1 1/2 cups Gold Medal™ all-purpose flour
1/3 cup granulated sugar
3/4 teaspoon baking powder
1/2 cup cold unsalted butter, cubed
1 egg
2 teaspoons water
1 teaspoon vanilla
1/2 cup chopped pecans
1/2 cup granulated sugar
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon orange peel
1 egg
1 tablespoon unsalted butter, softened
1 can (14 oz) whole berry cranberry sauce
1 tablespoon orange juice
2 large apples, peeled and cored
Powdered sugar

Steps:

  • Grease 9-inch cake pan or springform pan with butter.
  • In large bowl, mix 1 1/2 cups flour, 1/3 cup granulated sugar and the baking powder with whisk. Add cold cubed butter; cut in with pastry blender or 2 knives until coarse crumbs are formed.
  • In small bowl, beat 1 egg, the water and vanilla. Pour over flour mixture, and stir until just moistened; mixture will be dry. Knead mixture until flour is incorporated and consistent dough forms. Press dough in bottom and 1 1/2 inches up side of pan. Refrigerate 15 minutes.
  • Place pecans, 1/2 cup granulated sugar, 3 tablespoons flour and the orange peel in food processor fitted with steel blade attachment. Cover; process until nuts are finely ground. Add egg and softened butter; process again until blended. Spread mixture over chilled crust.
  • Heat oven to 350°F.
  • In medium bowl, mix cranberry sauce and orange juice until well combined and cranberry sauce is loosened. Spread over nut mixture, leaving 1 inch border.
  • Cut apples into quarters, and place them cored side down on cutting board. Cut thin lengthwise slits in each quarter cutting to, but not through the cored side. Arrange apple quarters around outside edge of dough crust so they are just touching. Bake about 1 hour or until crust is lightly browned. Cool 10 minutes. Sprinkle with powdered sugar before serving. Store covered in refrigerator.

1 Granny Smith apple, peeled, cored, and diced
1/2 cup light brown sugar, lightly packed
1 tablespoon grated orange zest (2 oranges)
1/4 cup freshly squeezed orange juice
1 1/8 teaspoons ground cinnamon, divided
2 extra-large eggs, at room temperature
1 cup plus 1 tablespoon granulated sugar
1/4 pound (1 stick) unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
1/4 cup sour cream
1 cup all-purpose flour
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F.
  • Combine the cranberries, apple, brown sugar, orange zest, orange juice, and 1 teaspoon of the cinnamon in a medium bowl. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs on medium-high speed for 2 minutes. With the mixer on medium, add 1 cup of the granulated sugar, the butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.
  • Pour the fruit mixture evenly into a 10-inch glass pie plate. Pour the batter over the fruit, covering it completely. Combine the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, until a toothpick inserted in the middle of the cake comes out clean and the fruit is bubbling around the edges. Serve warm or at room temperature.

Steps:

  • Beat milk, shortening, egg, and vanilla extract together in a bowl until smooth. Stir 1 1/2 cups flour, 1/2 cup sugar, baking powder, and salt into milk mixture until dough comes together. Spread dough out into the bottom of a rimmed baking sheet.

2 1/4 to 2 1/3 cups white bread flour
1/2 teaspoon salt
2 tablespoons sugar
1/2 package (from 1/4-ounce package) rapid-rise yeast (about 1 teaspoon)
2 eggs
1/2 teaspoon vanilla extract
1/2 lemon, zest grated
1/4 teaspoon ground cinnamon
1/2 cup lukewarm milk
Scant 1/4 cup butter, softened
1 egg beaten with 1 tablespoon cream and a pinch ground cinnamon
1 small or 1/2 medium firm, tart apple (about 6-ounce in weight)
1 2/3 cups blackberries
1/2 lemon, zested
1/3 cup self-rising flour
2 tablespoons ground almonds
1/4 teaspoon ground cinnamon
Scant 1/4 cup cold unsalted butter, diced
2 tablespoons granulated sugar
2 tablespoons Demerara, or granulated brown sugar
2 tablespoons sliced almonds

Steps:

  • For the cake:
  • Pour 2 1/4 cups of the flour in a bowl with the salt, sugar and yeast. In another bowl, beat the eggs and add them, with the vanilla extract, lemon zest and cinnamon, to the lukewarm milk. Stir the liquid ingredients into the dry ingredients to make a medium-soft dough, being prepared to add more flour as necessary. I generally use about 2 1/3 cups in all, but advise you to start off with the smaller amount: just add more as needed. Work in the soft butter and knead by hand for about 10 minutes or half that time by machine. When the dough is ready it will appear smooth and springy: it suddenly seems to plump up into glossy life.
  • Cover with a kitchen towel and leave until doubled in size (1 hour to 1 hour 15 minutes). Or leave to rise slowly in a cold place overnight. Then punch down and press to line a jellyroll pan measuring 13 by 9-inches. You may think it's never going to stretch to fit, but it will, although you may need to let it rest for 10 minutes or so mid-stretch, especially if the dough has had a cold rise. When it's pressed out on the pan, leave it to rest for 15 to 20 minutes and then brush with the egg and cream mixture.
  • Meanwhile, preheat the oven to 400 degrees F.
  • Peel and chop the apple and toss it in a bowl with the blackberries and the zest from the other half lemon. Set the bowl aside for the few minutes it takes to make the crumble topping. Put the flour, ground almonds and cinnamon in a medium-sized bowl, stir to combine, then add the cold, diced butter. Using the tips of your fingers - index and middle stroking the fleshly pads of your clumpy (this is very buttery mixture) oatmeal. Fork in the sugars and sliced almonds.
  • Tumble the fruit over the egg-washed dough and then sprinkle the crumble on top of that. Put in the oven for 15 minutes, then turn down to 350 degrees F and cook for a further 20 minutes or so, until the dough is swelling and golden at its billowing edges and the crumble is set; don't expect it to be crunchy.
  • Remove from the oven and, if you can, wait 5 minutes or so before cutting it into greed-satisfying slabs.

2 packages (1/4 ounce each) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup warm milk (110° to 115°)
1/4 cup butter, softened
1/4 cup sugar
1 teaspoon salt
1 egg
3-1/2 to 4 cups all-purpose flour
CRANBERRY SAUCE:
2 cups water
1-1/2 cups sugar
4 cups fresh or frozen cranberries
EGG MIXTURE:
8 eggs
3/4 cup evaporated milk
3/4 cup sugar
TOPPING:
2 cups all-purpose flour
2 cups sugar
1 cup cold butter

Steps:

  • In a large bowl, dissolve yeast in a warm water. Add the milk, butter, sugar, salt, egg and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Do not knead. Cover and let rise in a warm place until doubled, about 1 hour., For cranberry sauce, in a saucepan, bring water and sugar to a boil. Add cranberries. Reduce heat; cover and simmer for 10 minutes. Remove from the heat; set aside. , For egg mixture, in a bowl, combine the eggs, evaporated milk and sugar; beat well. Divide half of the egg mixture between two greased 13-in. x 9-in. baking pans; set remaining egg mixture aside., Punch dough down. Divide in half. Pat each portion over egg mixture in pans. Spoon cranberry sauce over dough. Drizzle with remaining egg mixture. , For topping, combine flour and sugar in a bowl. Cut in butter until crumbly; sprinkle over the top. , Bake at 350° for 25-30 minutes or until lightly browned. Cool on a wire rack. Serve warm.

1 1/4 c sugar- divided
1 tsp vanilla
3 eggs
2 c flour
2 tsp baking powder
1/2 tsp baking soda

TOPPING
1/4 c brown sugar, lightly packed
2 Tbsp flour
2 Tbsp almonds-chopped
1 Tbsp margarine
1/2 tsp cinnamon

Steps:

  • 1. Thoroughly cream margarine, 1 cup sugar, and vanilla in large bowl with electric mixer. Add eggs, one at a time, beating until light and fluffy.
  • 2. Combine flour, baking powder, baking soda, and salt. Add flour mixture and sour cream alternately to creamed mixture, ending with flour. Batter will be thick.
  • 3. Combine cranberries with remaining 1/4 cup sugar. Spread half of the batter in greased 10-inch springform pan, sprinkle with cranberries; top with remaining batter.
  • 4. Combine topping ingredients, sprinkle over batter.
  • 5. Bake at 350* for 50-55 minutes.

Steps:

  • Preheat oven to 350 degrees. Butter and flour an 8 inch round baking pan. In a small saucepan combine all topping ingredients. Bring to a boil. Reduce heat and cook until the cranberries are soft, about 10 minutes. Set aside. In a mixing bowl cream the butter and sugar for the batter with a mixer. Add eggs, one at a time, stirring well. Sift together the flour and baking powder. Stir flour into the batter mixture, a little at a time, alternating with the milk and sour cream. Stir in the orange rind and nutmeg. Pour batter into a prepared pan and top with the cranberry mixture. Bake 40-60 minutes, or until golden brown.
