I like to make this delicious apple crisp recipe in the fall using fresh Granny apples picked from our local orchard. For a Thanksgiving-like twist, top with a sweet cranberry compote.

- Preheat oven to 375 degrees F (190 degrees C).
- Spread apples into a 9x9-inch baking dish. Mix brown sugar, flour, rolled oats, butter, cinnamon, and allspice together in a bowl until crumbly; sprinkle topping over apples.
- Bake in the preheated oven until the crumble topping is browned and the apples are soft, 30 to 40 minutes.

- Combine orange juice, apples, cranberries, white sugar, brown sugar, and pumpkin pie spice in a saucepan over medium-high heat. Bring to a boil, reduce heat, and simmer until apples are tender and sauce has thickened slightly, 20 to 25 minutes.

BAKED BRIE WITH APPLE-CRANBERRY COMPOTE RECIPE

- Melt the butter over medium heat in a medium size saucepan.
- Add the diced apples. Cook until the apples have released most of their juices, stirring occasionally.
- Add the sugar, nutmeg and Rodelle Vanilla Bean. Stir well to combine and continue to cook until most of the liquid has evaporated, about 12-15 minutes.
- Remove from heat, stir in the cranberries and let the mixture cool at room temperature.
- Assembly
- Preheat the oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Transfer the puff pastry to the prepared baking pan
- Using a sharp knife, cut the Brie round in half horizontally to create two thin discs.
- Place the bottom disc in the center of the pastry round. Spread about half of the apple compote over the surface of the cheese.
- Place the second disc on top of the compote covered bottom disc layer with the remaining compote.
- Bring the puff pastry up around the edges of the Brie/Compote layers.
- Fold and pinch the edges so that only a small portion of the top surface is exposed.
- Beat the remaining vanilla into the egg adding a scant ½ tsp of water.
- Brush the surface of the puff pastry lightly with the vanilla egg wash.
- Bake until the pastry is golden all over and crisp, about 40-45 minutes.
- Let rest for 5 minutes prior to serving.

- Whisk cider, corn syrup, and brown sugar in heavy large saucepan.
- Boil over high heat until reduced to one cup, about 15 minutes.
- Add 4 tablespoons butter; whisk until melted; remove from heat.

- Put the 3 cups cranberries, cubed apple, 3/4 cup water, 1/4 cup brown sugar, 1 tsp ground cinnamon, 1 tsp ground nutmeg, 1/4 tsp ground cloves, 1/4 tsp ground allspice, and 1 tbsp vegan butter in a large sauce pan and bring the water to a boil.
- When the water is boiling, reduce the heat to a simmer and stir to combine the ingredients. The cranberries will start to pop and burst. Cook for approximately 15 to 20 minutes, or until the apples soften. The cranberries will thicken the sauce and it will continue to thicken as it sets.
- Store covered in the refrigerator for up to 5 days.

- Open the can of whole berry cranberry sauce and place it in a saucepan.
- Add the diced apple, orange juice, orange zest and ground cinnamon to the pan.
- Using a large spoon toss the ingredients to combine.
- Heat the saucepan on medium until cranberry sauce has thinned.
- Turn the heat up to medium high and cook until apples are tender.
- Once the apple pieces are tender mix the cornstarch with the water and add to the pan. Bring to a boil, occasionally stirring until thickened.
- Once thickened remove from the heat. Cool to room temperature before serving.
- Combine the cranberry sauce, diced apple, orange juice, orange zest and ground cinnamon in a 4 or 6 quart slow cooker. Use a large spoon to stir the ingredients.
- Place the lid on the slow cooker. Heat on high for 1 hour or low for two hours.
- Slow cook until the apple pieces are tender.
- When the apple is tender mix the cornstarch and water. Add the cornstarch slurry to the slow cooker and mix. Recover and heat on high until thickened.
- Once thickened turn the slow cooker off and cool. Serve with dinner.

- Using a stand mixer fitted with the whisk attachment or a hand mixer, beat the eggs and granulated sugar until pale yellow, frothy and doubled in volume, about 10 minutes. Meanwhile, melt 3 tablespoons of the butter and cool to room temperature. In a separate bowl, mix the flour, baking powder and salt. Whisk the buttermilk into the dry ingredients and blend until it becomes a smooth paste. Add in the melted butter. Use a rubber spatula to fold the beaten eggs into the batter. Hold the batter at room temperature until ready to cook.
- Heat a 14-inch skillet or griddle pan to medium-high heat. Place 1 tablespoon of the butter on the skillet and ladle out 2 ounces of the batter. When the top of the pancake starts to bubble, use a large metal spatula to flip, and then cook on the other side until brown, 3 to 5 minutes. Repeat for the remaining batter, about 6 pancakes total, adding butter to the griddle before each pancake. Stack three pancakes on each plate and serve with the remaining 2 tablespoons butter, confectioners' sugar, some maple syrup and the Apple Cranberry Compote.
- In a medium saucepot set over medium heat, add the cranberries, granulated sugar, honey, salt, apples, cinnamon, lemon juice and zest, and bring to a simmer. Reduce the heat to low, stir and continue cooking until the apples start to break down and the cranberries begin to pop, about 15 minutes. Remove from the heat and serve warm.

CARAMELIZED CRANBERRY AND APPLE COMPOTE
Steps:
- Gather the ingredients.
- Evenly spread the fine sugar in a heavy-bottomed saucepan. Add the star anise, then lightly crush the cardamom pods on a cutting board, and add them as well. Drizzle in the water and light corn syrup. (The corn syrup helps prevent the sugar from forming into hard crystals.)
- Turn the heat to medium-high, and quickly whisk the water and corn syrup into the sugar, as it begins to melt. Swirl the pan to make sure the sugar dissolves evenly, but don't whisk or stir. As the sugar melts, and the liquid boils off, it will begin to turn a pale amber. Move the saucepan around so the sugar cooks evenly and doesn't burn.
- When the caramel is golden brown, add the cranberries, swirling them in the caramel. (The caramel is very hot, so be careful.) When the cranberries begin to burst, add the apple, then sprinkle with a pinch of salt and a few grinds of pepper.
- Take the saucepan off the heat, and pour the port around the sides of the pan to deglaze the caramelized bits stuck to the pan. Quickly swirl the compote with a wooden spoon or plastic spatula to incorporate.
- Add the orange zest and orange juice. Put the saucepan back on the stovetop, lower the heat, and simmer 5 to 10 minutes to thicken. The compote will thicken when cooled, so try not to overcook it.
- Transfer to a heat-resistant glass bowl and cool to room temperature, then cover and chill. The compote can be prepared two days ahead and will taste better as all the flavors meld. When ready to serve, remove the compote from the refrigerator 1 hour before. Serve with roast turkey, goose, or duck.
