APPLE & CORNFLAKE POTS
These moreish individual pudding pots have a crunchy top combined with a smooth apple sauce

Steps:
- Put the apples, caster sugar and 3 tbsp water in a pan and cook over a medium heat, stirring occasionally, for 10 mins until softened.
- Divide mixture between 4 glass tumblers and leave to cool. Meanwhile, heat the golden syrup and butter in a large bowl in the microwave for 1 min to melt. Add the cornflakes and stir well to coat.
- Top the cooled apple with the crème fraîche, then divide the cornflake mix between the glasses.

- Peel, core, and slice apples.
- In a large pot, bring apples, lemon juice, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
- Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
- Let cool, then transfer applesauce to airtight containers.

Steps:
- Crust: Mix flour and salt. Cut margarine inches.
- Whisk egg yolk and milk together; mix into flour.
- Roll out 1/2 of dough large enough to fit into a jelly roll pan.
- Filling: Sprinkle corn flakes over bottom crust. Spread apple slices evenly over crust. Mix sugar, cinnamon and salt; sprinkle over apples.
- Roll out remaining dough and cover fruit. Brush top with beaten egg white. Bake at 350°F for about 1 hour, until crust is golden brown.
- Glaze: Mix glaze ingredients together well.
- Brush on top crust while still hot.

CARAMEL APPLE GRANOLA POTS
Try using pear here instead of apple or the addition of ground ginger or cardamom would work really well alongside or instead of the cinnamon. Choosing a good quality yogurt will bring this simple dish to the next level.

Steps:
- Heat a large frying pan over a medium heat, add the apples, toss in the sugar and fry for a minute or two tossing occasionally, followed by the cinnamon. Add the butter, toss to melt and then stir through the maple syrup.
- While the apples are cooking heat another dry frying pan over a medium high heat. Add the oats and toast for 1 minute in the pan, tossing to evenly cook the oats. Add the coconut oil, maple syrup and cinnamon, stir through and allow to cook for another minute.
- Spread the yoghurt in the base of a shallow bowl, top with the granola followed by the stewed apple and drizzle with caramel sauce from the pan.
APPLE CRISP WITH CORN FLAKES
Childhood memories abound in this dessert. My mother would make this for functions that I attended and it always garnered tons of raves and requests for the recipe. Inexpensive and delicious. Extremely easy to make. Recipe is not my own, I received it after making a request here on "Zaar". :)

- Preheat oven to 375°F.
- Put half of the apples in a greased 9x9-inch pan. Blend together remaining ingredients, except juice, and crumble half the flour mixture over the apples.
- Cover with remaining apples and flour mixture. Pour juice over top. Bake 35 minutes.
- *Do not use a food processor or mixer to mix in the cornflakes as the topping will turn pasty on you. My mother just mixed hers with her hands. I sprinkle a light dusting of powdered sugar on mine when serving. :).
