Cranberry Pecan & Goat Cheese Salad image

This fall salad has wonderful texture and both sweet and savory flavors. It makes a delicious side dish, or add cooked chicken to make it a full meal.

Number Of Ingredients 9

4 cups dark leafy greens
3/4 cup dried cranberries
3/4 cup pecan halves
3/4 cup crumbled Humboldt Fog goat cheese (or other soft cheese)
1/2 cup whole fresh cranberries (or frozen, thawed)
juice of two limes
1/4 cup extra virgin olive oil
2-4 tbls sugar
pinch of salt

Steps:

  • In a large salad bowl, add greens, dried cranberries, pecans, & cheese.
  • In a blender or food processor, add remaining ingredients and process for a few seconds, until cranberries are broken down and everything is fully combined. Taste and adjust sugar if needed..
  • Store dressing in a mason jar with a tight lid until ready to serve. Shake well and drizzle over salad.

2 medium apples, chopped
1/2 cup raisins
1/2 cup green grapes, halved
2 tablespoons olive oil
4-1/2 teaspoons balsamic vinegar
1 tablespoon honey
1-1/2 teaspoons lemon juice
1 garlic clove, minced
3 tablespoons chopped walnuts, toasted
2 tablespoons crumbled goat cheese

Steps:

  • In a large bowl, combine the greens, apples, raisins and grapes. In a small bowl, whisk the oil, vinegar, honey, lemon juice and garlic. Pour over salad and toss to coat. Sprinkle with walnuts and goat cheese.

3 tablespoons apple cider vinegar
4 teaspoons spicy brown mustard
4 teaspoons pure maple syrup
1 tablespoon minced shallot (from 1 small shallot)
½ teaspoon kosher salt
½ teaspoon black pepper
3 tablespoons extra-virgin olive oil
1 (10 ounce) package fresh baby spinach
2 large Pink Lady apples, thinly sliced
½ cup sweetened dried cranberries
½ cup chopped toasted pecans, divided
2 ½ ounces semi-soft goat cheese, crumbled (about 1/3 cup)

Steps:

  • Whisk together vinegar, mustard, syrup, shallot, salt and pepper in a small bowl; slowly whisk in olive oil until completely blended.
  • Toss together spinach, apples, dried cranberries, half of the pecans and dressing in a large bowl. Transfer to a serving platter and sprinkle with goat cheese and remaining pecans. Serve immediately.

1/2 cup pepitas (shelled pumpkin seeds)
1/2 teaspoon olive oil
1/4 teaspoon salt
1/3 cup dried cranberries, chopped if desired
1/4 cup extra virgin olive oil
1 tablespoon apple cider (or raspberry, pear or other fruity) vinegar
Finely grated zest of half an orange, optional
Salt and freshly ground black pepper
1 apple, cored and quartered
1 head lettuce, cored and torn into pieces, or mesclun mix
1 6-ounce log of goat cheese

Steps:

  • Preheat oven to 350 degrees. Toss pepitas with olive oil and salt in a bowl. Spread on baking sheet and toast in oven until golden and popped, 8 to 10 minutes. Remove and let cool. Place pepitas and cranberries in bottom of a salad bowl.
  • In another bowl, combine extra virgin olive oil, vinegar and zest, if using. Season to taste with salt and pepper. Whisk until emulsified.
  • Thinly slice each apple quarter crosswise, and add to salad bowl. Add lettuce and dressing, and toss to mix. Crumble cheese over salad and serve.

DEB'S KALE SALAD WITH APPLE, CRANBERRIES AND PECANS



Deb's Kale Salad with Apple, Cranberries and Pecans image

A hearty, holiday-worthy raw kale salad with chopped Granny Smith apple, cranberries, toasted pecans and goat cheese, tossed in a zippy honey mustard dressing. It's both vegetarian and gluten free.

Number Of Ingredients 11

1/2 cup pecans
8 ounces kale (I used regular curly green kale, but Deb recommends Cavolo Nero or Lacinato, Dinosaur or Tuscan Kale)
4 to 5 medium radishes
1/2 cup dried cranberries (or dried cherries)
1 medium Granny Smith apple
2 ounces soft goat cheese, chilled
3 tablespoons olive oil
1 1/2 tablespoons apple cider vinegar (or white wine vinegar)
1 tablespoon smooth Dijon mustard
1 1/2 teaspoons honey or maple syrup
Sea salt and freshly ground pepper, to taste

Steps:

  • Preheat the oven to 350 degrees and spread the pecans on a baking tray. Toast them until lightly golden and fragrant, about 5 to 10 minutes, tossing them once or twice to make sure they bake evenly. Remove the tray from the oven and set them aside to cool.
  • Pull the kale leaves off from the tough stems and discard the stems. Use a chef's knife to chop the kale into small, bite-sized pieces. Transfer the kale to a big salad bowl. Sprinkle a small pinch of sea salt over the kale and massage the leaves with your hands by lightly scrunching big handfuls at a time, until the leaves are darker in color and fragrant.
  • Thinly slice the radishes (this is easier to do if you first chop off the root end so you can place the base of the radish flat against your cutting board). Add them to the bowl.
  • Coarsely chop the pecans and cranberries (or cherries) and add them to the bowl. Chop the apple into small, bite-sized pieces and add it to the bowl as well. Crumble the goat cheese over the top.
  • In a small bowl, whisk the dressing ingredients together and pour the dressing over the salad. Toss until the salad is evenly coated with dressing. Serve immediately, or for even better flavor, let the salad marinate in the dressing for 10 to 20 minutes beforehand.

1/4 cup honey
3 Tablespoons red wine vinegar
1 Tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 to 8 cups prewashed spinach or spring mix
1 large apple (, cored and thinly sliced)
1/2 cup dried cranberries
1/2 cup walnuts or pecans
1/4 cup crumbled feta cheese

Steps:

  • In a small bowl, whisk together the oil, honey, vinegar, mustard, salt and pepper. Store in the refrigerator until ready to serve and stir before serving. The dressing stays good up to one week.
  • When ready to serve, place the spinach in a large bowl. Top with apple slices, cranberries, nuts and feta cheese. Drizzle with the dressing and toss until combined. Serve immediately.

Kale Apple Cranberry Salad
1 bunch kale
¼ cup cranberries
1 apple
¼ cup sunflower seeds
2 tsp olive oil
2 tbsp goat cheese
Honey Dijon Dressing
3 tbsp olive oil
1.5 tbsp apple cider vinegar
1 tbsp dijon mustard
2 tsp honey

Steps:

  • Wash and de-stem kale then place in a mixing bowl. Pour over tsp olive oil and massage kale with your hands.
  • Dice apple and add to kale salad with the cranberries and sunflower seeds then top with crumbled goats feta.
  • Measure 3 tbsp olive oil with apple cider vinegar, honey and dijon mustard into a mason jar and shake. Serve over the kale apple cranberry salad.
