6 small apples, peeled, cut into 1/2-inch slices (6 cups)
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 cup old-fashioned oats
3/4 cup packed brown sugar
1/4 teaspoon salt
1/2 cup cold butter, cut into 8 pieces
Ice cream, if desired

Steps:

  • Place apples in large bowl; add granulated sugar, 2 tablespoons flour and the cinnamon. Stir until apples are evenly coated.
  • Spray 4- to 5-quart slow cooker with cooking spray. Place apple mixture into slow cooker.
  • In large bowl, mix 1/2 cup flour, the oats, brown sugar and salt. Stir until well combined. Using fork or pastry blender, cut cold butter into mixture until crumbly. Sprinkle over apple mixture. Cover and cook on High heat setting 2 hours. Turn off heat; remove cover, and cool 30 minutes.
  • Serve warm with a scoop of your favorite ice cream.

8 medium peeled apples, cut into 1-inch chunks that are 1/4 - 1/2 inch thick (about 10 cups chunks)
1/2 cup (100g) packed light or dark brown sugar
1/4 cup (31g) all-purpose flour (spoon & leveled)
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup (94g) all-purpose flour (spoon & leveled)
3/4 cup (150g) packed light or dark brown sugar
1 teaspoon ground cinnamon
1/2 cup (1 stick; 115g) unsalted butter, cold and cubed
1 cup (80g) old-fashioned whole oats
optional: salted caramel and vanilla ice cream for serving

Steps:

  • Preheat oven to 350°F (177°C). Lightly grease a 9×13 inch baking pan. Any 4 quart baking dish works.
  • Mix all of the filling ingredients together in a large bowl, then spread into the baking pan.
  • Whisk the flour, brown sugar, and cinnamon together in a medium bowl. Cut in the butter using a pastry cutter or fork until the mixture becomes super crumbly. Stir in the oats. Sprinkle over filling.
  • Bake for 45 minutes or until the topping is golden brown and the fruit juices are bubbling around the edges. Remove from the oven, place on a wire rack, and allow to cool for at least 5 minutes before serving. Serve warm, room temperature, or cold- plain or with salted caramel and/or vanilla ice cream.
  • Cover leftovers and store in the refrigerator for up to 5 days.

A yummy one-biter! Whenever I ask 'what can I bring?' these top the list! Sweet cinnamon-scented apples held in a buttery crispy oatmeal cup and crunchy sweet topping. I like to make sweet treats to share with friends. I came up with this recipe so that I could bake and take apple crisp to share easily with everyone.

3 large McIntosh apples - peeled, cored, and chopped
¼ cup water
2 tablespoons white sugar
½ teaspoon ground cinnamon, or to taste
2 cups all-purpose flour
2 cups rolled oats
1 ½ cups brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ½ cups butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 4 12-cup mini-muffin tins.
  • Mix apples, water, white sugar, and 1/2 teaspoon of cinnamon together in a saucepan, and bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes; remove from heat.
  • Combine flour, oats, brown sugar, 1 teaspoon of cinnamon, and nutmeg in a large bowl; cut the butter into the flour mixture with a pastry cutter until the mixture looks like coarse crumbs. Place a heaping tablespoon of the crust mixture into a mini muffin cup, and press it into the cup so that it covers the bottom and pushes up the sides of the cup. Make the crust go all the way to the top of the little muffin cup, and patch any holes with more crust mixture. There will be crust mixture left over. Place about 2 teaspoons of apple filling in the crust. Sprinkle about 1 teaspoon of the remaining crust mixture on the filling.
  • Bake in the preheated oven until golden brown, 15 to 20 minutes.

1 1/2 pounds (about 4 medium) Granny Smith apples
1 tablespoon blackstrap molasses
2 teaspoons ground cinnamon
1 teaspoon ground ginger
Zest and juice from 1 large lemon
1 cup dark brown sugar
1 teaspoon kosher salt
3/4 cup all-purpose flour
1/2 teaspoon ground nutmeg
1 stick (8 tablespoons) unsalted butter, cubed, plus 1 tablespoon for greasing the baking dish
Cream Biscuits, recipe follows
3 cups unbleached all-purpose flour, plus additional for dusting
1 tablespoon plus 1 1/2 teaspoons baking powder
2 teaspoons granulated sugar
2 teaspoons kosher salt
2 1/2 cups heavy cream

Steps:

  • Preheat the oven to 375 degrees F.
  • Core and peel the apples, then cut them each in half and each half into thin slices. Put them in a bowl with the molasses, cinnamon, ginger, lemon zest and juice, 1 tablespoon brown sugar and 1/2 teaspoon salt. Toss to blend.
  • Combine the flour, nutmeg, remaining brown sugar and remaining 1/2 teaspoon salt in another bowl. Add cubed butter and break it up with your fingers, integrating the flour with the butter.
  • Grease the bottom and sides of a shallow rectangular 6-by-12-inch baking dish with the remaining tablespoon butter. Layer the apples in the dish evenly with the flour mixture. Place the dish in the center of the oven and bake until the apples are tender when pierced with the tip of a knife, 35 to 40 minutes. Let cool.
  • Break up Cream Biscuits into large chunks. Layer into a bowl or large jar, so that layers of fruit, topping and biscuits are stacked on top one another.
  • Preheat oven to 350 degrees F.
  • Sift together the flour, baking powder, granulated sugar and salt in a large bowl. Add the cream to the dry ingredients. Use your hands to mix the dough, taking care that all ingredients are well blended. Turn the dough out onto a lightly floured surface and pat down with floured hands until it is about 1-inch thick. (If the outside edges start to show cracks, cup the outer edge with your hands and push the dough towards its own center.)
  • Lightly flour a knife (to avoid sticking as you cut) and slice the dough into 1 1/2-inch squares. Reflour the knife each time you make a cut.
  • Arrange the biscuits with some distance between each on a nonstick baking sheet or one lined with a sheet of parchment. Bake until they start to brown lightly, 15 to 18 minutes.
