- In a large bowl, combine dry ingredients. In another bowl, beat the eggs, sour cream and butter. Stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups two-thirds full. , For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle a rounded teaspoonful over each muffin. , Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

- Preheat oven to 350ºF. Take out cinnamon rolls from container, slice each one into 6-8 small pieces, set aside. Crack 2 eggs and whisk them together in a bowl, add 1/2 cup of heavy cream. To your mixture, add 2 tablespoons flour, 3 tablespoons cinnamon, 1/4 teaspoon nutmeg, and 1 teaspoon vanilla extract, stir to combine. In a large casserole dish, put all of your chopped cinnamon rolls, then drizzle the wet mixture, covering the rolls completely. Spoon out dollops of apple pie filling on top of your mixture, spacing them out evenly. In a separate bowl combine 1/2 cup brown sugar, 1/2 cup flour, 1 cup chopped pecans, 1/2 teaspoon cinnamon and a stick of softened butter, stir to combine. Sprinkle nut mixture over top of your apple, cinnamon roll and egg mixture, dispersing it as evenly as possible. Bake at 350ºF for 45 minutes. Drizzle cinnamon roll icing on top, serve with ice cream if desired, and enjoy!
APPLE CINNAMON STREUSEL ROLL
This idea came to me one night and I just couldn't get it out of my head, now I would like to share it with my foodie friends.

- 1. BREAD Machine Method: Heat milk and butter in micro for 2 1/2 min. Pour into bread pan. Break egg in bowl you used for heating milk, whisk, and pour into bread pan. Add flour, salt, sugar and yeast. Set bread machine to DOUGH cycle.
- 2. STREUSEL topping: Mix together 1/3 c. flour, 1/4 c. brown sugar, and 1/4 c. of softened butter to make a crumbly mix. You can add nuts or raisins if desired.
- 3. When dough has risen, remove and roll out into rectangle. Brush or rub softened butter over entire dough except one long edge, leave about a 1" length plain. Next sprinkle some cinnamon on, do not over sprinkle, it will leave a bitter flavor. Then sprinkle on a generous amount of brown sugar. You can also add raisins or nuts.
- 4. Beginning with a long side, roll dough up into a log. Then slice into 1" strips, you want to have at least 12.
- 5. Now place a muffin tin paper in each tin and spray with non stick spray, especially the bottom. Put one slice of cinnamon roll dough in each and press down with fingers. Cover and let rise till doubled in size.
- 6. Peel and core apples. Slice about 1/4" thick, I used my mandolin. Place in skillet with butter and cook until tender.
- 7. Once rolls have risen, drizzle with maple syrup.
- 8. place one apple slice on top, place crumb topping and/or raisins and nuts if desired. Bake 375° for 15-18 min.
- 9. Let cool before removing from paper.
CINNAMON APPLE ROLLS

- In a large saucepan, combine the sugar, water, apple juice, butter, cinnamon and nutmeg. Bring to a boil; cook and stir for 4-6 minutes or until liquid is reduced to about 2 cups. Set sauce aside., In a large bowl, combine the flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in buttermilk just until moistened. Turn onto a lightly floured surface; knead 8-10 times. Roll into a 14x12-in. rectangle., In a small bowl, combine filling ingredients. Spread over dough to within 1/2 in. of edges. Roll up jelly-roll style, starting from a long side; pinch seam to seal. Cut into 12 slices. Place cut side down in a greased 13x9-in. baking dish; pour sauce over rolls., Bake at 350° for 45-50 minutes or until a toothpick comes out clean. Serve warm.

SO EASY AND TASTY APPLE STREUSEL
"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. - Preheat oven to 350°.
- Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
- Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
- Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.
