FAVORITE CRANBERRY APPLE CRISP
BOTH my sister-in-law and I both make this for Thanksgiving and Christmas. We both are aware that the other will have it on her menu, but we make it anyway. It's a family favorite, which has become a tradition for holiday meals.

APPLE CRISP (SWEETENED WITH MAPLE SYRUP) - ROBUST …
From robustrecipes.com

- Preheat your oven to 350 degrees Fahrenheit. Grease a 9×9 baking dish and set aside. Thinly slice your apples (you can either peel them or leave the skin on, both ways taste great, just depends on the mood I am in/how much time I have).
- Add the sliced apples to a large mixing bowl along with the lemon juice, give the apples a good toss. Next add the corn starch, salt, cinnamon, nutmeg, and maple syrup and stir until everything is well combined. Transfer the apples to the prepared baking dish and spread the in an even layer.
- Give the mixing bowl the apples were in a good rinse and dry it with a paper towel, or grab a clean mixing bowl. Stir the oats, almonds, cinnamon, nutmeg salt, coconut sugar, melted coconut oil, and maple syrup until well combined. Spread the crisp topping on top of the apples in an even layer.
- Bake the crisp for 35 to 40 minutes, or until the apples are bubbling and the topping is crispy and golden brown. If your topping begins to look too brown you can cover it with foil the last 10 to 15 minutes of baking. This will depend on your oven. My oven is gas, so the heat source is on the bottom. If your heat source is on the top of the oven your topping may burn or brown faster so keep an eye on it.

- Preheat oven to 400 degrees then line a baking sheet with foil and place a cooling rack on top. Wash and dry sweet potatoes then pierce all over with a fork. Place onto cooling rack then roast for 45 minutes to 1 hour or until a knife can be easily inserted into the centers. Set sweet potatoes aside to cool - can be done a day ahead of time. Once cool, peel away skin then rice or mash the flesh until very smooth.
- Turn heat down to 350 degrees then get out a medium-sized baking dish - 8x8", or something similar in size. Set aside. Measure out 2 cups mashed sweet potatoes then add to a large bowl with chopped apples, dried cranberries, maple syrup, vanilla, cinnamon, and salt. Stir to combine then scoop into baking dish and spread into an even layer.
- Wipe out bowl then add all the ingredients for the crisp EXCEPT the maple syrup. Use your fingers to mix and mash ingredients into a paste then add maple syrup and stir with a fork to combine. Top sweet potato mixture with crisp then bake for 40-50 minutes or until crisp is golden brown on top. Let cool for 20 minutes then serve.

- Wash, slice, core and dice the apples, into about 3/4 inch pieces. Combine apples, cranberries, lemon juice, sugar and cinnamon. Mix well and layer into a 9 x 9 baking dish, you can also use an oval shaped dish.
- In a mixing bowl (shown above), combine oats, flaxseed meal, walnuts/pecans, maple syrup, optional coconut oil (mine is oil-free), vanilla and salt, mix well. Spread oat mixture evenly over the apple and cranberries (shown below), and sprinkle with a little more cinnamon of you like.
- for 35 – 40 minutes, or until apples and cranberries are fork tender. Towards the end of cooking, about 20 – 25 minutes in, keep an eye on the topping, if its getting to dark, cover loosely with foil (nothing worse than a burnt crisp). Once done, let cool 5 – 10 minutes before serving.

- Make crust: Pulse whole-wheat pastry flour, all-purpose flour, maple sugar and salt in food processor. Add butter, and process until the butter is cut in and the mixture resembles coarse meal. Open lid, drizzle on oil and pulse to combine. Open lid and drizzle on 3 tablespoons ice water. Process until the mixture just comes together. If the mixture seems dry or does not come together as a ball, try squeezing a handful of the crumbs together. If it still won’t come together, add up to 2 more tablespoons water. Form dough into a disk, wrap in plastic and refrigerate until firm and chilled, at least 1 hour.
- Arrange oven rack in the lower third of the oven. Preheat oven to 375ºF. Roll dough out to a circle, about 14-inches across. Transfer to a 9-inch deep-dish pie plate and crimp edges. Chill crust while you prepare filling.
- Make Filling: Toss Macintosh apples, firm apples, cranberries, maple syrup, all-purpose flour, cornstarch, cinnamon and salt in a large bowl.
- Make Topping: Stir whole-wheat flour, oats, sugar, cinnamon and salt in a medium bowl. Drizzle butter over the oat mixture, tossing with a fork. Sit until the crumbs are evenly moist. Add almonds and stir to completely combine.
