.
  • In a small measuring cup, whisk together the apple juice and cornstarch to make a slurry.
  • Pour the cornstarch slurry into the apples. Mix well. Add the cinnamon and butter. Stir until the mixture starts to thicken, then remove from heat.
  • Allow the mixture to cool completely. I transfer mine to another bowl and then place them in the fridge to speed this up.
  • Turn the risen dough out onto a well-floured surface.
  • Pat it into a rectangle that's about 2 inches thick.
  • Spread half of the now cool apple mixture in the center of the dough. Fold the top and bottom of the dough over the mixture. Turn the dough, so the top and bottom are now on the sides of the dough.
  • Pat the dough out into another rectangle that's 2 inches thick.
  • Spread the remaining apple filling over the center of the dough. Again, fold the top and bottom of the dough over the filling.
  • While the dough rests, heat the oil in a large Dutch oven on medium until it reaches 375 degrees F.
  • Pat the dough out to 1/2-inch thickness.
  • Using a pizza cutter, cut the dough into a grid pattern, making 1-inch strips.
  • Then make cuts 1" wide the other direction so that you end up with a bunch of squares.
  • Gather the dough bits and cut a little bit more from different directions.
  • Flour your hands and put a little bit more flour down on the pastry mat if needed. Then form the cut dough and apples into a log about 14" long.
  • Use the cutter to slice about 14 slices. Use your hands to form each fritter into a ball that looks like it would hold together, adding a little more flour if needed.
  • Allow the fritters to rest while the oil heats.
  • Heat the oil in a large skillet (or use a deep fryer) to 375º Fahrenheit. Use a thermometer to test the oil temp because it is important that it stays at 375ª.
  • Carefully drop each fritter into the warm oil. Do not overcrowd the pan, or the oil temperature will drop too quickly. Add 4 or 5 fritters at a time.
  • Fry for about 3 minutes or until golden brown.
  • Using a slotted spoon carefully turn the fritters over and cook until the other side is also golden brown, about 4 to 5 minutes.
  • Remove the fritters to a baking sheet covered in paper towels and fitted with a drying rack.
  • Repeat the process of frying the fritters allowing the oil to return to 375 degrees F between batches.
  • Whisk together the confectioners' sugar, cream, apple juice, vanilla bean paste, and salt. The glaze should be runny enough to coat the fritters so add more juice a little at a time until it is able to be drizzled.
  • After removing each batch from the oil, allow to sit for about 5 min. Dip into the glaze.

Steps:

  • Reduce the apple cider: In a small saucepan, bring apple cider to a gentle boil and let simmer over medium heat until thick and reduced to about 1/3 cup (80 ml), 15-25 minutes. Set aside to cool.
  • Preheat oven to 350°F/180°C. Grease donut pans with butter or nonstick spray. Set aside.
  • In a large bowl sift together flour, baking powder, baking soda, spices, and salt. Set aside.
  • In a small bowl whisk together the egg, granulated sugar and brown sugar, until well combined. Whisk in the melted butter. Add the reduced apple cider, buttermilk and vanilla extract, and mix until combined. Pour the mixture into the flour mixture and whisk just until combined and smooth. Don't overmix the batter.
  • Divide the mixture between the donut cavities, filling about halfway full. I recommend using a piping bag to pipe the batter, it will be much easier and less messy. Bake for about 10 minutes until a toothpick inserted into the center of the donuts comes out clean. Let donuts cool in the pan for 5 minutes and then transfer them to a wire rack.
  • Meanwhile, make the topping: In a medium bowl mix together the sugar, cinnamon, and nutmeg. Once cool enough to handle, for each donut, dip both sides in melted butter and then generously dip into the sugar mixture.
  • Donuts are best served immediately. Leftovers can be kept in the fridge for up to 3 days. Serve them warm or at room temperature.

1/3 cup apple cider concentrate (for more depth of flavor) or apple cider
1/4 cup buttermilk
1 teaspoon vanilla
1 stick (4 ounces) unsalted butter, at room temperature
1/2 cup brown sugar
1/2 cup granulated sugar
2 large eggs, at room temperature
1 stick (4 ounces) unsalted butter, melted
1 cup granulated sugar mixed with 1 teaspoon cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Spray four 6-cavity donut pans with nonstick baking spray.
  • In a large mixing bowl, combine the flour, baking powder, salt, cinnamon, nutmeg and lemon zest. Whisk for 30 seconds to distribute the leavening.
  • In a liquid measure cup, combine the cider, buttermilk and vanilla.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, brown sugar and granulated sugar. Mix on high until light and fluffy, 3 to 4 minutes. Scrape down the bottom and sides of the bowl.
  • Add the eggs, one at a time, mixing well between each addition. Scrape the bottom and sides of the bowl.
  • With the mixer on low, add one-third of the flour mixture and then half of the cider mixture. Continue alternating between the two until the batter is just combined. Remove the bowl from the stand mixer and, using a large rubber spatula, fold the batter a few times to make sure the ingredients are well distributed.
  • Transfer the batter to a piping bag or a large zip-close bag with a corner snipped off, and pipe into two of the donut pans. Top each pan with a second, inverted pan and use clips to hold them in place. (Some pans come with clips; otherwise, use metal hardware or paper clips.) Bake until the cake just springs back when gently touched, 15 to 20 minutes.
  • Turn the donuts out onto a cooling rack; immediately brush with melted butter, then dip in the cinnamon sugar.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 12-cavity mini doughnut pans.
  • Combine flour, sugar, baking powder, salt, nutmeg, and cinnamon in a large bowl; mix together with a fork until combined. Add shortening and mix with the fork until broken up into small clumps.
  • Mix together apples, milk, and eggs in a separate bowl. Add to flour mixture and stir just until blended. Spoon batter into the prepared doughnut pans.
  • Bake doughnuts in the preheated oven until slightly browned on the bottoms, about 10 minutes. Remove from pan and transfer to a wire rack to cool completely.
  • While doughnuts are cooling, place melted butter for topping in a shallow bowl. Mix together 1 cup sugar and 2 teaspoons cinnamon in another shallow bowl. Dip cooled doughnuts in butter and then in sugar mixture to coat.
