Steps:
- Remove the core and thinly slice apples.
- Place apple slices in a large bowl and gently mix in sugar, cornstarch, and cinnamon. Set aside.
- Preheat oven to 350˚F (180˚C).
- In another bowl, combine flour, oats, brown sugar, baking soda, salt, and butter. Mix until crumbly.
- Line a 9x13-inch (23x33 cm) baking dish with parchment paper and pour ⅔ of the oats mixture in the bottom of the pan, pressing firmly to pack it down to make a crust.
- Pour apples over the crust and spread in an even layer. Pour the remaining oat mixture over the top and spread evenly.
- Bake for 30 minutes, or until golden brown.
- Cool completely before cutting.

- Melt margarine in a large saucepan over medium heat. Add diced apple and cook until apple is slightly soft (about 3 minutes.).
- Add milk, water, and salt to saucepan and bring it up to a boil.
- When the milk and water comes up to a boil, add Oats, cinnamon, nutmeg, and sugars. Stir to fully incorporate. Add more flavors to taste.

- Peel the skin from the apples and grate on the coarse side of a cheese grater. Set aside. (To prevent browning, place grated apples in a bowl and cover with lemon juice and water. Drain before adding to the batter.)

- Cook the apples: Peel and quarter the apples, then remove the cores, cut into small cubes and add into a medium pot. Add all the other ingredients (spices, maple syrup, lemon juice, and vanilla extract). Cook the apples over medium heat until soft (but not mushy, they should be still slightly crunchy), for about 5-10 minutes (the cooking time will vary depending on size and the variety of apples). A thick syrup should form around the apples (if it's too thin cook the apples a little longer over high heat).
- Cook the oatmeal: Mix all the ingredients for the oatmeal in a medium pot and simmer over low heat for about 10 minutes or until the oats are soft. If the oatmeal is too thick add more milk or water, if too thin cook it a little longer. Take the pot off the heat, pour the oatmeal into bowls. The oatmeal should be very runny at this point, by the time it is cooled down and ready to eat it will thicken significantly.
- Spoon the apples over the oatmeal, sprinkle with chopped walnuts and drizzle with maple syrup.
