Apple Cobblestone Pie image

This single crust apple pie boasts a coconut streusel topping. The pie itself is said to look like cobblestones. Its delicious no matter how it looks!

Number Of Ingredients 11

Pastry for one 9-inch unbaked single pie crust.
6 to 10 medium apples, peeled, cored and quartered
1/2 cup (100g) granulated sugar
3 TBS all purpose flour
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 TBS lemon juice
2/3 cup coconut (50g) (the recipe did not specify sweetened or unsweetened. I used unsweetened)
1/4 cup all purpose flour (35g)
1/4 cup granulated sugar (50g)
2 TBS butter at room temperature

Steps:

  • Prepare the pastry and use it to line a 9 inch deep pie dish, taking care not to stretch or tear the pastry and fluting the edge all the way around.
  • Preheat the oven to 375*F/190*C/gas mark 5. Place the pastry lined pie dish onto a foil lined baking sheet. Set aside.
  • Peel, quarter and core your apples. Mix the flour, sugar, cinnamon, nutmeg and apples together in a bowl along with the lemon juice. Combine well the apples are well coated.
  • Arrange the apples in the pastry lined pie dish, rounded sides up, so that they resemble a cobbled street. Sprinkle any sugar mixture remaining in the bowl over top.
  • Combine all of the topping ingredients together in a bowl, rubbing them together until crumbly. Sprinkle evenly over top of the apples.
  • Bake for 40 to 50 minutes or until the crust is golden brown and the apples are tender. If you think the streusel is getting to dark, cover lightly with a piece of aluminum foil, removing it for the last five minutes.
  • Cut into wedges to serve. Ice cream goes very nicely!

2 cups all-purpose flour
1 cup granulated sugar
4 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 1/4 teaspoons salt
1 cup buttermilk or 1 cup kefir
1/3 cup oil
2 teaspoons vanilla
2 eggs
1/3 cup raisins
2 tablespoons unsalted butter
4 Granny Smith apples, peeled cored sliced
3 tablespoons brown sugar
1/4 teaspoon salt
2 teaspoons pumpkin pie spice
1 tablespoon lemon juice
1/4 cup butter, room temperature
1/4 cup brown sugar
1/2 cup flour

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 15 cupcake molds (one pan of a dozen molds and then three molds on another pan).
  • In a pan over medium heat, melt the butter. Add the apples, brown sugar, salt, pumpkin pie spice and lemon juice to the pan. Stir and cook until golden and soft (7-10 minutes).
  • In a large bowl, combine flour, sugar, baking powder, cinnamon, salt, buttermilk, oil, vanilla and eggs with an electric mixer on medium speed.
  • Spoon a small amount of dough batter into the bottom of each cupcake mold. Reserve about half the batter.
  • Divide apple filling evenly between all molds to create a distinct apple layer. Top off with remaining dough batter, making sure to fill in the sides so that the muffin holds together.
  • Crumble brown sugar, flour, and butter together with fingers to make the streusel. Sprinkle on top of muffins.
  • Bake 50 minutes. Cool in pan for at least 15 minutes.
