Easy Apple Crumble Recipe with Muesli image

An easy apple crumble recipe with that classic crunch topping you know and love. The soft baked cinnamon apple filling and muesli crumble are so quick to make. Serve with cream or ice cream for a deliciously cosy dessert!

4 green apples (such as granny smith, medium sized, thinly sliced)
1 tsp lemon juice
1 tsp raw sugar
1 tsp cornstarch / cornflour
1 tsp cinnamon
1 cup muesli (sub with oats or granola)
1 cup plain flour / all purpose flour (plus 55 g in reserve)
3/4 cup butter (room temperature)
1/2 cup raw sugar (plus extra to garnish the top)

Steps:

  • Preheat the oven to 180˚C (356˚F)
  • Line a deep, circular baking dish or cake dish with half of the apple slices. Drizzle with lemon juice, then dust with half of the cinnamon, half of the raw sugar and half of the cornstarch. Top with remaining apple slices, then sprinkle over with the remaining cinnamon, raw sugar and cornstarch.
  • Pop the muesli in a mixing bowl with the sugar and 1 cup of the flour. Melt the butter in a small dish then pour it over the dry ingredients. Stir to combine. Tip: If needed, you can add a little extra flour until you end up with a slightly moist, mostly crumbly texture where the mixture holds its shape but isn't too sticky.
  • Spoon the crumble over the top of your apple slices. Tip: Gently press down the surface with a spoon until it's nice and even, OR leave it rough for extra crunch once baked.
  • Garnish your crumble with a little extra sugar. Bake for 30-45 minutes or until the crumble topping is golden brown and the apples are soft. Serve hot with cream, custard or vanilla ice cream!

1 1/2 cups store-bought oat granola, such as Bear Naked Maple Pecan
2 tablespoons all-purpose flour
1 tablespoon plus 1/4 cup sugar
5 crisp apples, such as Fuji or Gala (about 2 1/2 pounds), peeled, cored and cut into 1/2-inch-thick slices
1/2 teaspoon pumpkin pie spice
1 tablespoon fresh lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a medium nonreactive and ovenproof skillet over medium heat. Add the granola, 1 tablespoon of the flour and 1 tablespoon sugar and toss until the sugar is dissolved and the granola is well coated. Transfer to a bowl. (Reserve the skillet.)
  • Pour the apples into the skillet; toss with the pumpkin pie spice, lemon juice and remaining 1/4 cup sugar. Cook, stirring occasionally, until the apples are juicy and slightly softened, 5 to 7 minutes. Stir in the remaining 1 tablespoon flour. Scatter the reserved granola mixture evenly over the top and transfer the skillet to the oven. Bake until the crisp is bubbling and the apples are tender, 35 to 40 minutes. Serve warm.

6 medium granny smith apples or 6 medium other firm apples
1/2 cup packed brown sugar
1 teaspoon cinnamon
2 tablespoons lemon juice
3/4 cup butter, cubed and softened (or margarine)
3 -4 cups granola cereal (with or without raisins)

Steps:

  • Preheat oven to 400F.
  • Core, peel (or not) and slice apples.
  • In a large bowl, stir together apples, brown sugar, lemon juice and cinnamon.
  • Put in a 9"x9" casserole dish and dot with 1/3 of the butter.
  • Place granola in a plastic bag and crush with a rolling pin to break it up.
  • Place granola in a bowl and add the rest of the butter.
  • Using a fork, push the butter into the crushed granola, working it through.
  • Sprinkle the mixture over the apples.
  • Cover the dish with foil and bake for 40 to 45 minutes.
  • Remove foil and bake about 10 minutes longer or until the topping has browned.
  • Let stand for approximately 10 minutes then serve with vanilla ice cream.

4 dessert apples, peeled, cored and thickly sliced
½ lemon, juiced
2 tbsp coconut sugar, plus a little extra to sprinkle

Steps:

  • Heat the oven to 170c / 150c fan /Gas Mark 4. Butter and line a 20cm round tin with greaseproof paper, grease again to prevent the cake sticking.
  • To make the topping, melt the butter, then mix in the granola, stir until well mixed and set aside. In a large shallow pan heat 25g butter, add 1tbsp caster sugar and the apple wedges. Cook for about 10 minutes until the apples are soft and golden, set aside to cool.
  • Beat together the remaining butter and caster sugar until pale, soft and fluffy. Gradually mix in the eggs. Sieve together the flour and baking powder, add to the egg mixture and then carefully, using a large metal spoon fold in, take care not to 'knock' too much of the air out of the mixture. Add the creme fraiche (or mascarpone cheese) and mix until smooth.
  • Spoon around two thirds of the cake mixture into the tin, level and then scatter over one third of the granola mixture and a quarter of the berries. Top with the remaining cake mixture and level again. Then scatter on another third of the granola and arrange the apple wedges and remaining blackberries on top. Finally top with the remaining granola mixture.
  • Bake for about 1.5 hours. If the cake looks like it is browning too quickly then cover it loosely with a piece of greaseproof paper, which will prevent the top burning.
  • Cool the cake in the tin for 10 minutes and then transfer to a serving plate or just cut it up and eat it right away.
