Apple Crisp image

One of the definitive desserts of fall, apple crisp is easy and economical. Test kitchen tip: Empire, Gala, or Braeburn apples are especially good in this recipe.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 1h25m

Number Of Ingredients 9

3/4 cup all-purpose flour, (spooned and leveled)
1/4 cup packed light-brown sugar
1/2 teaspoon salt
1/2 cup plus 2 tablespoons granulated sugar
8 tablespoons (1 stick) unsalted butter, cold, cut into small cubes
1 cup old-fashioned rolled oats (not quick-cooking)
3 pounds apples, such as Empire, Gala, or Braeburn, peeled, cored, and cut into 1/2-inch chunks
2 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
  • In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.

HOW TO MAKE THE BEST APPLE CRISP RECIPE

How to Make The BEST Apple Crisp Recipe image

This easy apple crisp recipe with it's brown sugar and oatmeal crumble streusel will take you right back to the best days of childhood.

Provided by Heidi

Categories     Dessert

Time 1h30m

Number Of Ingredients 11

6 cups Granny Smith apples (green apples) (, peeled, cored, and cut into 1/4" slices (about 9-10 green apples))
1 cup sugar
1 1/2 tablespoons all-purpose flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon kosher salt
1 1/2 cups old-fashioned oats
1 1/2 cups all-purpose flour
1 1/2 cups brown sugar
1 teaspoon baking powder
1 cup melted butter

Steps:

  • Preheat the oven to 350°F.
  • In a large mixing bowl, toss the sliced apples with the sugar, 1 1/2 tablespoon flour, salt cinnamon, and nutmeg, and set aside for the sugar to soften the apples and macerate, creating a light syrup. In a smaller mixing bowl, toss the oats, 1 1/2 cups flour, brown sugar, and baking powder together, then use your fingers to mix in the melted butter, gently making small clumps where you can.
  • Layer the sugared apples and their juice in a 9 X 13 baking dish and sprinkle evenly with the oatmeal mixture, but don't pack it tightly. Bake uncovered for 50-60 minutes until the apples are soft and tender and the sauce has thickened and is bubbly. If the crisp seems to be browning too much, cover with foil for the remaining cooking time.
  • Let the apple crisp cool for 20-30 minutes before serving for the caramel sauce to thicken. Divide in bowls and top with vanilla ice cream or whip cream, and serve.

HEALTHY APPLE CRISP RECIPE (GF & VEGAN)

Healthy Apple Crisp Recipe (GF & Vegan) image

This recipe for apple crisp is one of my all-time favorites! It's easy to put together and everyone loves it. If you like, please leave a star rating in the comments below to help other people in our community. Note: Use an 8x8 baking dish or equivalent.

Provided by Elizabeth Rider

Categories     Dessert

Time 1h20m

Yield 8

Number Of Ingredients 19

4 firm tart apples (about 1 1/2 pounds), such as McIntosh, Granny Smith or Pink Lady, peeled* and sliced thin
1/2 teaspoon grated orange zest (optional but recommended)
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice (zest the lemon first)
2 tablespoons water (or bourbon or brandy for an adult twist)
2 teaspoons arrowroot starch OR 1 tablespoon gluten-free flour mix
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg (OR pumpkin pie spice)
1/2 teaspoon high-quality vanilla extract
1 big pinch of fine sea salt
1/2 cup real maple syrup (OR honey)
1 cup almond flour
1 cup whole rolled oats (use certified gluten-free oats if gluten-free is desired)
1/2 cup chopped pecans
1/3 cup real maple syrup (OR honey)
1/3 cup coconut crystals (a.k.a coconut sugar)
1/2 teaspoon cinnamon
1/2 teaspoon fine sea salt
3 tablespoons cold unsalted grass-fed butter OR vegan butter (such as Earth Balance), diced, OR 1/2 cup coconut oil

Steps:

  • Preheat the oven to 350 degrees F and lightly grease your baking dish with coconut oil on a paper towel, or a healthy olive oil cooking spray.
  • Peel the apples if desired. (I usually peel about half and leave the skin on the other half). Slice the apples into thin (about 1/8-inch) slices. Place the apples in a large mixing bowl, add the rest of the ingredients for the filling, and toss to cover all of the apple slices. Pour into an 8x8 inch (or equivalent size) baking dish. Put the apples-uncovered-in the preheated oven for 15 minutes while you make the topping to allow them to start releasing their juices.
  • Make the topping. Combine all ingredients except the coconut oil (or substitute) and mix well until the mixture is in large crumbles. Use your fingers or a knife to sprinkle chunks of the coconut oil (or substitute) into the mixture; it should still resemble large crumbles. Carefully remove the apples from the oven, then sprinkle the topping mixture evenly over the fruit, covering the fruit completely. Place the dish back in the oven.
  • Bake for 40 more minutes to 1 hour, until the top is golden brown and the fruit is bubbly. Check the topping 30 minutes after putting it in the oven. The topping should be crispy and lightly golden. If the topping is getting too dark or crispy, cover with foil for the rest of the baking time. The apples will continue to release juice and soften, so bake no less than 50 minutes total for the best texture. Your apple crisp is not done until the fruit is bubbling around the edges of the dish. Serve warm with coconut whipped cream or vanilla ice cream of your choice.

  • Position rack in lower third of the oven; preheat to 350°F. Liberally butter a 2-quart, 2-inch deep baking dish.
  • To make the filling: Combine orange zest, juice, and chopped apricots in small bowl. Let apricots soften while you prepare apples. Mix sugar and cinnamon in large bowl. Quarter and core the apples. Cut each quarter into 3 or 4 chunks. Toss the apples with the cinnamon sugar. Stir in the apricots and juice.
  • Scrape the mixture into the buttered baking dish and spread it evenly. Distribute the crumbly topping evenly over the apples. Bake for 1 1/4-1 1/2 hours, until the crisp is browned on top and the juices are bubbling and thickened. (If your apples were a little dry, you may not see any juices toward the end of the baking time; if so, the browned topping is your cue to doneness.) Serve warm or cold. Top with ice cream or frozen yogurt, if desired.

  • Any Type of Apple Will Work</del> It's always best to use a mix of apples: our test kitchen recommends using a mix of tart and sweet apples.
  • Skin Doesn’t Make a Difference</del> Apples should always be peeled and cored. Don't skip this step: Leaving the skins on the apples only messes with your crisp’s consistency and texture.
  • It’s Done When It’s Golden Brown</del> Using a paring knife, test the tenderness of your apples. If you meet resistance with the apples but your topping is still brown, cover the crisp with foil so the apples will bake without your topping burning.
  • The Filling Doesn’t Need a Thickener</del> Your topping is crumbly—you don't want your filling to be crumbly, too.
  • You Can’t Add Too Much Sugar</del> You want to make sure you have a nice balance of the sweet and tart in your dessert.
