FRESH APPLE COOKIES
This recipe has been in my recipe box for years so I'm not sure where it came from. They're a nice, light cookie that is similar to a snickerdoodle.

Steps:
- Preheat oven to 350 degrees.
- Cream together sugar, shortening & vanilla.
- Add in grated apple.
- Sift together dry ingredients.
- Add gradually to creamed mixture, combining thoroughly.
- *If dough appears slightly dry and doesn't come together, let it sit for a few minutes to allow the sugar to pull the juice from the apples.
- Roll in walnut-sized balls and roll in mixture of 2 Tbsp sugar, 1/2 tsp nutmeg and 1/4 tsp cinnamon.
- Bake 8-10 minutes on aluminum foil or parchment, until cookies are golden brown and appear crackled.
- Let cool on cookie sheet 4-5 minutes before transferring to cooling rack.

- Preheat oven to 350 degrees. Line two 18 by 13-inch baking sheets with silicone baking mats or parchment paper.
- In a mixing bowl whisk together flour, oats, cinnamon, baking soda and salt for 20 seconds, set aside.
- In the bowl of an electric stand mixer fitted with the paddle attachment cream together butter and brown sugar until combined. Mix in egg and vanilla extract.
- Toss apples with lemon juice in a small bowl. Add flour mixture to egg and vanilla mixture and mix until combined, then mix in apples.
- Scoop dough out using a medium cookie scoop, or 2 Tbsp at a time, and drop onto prepared baking sheets spacing cookies 2-inches apart. Flatten them just slightly.
- Bake one sheet at a time in preheated oven until cookies are set, about 14 - 15 minutes.
- Let cool on baking sheet several minutes then transfer to a wire rack to cool completely. Store cookies in an airtight container.

- Preheat oven to 325°F. Lightly spray 2 baking sheets with vegetable cooking spray.
- In a small bowl, combine applesauce and apple juice concentrate. In another bowl, combine flour, oats, baking soda, cinnamon, and nutmeg.
- In the bowl of a stand mixer (or in a large bowl using an electric mixer), beat butter, Splenda Sweetener, lemon zest, and molasses on high speed for 1 minute.
- Add eggs one at a time, mixing just until combined.
- Add about ⅓ of the flour mixture, mixing on low speed until blended. Add half of applesauce mixture and mix until blended.
- Repeat with another ⅓ of flour mixture, mix; then blend in remaining applesauce mixture. Add the last of the flour and mix to combine.
- Mix in apples and raisins.
- Drop by tablespoonfuls, about 2 inches apart, onto prepared baking sheets.
- Bake 10 to 12 minutes. Cool on wire racks.

- Using a stand mixer or handheld mixer, beat butter and sugar together in a large bowl until light and fluffy. Add in egg and buttermilk and mix until well combined, scraping down the side of the bowl as needed.
- In a medium bowl, sift together the flour, baking soda, spice, and salt. Add to the wet ingredients (butter mixture) and stir together until just combined. Do not overmix.
- Fold in the chopped apples and pecans.
- Cover the dough with plastic wrap and refrigerate overnight. Or chill in the freezer for 15-20 minutes if you are in a hurry.
- Preheat the oven to 375°F. Line cookie sheets with parchment paper or silicone baking mats.
- Using a cookie scoop or rounded tablespoon, drop dough at least 1 inch apart on prepared baking sheets.
- Bake 11-14 minutes, or until light brown. Allow the cookies to cool on the baking sheet for 3-5 minutes before moving onto cooling racks.
- Whisk together the glaze ingredients, adjusting the consistency to preference. Wait until the cookies are just slightly warm to brush on the glaze.
- Allow the glaze to harden then enjoy!

- Preheat the oven to 200ºC/400ºF/gas 6. Line two trays with greaseproof paper and rub with olive oil.
- Whiz the apple in a food processor until finely chopped, then add the flour, cubed butter, sugar and a pinch of sea salt. Blitz to fine crumbs for 1 minute, then remove 3 tablespoons of the mix and set aside.
- Pulse in the egg until combined, stopping to scrape down the sides, if needed.
- Divide into 24 pieces, roll into balls, then press down lightly into 4cm rounds, lining them up on the trays as you go.
- Sprinkle over the reserved mix, lightly pressing it into the cookies. Bake for 8 to 10 minutes, or until lightly golden.

- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Beat butter, cream cheese, and vanilla extract together in a large bowl until smooth. Add flour, 5 teaspoons sugar, baking powder, and 1 teaspoon cinnamon; mix until dough comes together.
