APPLE-CINNAMON PANCAKES



Apple-Cinnamon Pancakes image

Grated apple is the secret ingredient in these lightly spiced and fluffy pancakes.

Yield about 16 pancakes

Number Of Ingredients 11

1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon fine salt
1 cup milk
1/4 cup packed light brown sugar
1 teaspoon pure vanilla extract
2 large eggs
4 tablespoons unsalted butter, plus more for serving
1 small red-skinned apple, cored
For serving: maple syrup or honey

Steps:

  • Preheat the oven to 250 degrees F.
  • Whisk the flour, baking powder, cinnamon and salt together in a medium bowl.
  • Whisk the milk, sugar, vanilla and eggs together in a large bowl until the sugar dissolves. Melt 2 tablespoons of the butter in a medium nonstick or cast-iron skillet over medium heat. Let cool slightly, then whisk the butter into the egg mixture; reserve the skillet for cooking the pancakes. Whisk the flour mixture into the milk mixture until combined with a few lumps. Grate the apple on the large holes of a box grater and stir into the batter.
  • Melt 1 tablespoon of the remaining butter in the reserved skillet over medium heat. Drop 2 tablespoons of batter per pancake into the hot skillet. Cook until the surface of the batter forms bubbles and the edges are set, about 3 minutes. Flip the pancakes and continue to cook until puffed in the center, about 1 minute more. Transfer to a baking sheet and put in the oven to keep warm while making the rest of the pancakes. Cook the remaining batter, adding the remaining 1 tablespoon of butter as needed.
  • Serve the pancakes with butter and maple syrup or honey.

1 ½ cups milk
1 ½ cups all-purpose flour
2 eggs
⅓ cup shortening
2 ½ teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon

Steps:

  • Place apples in a blender. Add milk, flour, eggs, shortening, baking powder, salt, and cinnamon and blend until well mixed, scraping down sides of blender several times.
  • Heat a lightly oiled griddle over medium heat. Drop batter by large spoonfuls onto the griddle; cook until bubbles form and the edges are dry, about 2 minutes. Flip and cook until browned on the other side, about 1 minute. Repeat with remaining batter.

2 tablespoons melted butter
½ cup applesauce
1 teaspoon vanilla extract
2 tablespoons King Arthur Coconut Flour
¼ cup whey protein
¼ cup King Arthur Almond Flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
¼ teaspoon salt
⅛ teaspoon xanthan gum

Steps:

  • Whisk together the eggs, butter, applesauce, and vanilla extract until well blended.
  • In a separate bowl, mix together the remaining ingredients until thoroughly combined.
  • Whisk together the dry and wet ingredients until evenly moistened.
  • Heat a heavy frying pan over medium heat, or heat an electric griddle to 350 degrees F. Generously grease the frying pan or griddle.
  • Drop batter by the tablespoonful onto the greased pan or griddle.
  • Bake on one side until the edges begin to dry, a few bubbles form on the surface, and the pancakes hold together. Gently turn the pancakes and cook the other side until firm.
  • Repeat with the remaining batter.
  • Serve pancakes warm.

Yield About 8 small pancakes

Number Of Ingredients 8

2 eggs, whisked
2 bananas, mashed
1 peeled apple, diced small
2 Tbsp almond butter
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp pure vanilla extract
A little coconut oil for cooking the pancakes

Steps:

  • Mash the 2 bananas with a fork
  • Whisk 2 eggs in a medium bowl
  • Add banana mash to eggs
  • Core and dice 1 apple. We used Fuji - choose your favorite
  • Stir bananas, eggs and apple chunks together
  • Next add the almond butter, cinnamon, nutmeg and vanilla
  • Combine into a pancake batter
  • Heat a thin layer of coconut oil in a skillet to medium low. Pour the pancake batter in - keeping the pancakes no wider than your spatula. When one side is golden brown, gently turn over to cook the other side.
  • Makes about 8 small pancakes Recipe can be easily be doubled or tripled to make more pancakes
  • Top with fresh fruit or raw maple syrup
