APPLE-ORANGE SALAD

Apple-Orange Salad image

Provided by Food Network Kitchen

Time 25m

Yield 6 servings

Number Of Ingredients 6

4 navel oranges
4 blood oranges
3 tablespoons honey
1 1-inch piece ginger, thinly sliced
1 green apple, thinly sliced
1 red apple, thinly sliced

Steps:

  • Cut the ends off the navel and blood oranges, then cut away the peel and white pith. Working over a bowl, cut along both sides of each membrane with a paring knife to remove the segments, allowing them to drop into the bowl. Discard any seeds. Squeeze the juice from the membranes into a small bowl (you should have about 1 cup of juice).
  • Bring the reserved orange juice, honey and ginger to a simmer in a small saucepan over medium heat. Cook until syrupy, 8 to 10 minutes. Let cool completely; discard the ginger. Toss the syrup with the oranges and apples.

CITRUS CABBAGE SALAD

Citrus Cabbage Salad image

Provided by Danae Halliday

Categories     Salads

Time 20m

Number Of Ingredients 14

6 cups finely chopped red cabbage
1 grapefruit, peeled and segmented
1 orange, peeled and segmented
1/2 cup thinly sliced red onion
1/3 cup pomegranate seeds
1/4 cup chopped cilantro
3 tablespoons toasted pepitas
Juice squeezed from leftover orange and grapefruit pulp (about 1/4 cup)
1 tablespoon champagne vinegar
1 tablespoon honey
1 tablespoon dijon mustard
1/2 teaspoon ground cumin
2 tablespoons olive oil
Salt and fresh ground black pepper to taste

Steps:

  • Cut the cabbage in half and cut out the core. Cut the halves in half and then slice them thinly like you would for coleslaw. Place the cabbage in a large serving bowl.
  • Thinly slice the onion into half moons and add it in with the cabbage. Segment the orange and grapefruit, but don't discard the membranes. Add the citrus segments to the cabbage.
  • Add the pomegranate seeds, cilantro, and toasted pepitas to the salad and then make the vinaigrette.
  • Pour half the vinaigrette over the salad and toss everything together. Taste for seasoning and add additional vinaigrette as needed. Cover the salad and refrigerate for 15-30 minutes before serving so that the flavors can marry.
  • In a small bowl or jar with a lid squeeze all of the juices from the remaining grapefruit and orange membranes. Add the remaining vinaigrette ingredients to the juice. Whisk or shake until thoroughly combined.

  • First, let's make our dressing! Grab a blood orange and zest about 1/4 tsp from the rind. Roll the orange on the counter to help release the juice then slice in half and juice. (I use a citrus reamer to get every last drop)
  • Combine blood orange juice (we're looking for 1/4 cup of juice here) with the remaining ingredients in a mason jar and shake well. For a completely smooth dressing, I used an immersion blender. You can follow suit with a blender/processor of your choice or leave the garlic as is - both ways work great!
  • Wash and dry your spinach and add to a large bowl. Give your dressing another shake and massage a few spoonfuls into the spinach leaves to coat them.
  • Top spinach with slices of fresh oranges (I used a combination of cara cara and blood orange) as well as chopped apple, feta, pecans and dried cranberries. Drizzle extra dressing to taste and dive in!

  • CANDIED ALMONDS: Place the sliced almonds and white sugar in a large skillet and heat to medium and stir nearly constantly. The sugar will begin to melt and become a sticky liquid and then stick to the almonds. This takes about 3-4 minutes -- watch carefully and stir near constantly to avoid burning the nuts. As soon as the sugar turns to liquid, remove the pan from the heat and continue stirring until nuts are completely coated in the sugar. Spread the candied almonds onto a sheet of parchment paper and let harden. Break apart.
  • SALAD: Add the lettuce to a large bowl or salad platter. Peel and segment oranges or drain a can of mandarin oranges. Add to the salad. Thinly slice the apples and, if desired, toss with lemon juice. Add to the salad along with the dried cranberries and feta cheese.
  • DRESSING: Combine all of the ingredients together except for the oil and poppy seeds in a blender. Blend until all ingredients are well incorporated and zest has broken down. Transfer dressing to a mason jar and add in the olive oil and poppy seeds. Place the lid on the jar and shake until well combined.
  • ENJOY: Right before eating, add the dressing to the salad (add to taste -- you may not need it all) and candied almonds (add as many as you'd like; we typically add about 1/3 cup (See Note 2). Toss and enjoy immediately.
