My children love to bake (and eat) all kinds of banana bread. They make this all by themselves, with just a little help from me to put it in the oven. -Kristin Metcalf, Charlton, Massachusetts

1-1/2 cups mashed ripe bananas (4-5 medium)
1-1/2 cups chopped peeled apples (2 medium)
1/2 cup sugar
1/2 cup packed brown sugar
2 tablespoons water
2 tablespoons butter, melted
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sweetened shredded coconut
1/2 cup caramel sundae syrup
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 350°. Combine bananas, apples, sugars and water. Stir in melted butter. In another bowl, whisk flour, baking soda, baking powder and salt. Stir into banana mixture. Transfer to a greased and floured 9x5-in. loaf pan., Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely., Meanwhile, toast coconut, stirring occasionally, in a shallow pan at 350° until golden brown, 4-6 minutes. Cool slightly. Mix coconut with caramel syrup and sea salt; spread over loaf.

1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
2 eggs
1 cup sugar
2/3 cup vegetable oil
1/3 cup milk
1 teaspoon vanilla
2 cups chopped apples
1/2 cup chopped walnuts
2 tablespoons shredded coconut (optional)
3 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Sift together dry ingredients. Set aside.
  • Combine eggs, sugar, oil, milk, and vanilla in a large bowl.
  • Add flour mixture; mix gently.
  • Fold in apples, nuts and coconut.
  • Spoon into lightly greased 9X5 inch pan. Sprinkle top with cinnamon and sugar which have been mixed together.
  • Bake 60 minutes at 350 degrees.
  • Cool in pan on wire rack 10 minutes. Remove from pan and cool completely on rack.
  • Mix by hand to avoid overmixing and to insure a tender moist loaf.

¼ cup applesauce
3 eggs
1 ¾ cups white sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup whole wheat flour
1 teaspoon ground cinnamon

3 cups peeled, cored and cubed apples
1 cup chopped walnuts

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, stir together oil, applesauce, eggs, sugar and vanilla extract. In a separate bowl, sift together flour cinnamon, baking soda and salt. Gradually stir flour mixture into wet ingredients, mixing just until combined. Fold in apples and walnuts. Pour batter into prepared pans.
  • Bake in preheated oven for 70 minutes, until a knife inserted in the center of a loaf comes out clean.

3 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon ground nutmeg
1 ½ tablespoons ground cinnamon
¾ cup soy milk
1 tablespoon vanilla extract
½ cup butter or margarine, melted
3 apples, cored and chopped
½ cup sweetened dried cranberries
1 cup flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • In a large bowl, stir together the flour, baking powder, baking soda, salt, nutmeg and cinnamon. Make a well in the center, and pour in the soy milk, vanilla and melted butter. Stir just until dry ingredients are moistened. Mix in the apples, dried cranberries and most of the coconut. Reserve a small handful for sprinkling over the top of the loaf. Pour into the prepared loaf pan, and sprinkle reserved coconut on top.
  • Bake for 40 to 45 minutes in the preheated oven, until a knife inserted into the loaf comes out clean. Cool for at least 5 minutes before removing from the pan.

⅓ cup coconut flour
⅓ cup tapioca starch
½ cup coconut sugar
2 tsp. cinnamon
½ tsp. ground nutmeg
Dash cloves
½ tsp. salt
1 tsp. baking soda
3 eggs ( whisked)
⅓ cup coconut oil melted
¼ cup maple syrup
2 tsp. vanilla extract
3 Tbsp. almond milk (soy or cashew milk)
2 cups apples ( finely shredded)
¾ cup walnuts (finely chopped, divided)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine almond flour, coconut flour, tapioca starch, coconut sugar, cinnamon, nutmeg, cloves, salt, and baking soda. Whisk to combine.
  • In a separate large bowl combine eggs, oil, maple syrup, vanilla extract, and milk. Stir to combine ingredients.
  • Add dry ingredients to wet ingredients and mix by hand until just combined.
  • Gradually fold in shredded apple (that have been shredded using a food processor) and ½ cup chopped walnuts until well incorporated.
  • Line a 9 x 5-inch loaf pan with parchment paper and fill with apple bread batter. Top batter with remaining ¼ cup chopped walnuts.
  • Bake for 55-65 minutes or until a toothpick inserted in the middle comes out clean.
  • Let bread come to room temperature before slicing. Store bread in refrigerator for up to 5 days or at room temperature for 2-3 days. Enjoy!

1/2 cup butter
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt

3 large eggs
1 cup sour cream
20 ounces crushed pineapple (, drained well)

Steps:

  • Preheat oven to 325 degrees and spray a loaf pan with baking spray.
  • Spread coconut on a baking sheet and bake for 6 to 10 minutes shaking the tray occasionally.
  • In your stand mixer add the butter and sugar and cream on high speed until light and fluffy for 1-2 minutes.
  • Add the flour, baking soda, and salt into a bowl and whisk together until well mixed.
  • Add eggs, one at a time until fully combined then add in the flour mixture and the sour cream alternating in batches (1/3 of the amount each time).
  • Gently add in the pineapple and 1 cup of the coconut flakes with a spatula.
  • Add the batter to the loaf pan then sprinkle the top with the remaining coconut.
  • Bake for 65 to 70 minutes or until the cake is cooked through (test with a toothpick).
