¼ cup butter, softened
¾ cup brown sugar
1 large egg
¼ cup sour cream

2 cups diced Granny Smith apple
¼ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8-inch square baking dish with cooking spray; dust with 1 tablespoon flour.
  • Beat 1/4 cup butter and 3/4 cup brown sugar together with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat egg into butter mixture. Add sour cream, vanilla yogurt, and vanilla extract to the mixture; beat to integrate.
  • Stir 1 cup flour, 3/4 teaspoon cinnamon, baking soda, and salt together in a bowl; add to the butter mixture and beat to combine into a batter. Fold apples into the batter. Pour batter into prepared baking dish.
  • Mix 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons butter, and 1/2 teaspoon cinnamon together in a bowl using a fork to achieve a crumbly consistency; sprinkle over the top of the batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

1 stick salted butter (room temperature)
2 eggs
2 teaspoons vanilla extract
4 oz cream cheese (room temperature)
1 tsp cinnamon
1 cup flour
1/2 teaspoon baking powder
1/2 cup apple pie filling (chopped)
3 Tbs melted butter
1/2 cup flour
1/3 cup sugar
1/2 tsp cinnamon

Steps:

  • Preheat oven to 350 degrees and add your cupcake liners to a standard 12 cup muffin tin and set aside.
  • Cream together the butter and sugar until paste forms. Add eggs 1 at a time, beating well after each one and then add the vanilla.
  • Add in the cream cheese and beat until well combined. Scrape down the sides of the bowl with a rubber spatula.
  • Sift in cinnamon, flour, and baking powder and mix until combined. Fold in the apple pie filling until evenly distributed.
  • For the crumble combine melted butter, flour, sugar, and cinnamon in a medium-sized bowl and stir until mixture resembles coarse sand.
  • Fill lined muffin tin 3/4 full and top each muffin with 2 Tbs of crumble mixture.
  • Bake at 350 degrees for 22-24 minutes or until a toothpick inserted in the center comes out with a few crumbs.

1/3 cup Immaculate Baking Co.™ sprouted whole wheat flour
1/4 cup packed brown sugar
1 teaspoon ground cinnamon

1 1/3 cups Immaculate Baking Co.™ sprouted whole wheat flour
1/2 cup cane sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt or kosher salt
1 teaspoon ground cinnamon
1/2 cup sour cream
1/3 cup butter, melted
2 eggs
1 teaspoon vanilla
1 cup finely chopped, peeled apple
3/4 cup powdered sugar
3 to 4 teaspoons milk

Steps:

  • Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups
  • In small bowl, mix first 4 Streusel ingredients. Add softened butter; mix with fingers to work butter into dry mixture until crumbly. Set aside.
  • In large bowl, stir 1 1/3 cups flour, the cane sugar, baking powder, baking soda, salt and 1 teaspoon cinnamon until blended. In another small bowl, beat sour cream, melted butter, eggs and vanilla with whisk until blended.
  • Add sour cream mixture to flour mixture in large bowl; stir just until blended. Stir in chopped apple. Gently fold in 1/2 cup of the streusel mixture.
  • Divide batter evenly among muffin cups. Top each with about 1 tablespoon of the remaining streusel mixture.
  • Bake 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Remove from pan.
  • In small bowl, mix Glaze ingredients until smooth and thin enough to drizzle. Drizzle over muffins.

To make the crumb topping, combine sugars, cinnamon and salt in a medium bowl. Whisk in melted butter. Add flour and stir using a rubber spatula just until moist. Spread out mixture on parchment paper to dry until ready to use. In a large bowl, combine flour, sugar, baking powder, cinnamon, baking soda and salt. If the glaze is too thin, add more confectioners' sugar as needed. When the muffins are done, cool for 10 minutes and drizzle the glaze on each muffin. Allow glaze to set before serving.

  • Preheat oven to 350F°. In a large bowl or stand mixer, cream butter and sugar. Scrape down sides of your bowl and add in eggs. Beat well. Add in baking soda, baking powder, salt, cinnamon and half of your flour. Mix for 30 seconds or so. It doesn't have to be fully combined just yet. Add in half of your yogurt. Mix in. Add in remaining flour and yogurt, mix well. Remember to scrape down your bowl several times.
  • Peel and cut apples into cubes. When adding apples into an items such as this, I like the apple pieces to be a nice size. Too small and you won't get that nice apple piece when you bite in. Stir 2 cups of apples into your batter. Spray a regular 12 cup muffin pan with Pam for baking. Ahh the yummy smell. Divide batter evenly between cups but do not fill more than 3/4 full. I filled maybe that much and mine still spilled out a bit. So 2/3 or even half full might be a better option. If you have a large muffin tin you could try that as well. I had leftover batter after filling my muffin pan and used the rest for a mini springform pan. Just remember to spray whatever pan you use. It will make removal of your muffins very easy.
  • In a medium bowl, mix ingredients with a fork until crumbly. Pea size is good. Top off muffins by using a spoon. You may have to use your finger to help the crumbs off of the spoon. Start off with one spoonful per muffin. Then go back and use any remaining topping to fill in spots you may have missed. Do use all of the topping.
  • Bake time will vary depending on the size of your muffins. My regular muffins were done at 20 minutes. Anything larger should be cooked for 30-40 minutes. You want to start testing smaller items, like regular muffins, at the 15 minute mark and 25 minutes for larger items. Use a toothpick or cake tester, insert it into the muffin. When it comes out clean or with just a few moist crumbs, they are done.
