APPLE CRUMBLE

Apple Crumble image

Recipe video above. A filling of tender, cinnamon laced apples topped with a nubbly crunchy, golden topping. You'll love how this Apple Crumble isn't overly sweet, and how the filling is syrupy and jammy, rather than watery or dry. The smell when this is cooking is everything! SWEETNESS - see Note 4.

Time 55m

Number Of Ingredients 13

2 lb / 1kg Granny Smith Apples( green apples), weight before peeling
1 tbsp white flour

1 cup rolled oats / oatmeal ((quick cooking is ok))

Categories     dessert

Yield Serves 6 to 8

Number Of Ingredients 14

2 1/2 pounds assorted apples, peeled, cored and in 1/2-inch slices
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon freshly grated ginger
2 tablespoons Minute Tapioca (flour or cornstarch can be substituted, but I prefer tapioca)
Pinch of kosher salt
1 1/2 cups all-purpose flour
1 1/2 cups old-fashioned rolled oats (not instant)
1 1/4 cups firmly packed dark brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon kosher salt
10 tablespoons unsalted butter, slightly softened and cut into small cubes

Steps:

  • To make the filling, gently toss together the apples, sugar, lemon juice, cinnamon, nutmeg, ginger, tapioca and a pinch of salt in a large bowl. Spoon the filling into a 9-inch deep-dish pie pan.
  • To make the crumb topping, stir together the flour, oats, dark brown sugar, cinnamon and salt in a medium bowl. Blend in butter with your fingertips, fork, or pastry blender until mixture forms pea-size clumps.
  • Spoon topping evenly over fruit filling and bake on a middle rack in a preheated 375 degree F oven until fruit is bubbling and the top is nicely browned, about 60 minutes. Let the crumble cool for about 10 minutes before serving.

WHISKEY-APPLE CRUMBLE PIE

Whiskey-Apple Crumble Pie image

This whiskey-apple crumble pie calls for the apple slices to be sautéed before they are put into the crust and baked. The requirement that the apples be tart should be taken seriously, so the filling will stand up to the sweet crumble topping.

Provided by Florence Fabricant

Categories     pies and tarts, dessert

Time 2h

Yield 8 servings

Number Of Ingredients 12

Dough for a 9-inch single crust pie (see recipe)
3/4 cup all-purpose flour
3/4 cup packed light brown sugar
1/4 cup granulated sugar
1 teaspoon cinnamon
Salt
9 tablespoons cold unsalted butter
1/2 cup chopped pecans
2 pounds tart apples, peeled, cored and sliced 1/4-inch thick
Pinch ground cloves
Pinch ground nutmeg
2 tablespoons whiskey or bourbon

Steps:

  • Preheat oven to 400 degrees. Roll out dough and line pie pan. Prick dough with fork, then line with foil. Fill bottom with pastry weights or dry beans. Bake 8 minutes, remove foil and weights and bake 8 to 10 minutes longer, until pastry looks dry and is barely starting to color. Remove from oven and let cool.
  • Place flour, 1/4 cup brown sugar, granulated sugar, 1/2 teaspoon cinnamon and 1/2 teaspoon salt in food processor and process briefly to blend. Dice 6 tablespoons butter and add, along with pecans; pulse until mixture resembles breadcrumbs. Set aside. Increase oven temperature to 450 degrees.
  • Melt remaining butter in a large skillet. Add apple slices and sauté over medium heat about 5 minutes, until a bit softened around edges, with some just starting to brown. Remove from heat. Mix remaining brown sugar and cinnamon with a pinch of salt, the cloves and nutmeg. Pour over apples and fold together. Fold in whiskey.
  • Pour contents of pan into crust and top with crumbs. Place pie pan on a baking sheet, bake 10 minutes, lower heat to 350 degrees and bake about 40 minutes longer, until topping browns and juices bubble. Allow pie to cool completely before cutting. Pie can be made a day in advance and warmed for serving.

THE BEST APPLE CRUMBLE

The best apple crumble image

You can't beat a traditional apple filling topped with crispy, buttery crumble - classic comfort food at its best

Provided by Good Food team

Categories     Dessert, Treat

Time 55m

Number Of Ingredients 8

575g Bramley apple (3 medium apples), peeled, cored and sliced to 1cm thick
2 tbsp golden caster sugar
175g plain flour
110g golden caster sugar
110g cold butter
1 tbsp rolled oats
1 tbsp demerara sugar
double cream , clotted cream or custard, to serve

Steps:

  • Heat the oven to 190C/170 fan/gas 5.
  • Toss 575g peeled, cored and sliced Bramley apples with 2 tbsp golden caster sugar and put in a 23cm round baking dish at least 5cm deep, or a 20cm square dish. Flatten down with your hand to prevent too much crumble falling through.
  • Put 175g plain flour and 110g golden caster sugar in a bowl with a good pinch of salt.
  • Slice in 110g cold butter and rub it in with your fingertips until the mixture looks like moist breadcrumbs. Shake the bowl and any big bits will come to the surface - rub them in. Alternatively, pulse in a processor until sandy (don't over-process).
  • Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out.
  • Gently press the surface with the back of the fork so the crumble holds together and goes crisp, then lightly drag the fork over the top for a decorative finish.
  • Sprinkle 1 tbsp rolled oats and 1 tbsp demerara sugar over evenly, if you wish.
  • Set on a baking tray and put in the preheated oven for 35-40 minutes, until the top is golden and the apples feel very soft when you insert a small, sharp knife. Leave to cool for 10 minutes before serving.

APPLE CRUMBLE

Apple Crumble image

Apple crumble is one of those desserts all cooks should have in their back pockets. It's a no-fuss favorite that works as well for dessert with a big scoop of ice cream as it does for breakfast with some plain, whole-milk yogurt. This recipe starts with a hefty crumb mixture, studded with pecans and old-fashioned rolled oats. Plenty of butter and sugar ensure the crumb stays crisp after baking, creating a delightful textural contrast between topping and tender fruit. Using a mix of sweet and tart apples that soften at slightly different rates also keeps this recipe interesting.

Time 1h10m

Yield 8 to 10 servings

Number Of Ingredients 9

12 tablespoons/170 grams unsalted butter, melted, plus more for buttering the pan
1 1/2 cups/180 grams all-purpose flour
1 1/2 cup/300 grams packed dark brown sugar, divided
1 cup/80 grams old-fashioned rolled oats
1 cup/113 grams pecans, chopped
1 teaspoon kosher salt
3 1/2 pounds mixed apples, such as Granny Smith, Macintosh, and Pink Lady, peeled, cored, and cut into 1/2-inch wedges (about 8 medium apples)
1 tablespoon ground cinnamon
2 tablespoons fresh lemon juice

Steps:

  • Heat the oven to 350 degrees. Butter a 13-by-9-inch baking dish. In a medium bowl, combine the flour, 1 cup/200 grams of the brown sugar, oats, pecans and salt. Add the butter, and stir with a fork until the crumbs are evenly moistened.
  • Add the apples to the buttered baking dish and toss with the remaining 1/2 cup/100 grams brown sugar, cinnamon and lemon juice. Spread the apples into an even layer. Press the crumb mixture together to create clumps of different sizes, and sprinkle on top of the apples. Transfer to the oven, and bake until the apples are tender and the crumb topping is crisp and deep golden brown, about 50 to 60 minutes. Serve warm or at room temperature.
