Apple Oatmeal Scones with Maple Glaze image

Fall means hot cups of coffee paired with delicious treats! Apple is a must this time of year. These scones combine fresh apples and oats with a sweet maple glaze.

1 1/2 cups all-purpose flour
1 cup old fashioned oats, dry
1/3 cup brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 stick butter (1/2 cup), softened
1 egg
1/4 cup milk
2 tablespoons maple syrup
1 teaspoon vanilla
1 cup diced apples, I used Pink Lady but any variety will work
1 tablespoon butter, melted
2 tablespoons maple syrup
1/2 cup powdered sugar

Steps:

  • Preheat oven to 375 F. Line a large baking sheet with parchment paper and spray a 12-inch circle in the center using cooking spray.
  • In a large bowl, combine the flour, oats, brown sugar, baking powder and salt. Cut in the butter and mix until crumbly.
  • In a small bowl, mix together the egg, milk, maple syrup and vanilla. Add the wet ingredients into the dry ingredients and mix into a sticky dough.
  • Fold in the diced apples.
  • Place the dough in the center of the baking sheet. Use your hands or a rolling pin to press the dough into a 8-9 inch circle. Use a long knife to cut the circle into 8 even wedges.
  • Bake for 25 minutes or until a toothpick inserted into one of the wedges comes out clean. Let cool on a wire rack completely before adding the maple glaze.
  • In a small bowl, mix the butter, maple syrup and powdered sugar with a whisk until smooth.
  • Drizzle over the cooled scones and let set before serving.

2 tb Honey divided
1/2 ts Ground cinnamon
2 ts Baking Powder
1/2 c cranberries Coarsely chopped
1 c Uncooked rolled oats
1/2 ts Salt
2 tb Margarine
3/4 c Unsweetened Apple Sauce
1/2 c apple Peeled; chopped
1/4 c Skim milk
2 c All-purpose flour
1/3 c Sugar
1/2 ts Baking soda

Steps:

  • Preheat oven to 425F. Spray baking sheet with nonstick cooking spray. In large bowl, combine flour, oats, sugar, baking powder, salt, baking soda, and cinnamon. Add 1/2 cup of apple sauce and margarine; cut in with pastry blender or fork until mixture resembles coarse crumbs. Stir in cranberries and apple. In small bowl, combine milk and 1/4 cup honey. Add milk mixture to flour mixture; stir together until dough forms a ball. Turn out dough onto well-floured surface; knead 10 to 12 times. Pat dough into 8 inch circle. Place on prepared baking sheet. Use tip of knife to score dough into 12 wedges. In another small bowl, combine remaining 1/4 cup apple sauce and 2 tablespoons honey. Brush mixture over top of dough. Bake 12 to 15 minutes or until lightly browned. Immediately remove from baking sheet; cool on wire rack 10 minutes. Serve warm or cool completely. Cut into 12 wedges. 3 1/2 cups all-purpose flour
1 cup whole-wheat flour
1 cup quick-cooking oats, plus additional for sprinkling
2 tablespoons baking powder
2 tablespoons granulated sugar
2 teaspoons salt
1 pound cold unsalted butter, diced
1/2 cup cold buttermilk
1/2 cup pure maple syrup
4 extra-large eggs, lightly beaten
1 egg beaten with 1 tablespoon milk or water, for egg wash
1 1/4 cups confectioners' sugar
1/2 cup pure maple syrup
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 400 degrees F. In the bowl of an electric mixer fitted with a paddle attachment, combine the flours, oats, baking powder, sugar and salt. Blend the cold butter in at the lowest speed and mix until the butter is in pea-size pieces. Combine the buttermilk, maple syrup and eggs and add quickly to the flour-and-butter mixture. Mix until just blended. The dough may be sticky.
  • Dump the dough out onto a well-floured surface and be sure it is combined. Flour your hands and a rolling pin and roll the dough 3/4 to 1 inch thick. You should see lumps of butter in the dough. Cut into 3-inch rounds with a plain or fluted cutter and place on a baking sheet lined with parchment paper.
  • Brush the tops with egg wash. Bake for 20 to 25 minutes, until the tops are crisp and the insides are done.
  • To make the glaze, combine the confectioners' sugar, maple syrup and vanilla. When the scones are done, cool for 5 minutes and drizzle each scone with 1 tablespoon of the glaze. I like to sprinkle some uncooked oats on the top, for garnish. The warmer the scones are when you glaze them, the thinner the glaze will be.

Steps:

  • Combine first seven ingredients (flour through cinnamon) in large bowl.

  • In small bowl combine milk and ¼ cups honey; add to flour mixture and stir until dough forms ball.
  • Knead dough 10-12 times on floured surface; pat into 8-inch circle and place on sprayed baking sheet.
  • Use sharp knife to cut dough into 12 wedges, and separate wedges slightly.
  • Combine remaining applesauce and honey, and brush over top of dough.
  • Bake 12-15 minutes at 425 degrees, or until lightly browned; remove from baking sheet and cool on wire rack.

Deliciously moist, flaky, and crumbly banana nut scones with maple glaze. Not quite banana bread or banana muffins, but everything you crave for breakfast!

1 cup mashed bananas (about 2 large ripe bananas)
1/4 cup (60g) plain Greek yogurt (or any plain yogurt or sour cream)
1/2 cup (100g) packed light or dark brown sugar
1 large egg
1 teaspoon pure vanilla extract
2 and 1/2 cups (313g) all-purpose flour (spoon & leveled)
2 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
1/2 teaspoon salt
5 Tablespoons (70g) unsalted butter, frozen
1 cup (125g) chopped walnuts (optional)
top before baking: 3 Tablespoons (45ml) milk and coarse sugar
2 Tablespoons (30g) unsalted butter
1/3 cup (80ml) pure maple syrup
1 cup (112g) sifted confectioners' sugar

Steps:

  • Preheat oven to 400°F (204°C). Line 2 large baking sheets with parchment paper or a silicone baking mat. Set aside.
  • In a medium bowl, beat the mashed bananas, yogurt, brown sugar, egg, and vanilla extract together. Set aside.
  • In a large bowl, whisk the flour, baking powder, cinnamon, nutmeg, and salt together. Grate the frozen butter (I use a box grater to grate it; a food processor also works for grating). Toss the grated butter into the flour mixture and combine it with a pastry cutter, two forks, a food processor, or your fingers until the mixture resembles coarse meal. Set aside.
  • Drizzle wet ingredients over flour mixture, add the walnuts, and then toss the mixture together with a rubber spatula until everything appears moistened. Try your best to not overwork the dough at any point. Dough will be sticky and a little wet. Drop scones, 1/4 cup of dough each, at least 3 inches apart on the prepared baking sheet. Brush scones with milk, then top with a little coarse sugar if desired for extra crunch. Tastes great!
  • Bake for 20-25 minutes or until lightly golden and cooked through. Remove from the oven and cool as you make the icing. The scones taste even better after they cool down!
  • In a small saucepan over low heat, melt the butter and maple syrup together, whisking occasionally. Once the butter has melted, remove from heat and whisk in the sifted confectioners' sugar. Drizzle over scones.
  • Scones are best enjoyed right away, though leftover scones keep well at room temperature or in the refrigerator for about 3-5 days.

Steps:

  • Measure flour, sugar,baking powder,soda,and salt into a large bowl.
  • Cut in butter until crumbly.
  • Add shredded apple, cranberries and milk.
  • Stir to form a soft dough.
  • Turn dough out onto a lightly floured surface.
  • Knead gently 8 to 10 times.
  • Pat into two 6 inch circles.
  • Brush tops with milk and sprinkle with sugar and cinnamon.
  • Cut each circle into six pie-shaped wedges.
  • Place onto greased baking sheet.
  • Bake at 425 degrees for 15 minutes, or until browned.
  • Serve warm with Butter.
