ANCIENT GRAINS APPLE CRANBERRY GRANOLA



Ancient Grains Apple Cranberry Granola image

Chewy clusters of granola with no added fat and made with healthy ancient grains.

Number Of Ingredients 16

2 cups rolled barley flakes (276 grams)
2 cups rolled spelt flakes (184 grams)
2 cups almond slivers (224 grams)
2 cups chopped dried apples (170 grams)
2 cups unsweetened coconut flakes (170 grams)
1 cup dried cranberries (170 grams)
1 cup raw pumpkin seeds (140 grams)
3/4 cup barley flour (70 grams)
2 teaspoons ground cinnamon
1 teaspoon fresh grated nutmeg
1 teaspoon salt
1 cup unsweetened applesauce
1/2 to 3/4 cup honey
1/2 cup maple syrup
1 tablespoon vanilla extract
2 egg whites

Steps:

  • Preheat the oven to 300° F and line a large rimmed baking sheet with parchment paper (or spray with nonstick cooking spray)
  • Place all the dry ingredients in a large bowl and stir to combine.
  • Place the wet ingredients except for the egg whites, in a small saucepan and warm over medium heat until the honey thins out and everything is combined well. Pour the honey mixture over the dry ingredients then whisk the egg white and pour it over the dry ingredients. Stir to moisten everything.
  • Dump the granola into the rimmed baking sheet and spread it out to the edges. It will come up to the edges of the pan, keeping the mixture piled up thick like this will keep the granola soft and chewy.
  • Place in the oven and bake for 55 to 65 minutes, stirring every 20 minutes. The mixture will be toasty and golden.
  • Remove from the oven and let it sit without stirring for 10 minutes (this will help it form larger clumps) then give it a stir and let it sit until completely cool.
  • Store in an airtight container for up to 2 weeks.

Original recipe is a twist on my Mom's version. Fast and easy dessert, great for fall season when apples are freshest and the cranberries come in. I have made it without the apples or using frozen cranberries. I enjoy it as a dessert and as a breakfast treat around the Thanks-Mas season. Loaded with antioxidants! I have also made a wheat-free version using nut flour. Serve plain or topped with ice cream, whipped cream, or a drizzle of heavy cream.

1 (12 ounce) package fresh cranberries
2 apples, or more to taste, cut into 1-inch pieces
½ cup raisins
¼ cup walnuts
1 ¼ cups white sugar, divided
ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 egg
¼ cup butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x9-inch glass baking pan.
  • Mix cranberries, apples, raisins, and walnuts gently in the baking pan. Sprinkle with 1/4 cup sugar and cinnamon.
  • Combine remaining sugar with flour, baking powder, salt, egg, and butter in a medium bowl. Mix until crumbly. Spread topping over the apple mixture.
  • Bake in the preheated oven until topping is golden and inside is bubbling, about 50 minutes. Remove from oven and let cool for 5 to 10 minutes.

3 cups chopped peeled tart apples
2 cups fresh or frozen cranberries
1 cup sugar
3 tablespoons all-purpose flour
TOPPING:
1-1/2 cups quick-cooking oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup butter, melted
1/4 cup chopped pecans

Steps:

  • Combine apples, cranberries, sugar and flour. Pour into a greased 11x7-in. baking dish. In a bowl, mix topping ingredients until crumbly; sprinkle over apple mixture. Bake at 350° for 50-55 minutes or until fruit is tender.

2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
  • In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.
  • Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.
